SOUTHWESTERN PINTO BEAN BURGER RECIPE

Southwestern Pinto Bean Burger Recipe image

This is one of those leftover pinto bean recipes I would have never thought of but now can't live without! These pinto bean burgers really hit the spot when you're craving that Southwestern, Tex-Mex flavor. But beware, you won't want to go back to frozen veggie patties after these!

Provided by Anjali Shah

Categories     Main Course

Time 1h

Number Of Ingredients 18

½ cup diced red onion
½ cup dry whole wheat panko breadcrumbs
¼ cup chopped cilantro
2 tablespoons minced seeded jalapeño pepper
2 tablespoons low fat sour cream
1 teaspoon hot pepper sauce or Cholula sauce
½ teaspoon ground cumin
¼ teaspoon ground black pepper
⅛ teaspoon salt
1 large egg
1 15oz can pinto beans, drained (1 can)
1 8oz can no salt-added whole-kernel corn, drained (Or 1 cup frozen or fresh corn)
1 tbsp olive oil
Ketchup or barbecue sauce (If you use bbq sauce, make sure you get one that's super low in sugar (less than 4 grams per serving))
Red onion slices
Roma tomato slices
Baby spinach leaves
Whole wheat or sprouted wheat hamburger buns (Make sure you get buns with

Steps:

  • To prepare burgers, combine the first 9 ingredients in a large bowl or food processor. If you use a food processor, you don't have to dice the onion or mince the jalapeno pepper ahead of time. (This saves on cutting time if you have a good food processor). Transfer to a large bowl, and mix in the egg.
  • Put pinto beans and corn in the food processor, and then add to the mixture in the bowl. Alternatively, you can add the pinto beans/corn to the bowl and partially mash with a fork or potato masher.
  • Divide bean mixture into 4 equal portions, shaping each portion into a 3 1/2-inch patty, and refrigerate for 10 minutes.
  • Heat 1 tablespoon extra-virgin olive oil in a large skillet over medium-high heat. Add patties to pan, and cook 5 minutes on each side. Reduce to medium heat, cook an additional 5 minutes (flipping the burger patty once in between) to get a nice caramelized crust. Transfer burgers to a plate lined with paper towels.
  • Now it's time for assembly! Place patties on bottom halves of buns; top each patty with 1-2 tbsp ketchup or bbq sauce, red onion slices, roma tomatoes, baby spinach leaves, and top half of bun.

HEALTHY CHILI BEAN AND BULGUR BURGERS

Healthy Chili Bean and Bulgur Burgers image

Don't let these veggie burgers fool you: They may look like fried-chicken sandwiches, but they're actually packed with plant protein and fiber and flavor! We love the simple broiler method for cooking the patties. A light coating of cooking spray makes the outside come out nice and crunchy.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 17

1/2 cup whole-kernel bulgur wheat
2 tablespoons vegetable oil
1 tablespoon tomato paste
1 teaspoon chili powder
1/2 teaspoon ground cumin
Large pinch cayenne pepper
1/4 cup reduced-fat sour cream
Zest and juice of 1 lime
Kosher salt
One 15-ounce can kidney beans, rinsed
1/3 cup shredded Mexican-blend cheese, plus more for sprinkling, optional
2 tablespoons breadcrumbs
2 scallions, sliced
Cooking spray
1 ripe avocado
4 whole-wheat English muffins, split
1 cup sprouts, such as broccoli or alfalfa

Steps:

  • Bring the bulgur and 1 1/2 cups water to a boil in a small saucepan. Reduce the heat to medium-low, cover and simmer until tender, 10 to 12 minutes. Strain, and let cool completely.
  • Meanwhile, heat the oil in a small skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne, and whisk until the oil is yellow and the spices are fragrant, about 45 seconds. Let the chili oil cool to room temperature.
  • Whisk together the sour cream, lime zest and juice, a pinch of salt and 1 tablespoon water in a small bowl. Refrigerate until ready to serve.
  • Position an oven rack at the top of the oven, and preheat the broiler. Line a baking sheet with foil. Mash the beans, cooked bulgur, cheese, breadcrumbs, scallions, chili oil and 1/2 teaspoon salt with a potato masher in a large bowl until the mixture is well combined and holds together when squeezed. Form into 4 uniform patties about 3/4 inch thick.
  • Arrange the patties on the prepared baking sheet, and generously coat each with cooking spray. Broil until a golden-brown crust forms, 4 to 5 minutes. Remove the baking sheet from the broiler, flip each patty with a metal spatula and coat the tops with cooking spray. Broil until the tops are golden brown, 4 to 5 minutes more.
  • Halve, pit and slice the avocado. Put each patty on a muffin bottom and sprinkle with additional cheese if using; top with some sour cream-lime sauce, avocados and sprouts, and sandwich with the muffin top.

CAJUN BURGER WITH SPICY SOUTHWEST SAUCE

Cajun Burger With Spicy Southwest Sauce image

This is the best homemade burger I have ever eaten. We are not fans of garlic but we love Worcestershire sauce and we prefer flavor over health consciousness. By following this recipe you will get just a hint of garlic, mild spice, and a lot of Worcestershire flavor. If you like to really taste your garlic then you will need to add more. If you like spicy leave more seeds or increase the number of peppers and last but not least, if you are not a fan of Worcestershire sauce then cut back to 1 tbsp. If you want to be health conscious then use a lower fat meat but really watch your cooking time or it will be dry and lose a lot of flavor. In fact, if you go with sirloin or round I would suggest adding two pieces of white bread (crust removed) soaked in milk to your mix to retain moisture. My kids are VERY picky eaters and they love these burgers. (Take that McDonalds!)

Time 30m

Yield 5-6 Burgers, 5-6 serving(s)

Number Of Ingredients 10

1/2 cup mayonnaise
1 teaspoon cajun seasoning (Luzianne Cajun Seasoning)
1 tablespoon barbecue sauce (Sweet Baby Rays)
1/2 tablespoon butter
1/2 cup yellow onion, diced
1/2 garlic clove, minced
1 serrano pepper, most of the seeds removed and minced
1 1/2 lbs hamburger (70/30)
1 tablespoon cajun seasoning
1/4 cup Worcestershire sauce

Steps:

  • Cajun Mayo:.
  • Prepare the Cajun mayo by combining the mayo, Cajun seasoning, and BBQ sauce and stir. Taste and adjust (like your grandma always told you), then set aside.
  • Pre-Heat Grill on High.
  • Burgers:.
  • Heat a small pan over medium high heat.
  • Add the pat of butter to the pan and melt.
  • Add the onions and sauté 2-3 minutes stir often.
  • Add the peppers and continue to sauté 1-2 minutes.
  • Add the garlic and sauté until fragrant.
  • Remove the onion, pepper, garlic mixture from heat allow to cool (Stick it in the freezer if your stomach is growling!).
  • Put the onion mixture into a large non-reactive bowl.
  • Tear the hamburger into small pieces and place in the same bowl.
  • Add the Worcestershire sauce.
  • Sprinkle 1/2 of the tbsp of Cajun seasoning over the meat and mix gently but thoroughly with your hands. (No pockets of seasoning please!).
  • Sprinkle the remaining Cajun seasoning and remix careful to not over work the meat.
  • Form into patties slightly larger than your buns.
  • Grilling:.
  • Place the burgers on the grill and listen to it sear the meat.
  • Reduce the heat to medium / medium high and continue cooking with the lid closed until the burgers are done to your liking flipping once.
  • Add the cheese shortly after the flip to get a really good melt (Important for thick slices of cheese).
  • Remember meat tastes better if not over cooked and the temperature will rise another 3-5 degrees after pulling the burgers from the grill. Cooking by temperature is the only way to get consistent results. I like to pull my burgers at 145-150 degrees.
