ROASTED TOMATO BALSAMIC VINAIGRETTE

Roasted Tomato Balsamic Vinaigrette image

I once worked with a chef who made an amazingly delicious roasted tomato vinaigrette. He would roast a whole pan of Roma tomatoes until the sugars and acids would condense and caramelize and concentrate into a delicious mass. I thought I could duplicate it by using a really good, double-concentrate tomato paste and nicely aged balsamic vinegar. It worked.

ROAST HALIBUT WITH SMOKED TOMATO VINAIGRETTE

Roast Halibut With Smoked Tomato Vinaigrette image

Make and share this Roast Halibut With Smoked Tomato Vinaigrette recipe from Food.com.

Provided by Chuck Hughes

Categories     Halibut

Time 42m

Yield 2 serving(s)

Number Of Ingredients 14

1/2 cup water
4 medium ripe tomatoes, quartered and seeded
1 large sprig tarragon, stemmed
2 shallots, peeled and sliced in rings
1/2 cup olive oil
1 pinch kosher salt
fresh ground black pepper
2 (4 ounce) halibut fillets
coarse salt
fresh ground black pepper
1 tablespoon canola oil, plus more as needed
handful baby greens, for garnish (optional)
arugula leaf, for garnish (optional)
1 shallot, finely julienned, for garnish (optional)

Steps:

  • Special equipment:.
  • Hickory wood chips (about 2 handfuls), for smoking.
  • To make the vinaigrette:.
  • Prepare a wok smoker by laying 2 layers of foil in the bottom of a wok. Add in 2 handfuls of the hickory wood chips, and set the smoker over high heat. Pour in the water. Wash, quarter, and seed the tomatoes. Pop them into a bamboo steamer.
  • Arrange the tarragon and shallots around the tomatoes. Place the steamer onto your smoking wok and cover with lid or foil, and let the ingredients smoke for 20 minutes.
  • Transfer the tomato-shallot mixture to a big pitcher, and blend with an immersion blender or use a regular blender. Gradually, add the olive oil in a thin stream, as you are blending to achieve a nice consistency. Season with a pinch of salt and some freshly cracked black pepper.
  • To make the halibut:.
  • Preheat an oven to 375 degrees F. Liberally sprinkle your halibut fillets with coarse salt and fresh cracked black pepper.
  • Add just enough oil to coat the bottom of a pan, and set it over fairly high heat.
  • Add the halibut fillets to the hot pan, skin side down. Once the first side has browned nicely, about 3 to 4 minutes, flip them over and continue cooking for another 3 minutes. Then, slide the pan into the oven for about 5 minutes to finish cooking. The finished halibut should be firm to the touch and snowy white in color, but since it is a lean fish, it will dry out if overcooked.
  • Ladle a pool of the vinaigrette into the bottom of a deep plate, top with a piece of halibut and a few baby greens, if using. Alternatively, you could use arugula tossed with sliced shallots, as a garnish.

COLD PASTA WITH SPICY ROASTED TOMATO VINAIGRETTE

Cold Pasta With Spicy Roasted Tomato Vinaigrette image

Provided by Molly O'Neill

Categories     lunch, weekday, pastas, salads and dressings, side dish

Time 1h

Yield Four servings

Number Of Ingredients 15

8 medium ripe tomatoes
2 cups vegetable broth (recipe above)
1 cup minced rosemary
6 cloves garlic, roasted and peeled
2 anchovy fillets
1 teaspoon capers, drained
1/2 cup oil-cured olives, pitted and coarsely chopped
1/2 teaspoon sugar
2 teaspoons Sherry vinegar
1 tablespoon olive oil
1/2 cup torn basil leaves
1/4 cup minced oregano leaves
1/2 teaspoon salt, plus more to taste
1 teaspoon freshly ground pepper, plus more to taste
1/2 pound fusilli

Steps:

  • Preheat oven to 425 degrees. Put the tomatoes on a baking sheet and roast them in the oven until the skin begins to blister, about 30 minutes. Set aside until cool. Meanwhile, pour the vegetable broth into a small saucepan and bring to a boil. Turn off the heat, add the rosemary and steep for 1 minute. Strain and cool in the refrigerator.
  • Place a large sieve above a glass or ceramic bowl. Peel, seed and core all of the tomatoes over the sieve. Coarsely chop 6 of the tomatoes and set them aside. Crush the remaining 2 tomatoes over the bowl, pushing the pulp through the mesh to extract as much juice as possible. Discard pulp and seeds.
  • Combine the roasted garlic, anchovy fillets, capers and half of the olives in a bowl. Smash into a paste. Set aside. Combine the rosemary essence, roasted-tomato juice, sugar and vinegar in a large salad bowl. Whisk in the olive oil. Add the salt and pepper. Add the garlic paste, chopped tomatoes, pasta, remaining olives, basil and oregano. Toss to combine. Season to taste with salt and pepper.
  • Cook the pasta in boiling water until tender. Drain. Add it to the vinaigrette and toss. Refrigerate until chilled.

  • If you're looking for ways to spruce up a salad, try different vinaigrette's. Even with the same greens and vegetables, you can dramatically change the flavor, texture and appearance of a salad with a different salad dressing. In this recipe video, I show you how to make a roasted tomato vinaigrette. This tomato vinaigrette is great in late summer and early fall when the tomatoes are at their peak. By slow roasting the tomatoes in the oven you concentrate their flavor and get a great sweetness out of them. The sweetness in the tomato goes great with the tangy vinegar. The best part is this roasted tomato vinaigrette goes great with so many things. In addition to using it as a salad dressing (last time I made it I dressed a asparagus salad), this vinaigrette makes a great sauce for fish and chicken dishes. Ingredients for Roasted Tomato Vinaigrette
  • 2 – 3 Oven roasted tomatoes Garlic clove 3 – 4 large basil leaves Olive oil White wine vinegar Honey Lemon juice
  • Recipe Overview & Keys to Success This roasted tomato vinaigrette is fairly simply to make. To make sure it’s the best it can be, it helps to use fresh, good quality tomatoes. More than anything else, especially in simple vegetable dishes like this, the quality of your ingredients determines the quality of the finished product. You also want to make sure you thoroughly roast the tomatoes and really evaporate most of the water out of them. It’s hard to overcook them, so don’t be shy about letting them go for a while. The final key to success I want you to be aware of, is to make sure the vinaigrette stays balanced. Each component plays a role, and you want them to work in harmony. Too much vinegar, or not enough, could make the vinaigrette taste either too harsh or too flat. I give you measurements below, but really you need to taste and make adjustments as you go. Oven roast your tomatoes
  • Clean and oven roast your tomatoes as described in the video Make sure the tomatoes are well cooked; slightly brown edges are a good sign Note – you can do this several hours ahead of time if you’d like
