CHINESE CHILI GARLIC SHRIMP

Spicy, garlicky, and sweet all at once, these crispy chili garlic shrimp will be your new favorite takeout dish at home in your own kitchen!

1 lb (450 g) raw shrimp (, peeled & deveined (*Footnote 1))
1 teaspoon Shaoxing wine ((Optional))
1/2 teaspoon salt
1 and 1/2 tablespoons cornstarch
1 tablespoon all-purpose flour
1/4 cup chili garlic sauce
2 tablespoons brown sugar
2 teaspoons light soy sauce ((or soy sauce))
4 1/2 tablespoons peanut oil ((or vegetable oil))
1 tablespoon ginger (, minced)

Steps:

  • Combine the shrimp and Shaoxing wine in a medium-sized bowl. Sprinkle evenly with salt. Mix until the salt is evenly dispersed. Set aside while preparing the rest of the ingredients.
  • Combine all the sauce ingredients in a bowl and stir until the brown sugar is dissolved. Set aside.
  • Heat 4 tablespoons of oil (or just enough to cover the bottom of the pan) in a medium-sized skillet until hot. Meanwhile, add the cornstarch and all-purpose flour to the bowl with the shrimp. Toss until the shrimp are fully coated.
  • Shake the extra flour off the shrimp and add them to the pan. You might need to cook them in two batches. Let the shrimp cook without touching them, until the bottom turns golden, 2 to 3 minutes. Flip to brown the other side, another 2 to 3 minutes. Once done, transfer the shrimp to a large plate without overlapping and keep cooking the rest.
  • Once you're done cooking the shrimp, turn off the stove and use paper towels to wipe the pan to remove any residue.
  • Add the remaining 1/2 tablespoon of oil to the pan and heat over medium heat. Add the ginger and stir until fragrant, about 1 minute.
  • Add the sauce to the pan. Cook and stir until the sauce becomes thick and glossy, 20 to 30 seconds.
  • Turn the heat off and return the shrimp into the pan, tossing to coat thoroughly.
  • Serve hot as a main dish.

⅓ cup olive oil
¼ cup sesame oil
¼ cup chopped fresh parsley
2 tablespoons hot sauce
2 tablespoons minced garlic
1 tablespoon ketchup
1 tablespoon Asian chile paste
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons lemon juice
2 pounds large shrimp, peeled and deveined
12 wooden skewers, soaked in water

Steps:

  • Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
  • Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade and seal the bag. Refrigerate for 2 hours.
  • Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

SHRIMP AND RED BEAN CHILI RECIPE

A delectable seafood chili recipe with huge tiger prawns. This is my favorite shrimp chili, with loads of seasoning.

1 tablespoon olive oil
1 small onion (chopped)
1 jalapeno pepper (chopped (or use a poblano pepper for milder heat))
4 cloves garlic (chopped)
1 can (15 ounces red kidney beans, drained and rinsed)
15 ounces tomato sauce
2 Roma tomatoes (diced)
6 ounce tomato paste
2 cups chicken broth
2 tablespoons hot sauce (pick your favorite)
1 teaspoon ground cumin
1/2 teaspoon dried basil
1 tablespoon chili powder ((or 2 tablespoons for more pronounced flavor))
1 pound raw shrimp ((peeled and deveined))

Steps:

  • In a large saucepan, saute onion and jalapeno (or poblano) pepper in oil for 4-5 minutes or until crisp-tender.
  • Add the garlic and cook another minute.
  • Stir in the beans, tomatoes, tomato paste, broth, hot sauce, cumin, chili powder and basil.
  • Reduce heat; simmer, uncovered, for 20 minutes or until heated through. You can simmer longer to let the flavor develop even more.
  • Add shrimp; simmer 10 minutes longer or until shrimp is pink and cooked through.
  • Serve with rice if desired.

1/2 lb shrimp, peeled and deveined
2 -3 garlic cloves, minced
2 teaspoons ginger, grated
1 teaspoon dried red chili pepper (or chili flakes)
3 scallions, minced
3 tablespoons sesame oil
2 tablespoons sherry wine
2 tablespoons ketchup
2 tablespoons chili sauce
1 teaspoon cornstarch, mixed with
2 tablespoons water

Steps:

  • In wok or skillet over medium-high heat, heat oil until hot. Saute Shrimp, garlic, ginger, scallions and chile. Cook a few minutes.
  • Add sherry, ketchup, chili sauce, and cornstarch mixture and continue to cook, stirring constantly, until shrimp are done. Serve with rice.
  • Sometimes I dust the shrimp with flour before putting them in the oil, to make it like Chen's on iron chef! Enjoy!

5 cloves Garlic
1 pound Raw whole shrimp
1 tablespoon Lee Kum Kee garlic chili sauce
1/2 tablespoon Soy sauce
1 tablespoon Water
1/2 tablespoon Brown sugar
1/2 tablespoon Vegetable oil
3 sticks Green onion

Steps:

  • Mince 5 cloves of garlic.
  • Cut 3 sticks of green onion.
  • Pour ½ tablespoon of vegetable oil into a non-stick pan and turn on medium to high fire. Then, add minced garlic and stir fry for a minute.
  • Next, add the washed whole raw shrimp and stir fry a little bit.
  • After that, add 1 tablespoon of chili garlic sauce, ½ tablespoon of soy sauce, ½ tablespoon of brown sugar and 1 tablespoon of water and stir fry a few minutes.
  • Until the shrimp cooks. It turns orange red. (Around 3-5 minutes and don't over cook them because the texture of shrimp will change.)
  • When the shrimp is cooked, add the chopped green onion, mix it and ready to serve.

1 lb large shrimp (de-veined and peeled, leaving tails attached)
1 Tbsp peanut (or plan cooking oil for stir-frying)
1/2 Tbsp light soy sauce
1/2 Tbsp dark soy sauce
1/4 tsp finely ground Szechuan (Sichuan peppercorns)
1/2 tsp Shaoxing wine (or sherry)
1 Tbsp corn starch
¼ cup peanut oil (you may also use canola oil)
2 Tbsp dried red pepper flakes
1 Tbsp peanut (or plan cooking oil for stir-frying)
1 Tbsp ginger (minced)
2 cloves of garlic (minced)
2 small shallots (thinly sliced)
1/2 each red (yellow and green bell peppers, cut into 1-inch pieces)
2 cups broccoli florets
3 green onions (scallions, cut into ½" pieces on the diagonal)
1 tsp finely ground Szechuan (Sichuan peppercorns)
1/2 Tbsp Shaoxing wine (or sherry)
1 Tbsp low sodium soy sauce
1/2 tsp sea or kosher salt
1/2 Tbsp honey
1 Tbsp sesame oil
1/2 Tbsp corn starch

Steps:

  • Combine shrimp marinade ingredients in a large bowl, add the shrimp, mix well and set aside.
  • Prepare hot chili oil by heating the oil in a sauce pan until it just starts to smoke, then pour the hot oil over dry chili flakes in a small glass or metal container. Let cool down then strain into a separate container. The hot chili oil can be prepared hours, even days in advance. If making ahead, let the chili flakes soak in oil for hours before straining - this will give you more flavor and heat.
  • Heat one tablespoon of peanut oil in a wok. Add the shrimp with the marinade and stir-fry, stirring frequently, until she shrimp just starts to turn pink, about 2-3 minutes. Do not overcook. Transfer the shrimp into a bowl and set aside.
  • In the same wok, heat another tablespoon of peanut oil. Add the ginger, garlic, shallots and one teaspoon (or more, see note) of hot chili oil. Saute for about 30 seconds, then add the broccoli, bell peppers and the stir fry sauce. Stir fry for about 3-5 minutes, until broccoli is cooked. Add the scallions, sesame oil and the shrimp and saute for another minute, mixing all the ingredients well.
  • Serve hot, as is or with a bowl of jasmine rice.

SHRIMP WITH GARLIC AND CHILI PEPPER

2 tablespoons olive oil
1/2 fresh red chile, according to size and taste, minced
2 garlic cloves, chopped
1/2 pound unshelled medium shrimp
1/2 cup white wine
Salt, if needed
1 tablespoon chopped parsley leaves

Steps:

  • Pour the olive oil into a wide, heavy-bottomed frying pan. Then add the chile and garlic and, over moderate to low heat, to infuse rather than to color, fry for 2 minutes, stirring all the time. Then turn the heat to high, add the shrimp, and stir-fry them for another 2 minutes or until they turn pink and are just, delicately, cooked; you want the flesh to stay tender. Pour in the white wine and let it bubble up. You don't want a liquid puddle around the shrimp, just enough wine to let the juices ooze into a winy sauce. Another minute or so should do it. Season with the salt, if necessary, and then turn into your bowl and sprinkle with parsley. Eat with some good hunks of baguette. I eat these carapace, head, and all: one of the reasons I designate them for solitary dinner.
  • If you want, you can add a tablespoonful or so of brandy before throwing in the wine.

1 pound shrimp ((450g, size 50/60, peeled and de-veined))
1 teaspoon vegetable oil ((plus 2 tablespoons, divided))
½ teaspoon cornstarch
½ teaspoon ginger ((minced))
2 teaspoons doubanjiang (chili bean sauce)
2 cloves garlic ((minced))
¼ cup shallots or red onion ((minced))
1 tablespoon ketchup
1 tablespoon hoisin sauce
1 tablespoon Shaoxing wine
¼ cup water chestnuts ((chopped, optional))
1 medium carrot ((very finely chopped))
½ red bell pepper ((diced))
1 cup chicken stock ((120 ml))
1 teaspoon rice vinegar
1 teaspoon sesame oil
¼ teaspoon salt
¼ teaspoon sugar
⅛ teaspoon fresh ground white pepper
2 tablespoons cornstarch ((mixed with 2 tablespoons of water))
1 scallion ((chopped))

Steps:

  • Mix the shrimp together with 1 teaspoon of oil and ½ teaspoon of cornstarch until the shrimp are evenly coated. Set aside.
  • With the burner on low, heat the remaining 2 tablespoons of vegetable oil in your wok. Add the ginger and fry for 30 seconds. Next, add the douban jiang or the hot chili oil (with chili flakes), the garlic, and the shallots, and continue to stir fry for another 2 minutes.
  • Next, stir in the ketchup and hoisin sauce, and turn the heat up from low to medium. Let the ketchup and hoisin sauce fry for 1 to 2 minutes to bring out a rich color and flavor. Turn the heat down if it looks like the sauce may burn.
  • Next, add the Shaoxing wine, water chestnuts (if using), and the red bell pepper. Stir-fry for another 2 minutes. Add the chicken stock, and let the mixture come to a boil; then immediately turn the heat down to let the mixture simmer.
  • Add the rice vinegar, sesame oil, salt, sugar and white pepper, and continue to simmer the sauce for another 3 minutes. When 3 minutes have elapsed, turn the heat up slightly and stir in the shrimp.
  • Once the shrimp and sauce mixture returns to a steady simmer, stir in the cornstarch slurry until the sauce has thickened. At this point, the shrimp should be opaque and cooked through. Stir in the scallions. Serve with steamed rice!

  • Stir in the sauce, bring to a simmer and pour in the boiling water.

1/4 cup butter
1 onion, finely chopped
4 cloves garlic, minced
1 lb roma tomato, cored and chopped
1 -2 teaspoon chinese chili paste with garlic
8 ounces sliced mushrooms, rinsed
1 cup dry white wine
1 lb frozen raw tail-on shrimp, thawed (41 to 50 per pound)
1 cup chicken broth
2 tablespoons minced parsley
2 green onions, including tops,ends trimmed and thinly sliced on the diagonal

Steps:

  • In a 12-inch fry pan, melt butter over medium-high heat.
  • Add onion and garlic and stir often until onion is limp but not browned, 3 to 5 minutes.
  • Stir in tomatoes, chili paste, mushrooms, and wine.
  • Bring to a boil over high heat; boil, uncovered, stirring often, until most of the liquid has evaporated, 5 to 8 minutes.
  • Reduce heat to medium-high.
  • Add shrimp and stir often just until shrimp begin to turn pink, 1 to 2 minutes.
  • Stir in broth, parsley, and green onion.
  • Stir just until hot and shrimp are no longer translucent in center (cut one to test), about 1 more minute.

RED CHILI SHRIMP

Based on the Malay dish called Sambal Udang. Really spicy but not TOO hot and yummy with white rice or coconut rice and thickly sliced cucumbers to cool your tongue. It doesn't look impressive but given the ease of the recipe and the small number of ingredients, I think you will find it surprisingly flavourful.

500 g medium shrimp, shell and devein, leave tails on and drain well
10 large fresh red chilies, discard seeds and stalks
5 shallots, peeled
3 garlic cloves, peeled
1 teaspoon salt (or to taste)
1/2 teaspoon sugar
1/4 cup water
1 tablespoon calamansi juice (cherry sized asian green limes)

Steps:

  • Cut up chilies, shallots and garlic and pop in the blender. Process with minimal water till you get a not too smooth paste.
  • Heat 5tbs oil in a wok or deep pan till very hot then fry shrimp only till they change colour. Remove from pan, leaving oil behind and set aside.
  • Add another tbs oil to pan and when hot, add chili paste and fry till fragrant and glistening. Return shrimp to pan and stir for about 3 minutes.
  • Season and add lime juice (to taste) and water. Stir well. Turn off heat and serve with white or coconut rice and sliced cucumbers if you like.

1 tablespoon soy sauce

1 teaspoon sesame oil
1 1/2-2 lbs uncooked medium shrimp, peeled and deveined
3/4 cup chicken broth
3 tablespoons sugar, to taste

1/4 cup soy sauce
3 tablespoons dry sherry or 3 tablespoons rice wine
2 teaspoons rice vinegar
6 small chili peppers or 1 teaspoon crushed dry red pepper flakes, to taste
4 tablespoons oil, divided
1 tablespoon minced fresh garlic, to taste
1 1/2 cups green onions, cut in 1/2 inch pieces
1 red bell pepper, seeded and cored, cut into 1/2 inch squares
1 1/2 teaspoons sesame oil

Steps:

  • In a bowl, combine all marinade ingredients; stir in the shrimp until evenly coated; marinate for 20-25 minutes.
  • Meanwhile, blend together all sauce ingredients.
  • Slice the chili peppers in half lengthwise, and scrape out the seeds with the tip of a knife, then cut the peppers into 1/4-inch pieces (I use rubber gloves for this, watch your eyes, these are HOT!).
  • In a large wok or large heavy skillet, over high heat, add in half of the marinated shrimp; stir-fry for 2 minutes, or until the shrimp turns pink; remove.
  • Heat 1 Tbsp oil in the same wok/frypan, and stir-fry remaining shrimp in the same manner; remove.
  • Wipe out the pan with a paper towel.
  • Heat the remaining oil in the same pan.
  • Add the chili peppers and garlic; stir-fry 10 seconds, or until peppers start to turn brown.
  • Add in the green onions and bell pepper; stir-fry 1 minute.
  • Add in the sauce mixture; cook, stirring until sauce boils and thickens.
  • Stir in the shrimp and sesame oil.
  • Serve immediately.

10 to 20 medium to large shrimp (fresh or thawed from frozen)
2 tablespoons vegetable oil
1 1/2 tablespoons coconut milk

  • Remove shells from shrimp, except for tails. Butterfly shrimp by cutting down the length of the back (shallow cuts).
  • Place all other ingredients in a mini-chopper or food processor and process well to form a chili-garlic sauce.
  • Pour the sauce over the shrimp in a medium bowl, and gently stir/toss to mix. Allow it to marinate for 5 minutes while your oven heats up. Turn oven to broil setting.
  • Lay shrimp on their sides on a baking sheet. Place sheet on the second or top-most rung of your oven under the broiler and cook 3 to 4 minutes, or until shrimp are sizzling and steaming, then turn shrimp to cook the other side. If you have any left-over marinade, spoon it over the shrimp. Broil another 3 to 4 minutes, or until shrimp are plump and opaque.
  • Garnish with wedges of lime and a sprinkling of fresh coriander/cilantro. ​

Steps:

  • Place shrimp in bowl; sprinkle with coarse salt and toss. Let stand 15 minutes. Pat dry. Heat oil in medium skillet over high heat. Add garlic, and dried pepper and stir.
