4 cups water
1 bottle full bodied red wine, we used cabernet
1 lb spaghetti
2 tablespoons olive oil
4 cloves garlic, thinly sliced
1 teaspoon red pepper flakes
2 tablespoons butter
1 cup freshly grated parmesan cheese
½ cup flatleaf italian parsley

Steps:

  • Measure ¼ cup (60 ml) of wine and set aside.
  • Combine the water and the remainder of the bottle of wine in a large pot and bring to a boil.
  • Once boiling, add spaghetti and cook (stirring frequently) until al dente, about 7 minutes.
  • Reserve ¼ cup (60 ml) of the cooking liquid and drain the spaghetti. Set aside.
  • In a large skillet, heat the olive oil on medium heat. Add the garlic and red pepper flakes and cook for 2 minutes, stirring occasionally.
  • Add the reserved cooking liquid and reserved wine to the skillet and bring to a simmer. Add the pasta and toss to coat with the sauce.
  • Add the butter and stir until it melts into the pasta.
  • Add salt and pepper, parmesan, and parsley. Stir to combine.
  • Serve on its own or top with more parmesan and parsley and open up another bottle of wine!

¼ cup pine nuts
½ teaspoon red pepper flakes

  • Pour the red wine and water into a medium pan. Season with salt.
  • Bring the mixture to a boil and add the spaghetti.
  • Cook until most of the red wine is absorbed by the pasta, 8-10 minutes.
  • Transfer the pasta to a medium bowl.
  • Melt the butter in the same skillet over medium heat. Add the garlic, pine nuts, and red pepper flakes.

1 lb spaghetti
salt, to taste
fresh ground pepper, to taste
1/2 cup extra virgin olive oil
1 tablespoon minced garlic
1 teaspoon red hot red pepper flakes (to taste)
1 (750 ml) bottle light red wine (like Chianti Classico or a good red Zinfandel...a quality wine, but not necessarily expensive)
1 tablespoon butter

Steps:

  • Bring a large pot of water to a boil and salt it. Put the oil, garlic and hot pepper in a large, deep skillet.
  • When the water boils, add the pasta; turn the heat under the skillet to high. Cook the pasta as usual, stirring. As soon as the garlic begins to brown, sprinkle it with salt and pepper to taste and add three-quarters of the bottle of wine (a little more than two cups); bring to a boil and keep it there.
  • When the pasta beings to bend--after less than five minutes of cooking--drain it and add it to the wine mixture. Cook, stirring occasionally, adding wine a little at a time if the mixture threatens to dry out completely.
  • Taste the pasta frequently. When it is done--tender but with a little bite--stir in the butter and turn off the heat. When the butter glazes the pasta, serve it immediately.

2 tablespoons extra-virgin olive oil, plus more for serving
1/3 red onion, medium diced
3 cloves garlic, sliced into chunks
Pinch red pepper flakes, optional
2 handful fresh basil, torn, plus more for serving
Salt and freshly ground black pepper
1 pound spaghetti, for serving
Freshly grated Parmesan cheese, for serving

Steps:

  • In a food processor, puree the tomatoes to a smooth creamy consistency.
  • Add olive oil to a large pan over medium heat. Once hot, add the onions and saute until they are soft, and before it actually starts browning a bit, add the garlic. If you'd like to make the sauce spicier, add a pinch red pepper, optional.
  • Add the tomatoes and season with salt and pepper.
  • Simmer on a medium-low flame for about a half hour. Thrive for balance in the consistency of the sauce, it has to be fluid but it should not look overly wet. A few minutes before taking the sauce off the fire, add half the basil and season with salt and pepper.
  • To serve: Cook a nice al dente pasta, dress with red sauce and finish with some freshly grated Parmesan, a couple of leaves of basil and sprinkle with extra-virgin olive oil.

  • Bring a large pot of salted water to the boil. Add the pasta and cook for 6 minutes, stirring pasta occasionally, until par-cooked. Drain and reserve the pasta water.
  • In a 12-inch nonstick skillet, heat the olive oil over medium-high heat. Add the garlic, shallots, crushed red pepper flakes and 1 teaspoon salt. Cook until the garlic becomes fragrant, 1 to 2 minutes.
  • Add the wine and tomato paste. Bring to a simmer over medium-high heat. Reduce the heat to medium and simmer gently for 3 minutes.
  • Add the pasta to the skillet. Cook, stirring frequently, until almost all of the wine is absorbed and the pasta is tender but still firm to the bite, about 5 minutes (if the pasta mixture is too dry, add pasta cooking water 1/4 cup at a time).
  • Stir in the butter and 1 teaspoon salt. Increase the heat, and toss until the wine sauce thickens enough to coat the pasta, about 1 minute. Toss to blend.
  • Add the parsley and goat cheese and serve.

This is an adaptation of a recipe by Ainsley Harriott. My husband usually doesn't like pasta but he finishes this before me and asks for more! It is slightly decadent in that it uses a bottle of red wine but is very good!

500 g minced beef
750 ml red wine, whatever you prefer
1 teaspoon dried herbs
salt and pepper
1 tablespoon olive oil
2 garlic cloves
1 onion, chopped
1 (400 g) can chopped tomatoes
2 teaspoons dried chili pepper flakes
1 tablespoon tomato paste
2 tablespoons sweet chili sauce
1 (500 g) packet spaghetti
3 tablespoons chopped fresh parsley
parmesan cheese, to serve

Steps:

  • Place the minced meat, red wine, mixed herbs and salt and pepper in a bowl.
  • Stir well.
  • Cover and refrigerate overnight or all day.
  • Heat oil in pan.
  • Stir fry onion and garlic until soft.
  • Add red wine mixture, tomato paste, canned tomatoes, sweet chili sauce and chili flakes.
  • Bring to the boil then simmer uncovered for 45 minutes or until most of the liquid has evaporated and the mixture resembles traditional bolognese consistency.
  • (it will be much darker colour than usual).
  • Cook the spaghetti as mentioned on the packet.
  • At the last minute, stir the chopped parsley through the sauce.
  • Add sauce to the drained spaghetti and top with grated Parmesan cheese.
  • Serve with a nice glass of red.

RICH AND ZESTY RED WINE TOMATO SAUCE

2 (28 ounce) cans whole tomatoes (can be pre-seasoned if you like)
2 (6 ounce) cans tomato paste
6 -8 whole garlic cloves, peeled and chopped
1 large yellow onion, coarsely chopped
1/4 cup sun-dried tomato, chopped
2 -3 tablespoons extra virgin olive oil
3 -4 sprigs fresh basil leaves, finely chopped
1 -2 tablespoon dried oregano
1 -2 tablespoon dried parsley
1 -2 tablespoon dried Italian seasoning
salt, to taste
1/4 cup freshly grated pecorino romano cheese
1 (750 ml) bottle merlot

Steps:

  • In a large pot, sweat the chopped onions and garlic in the olive oil over med-low heat.
  • Add the peeled tomatoes, crushing them with your hands one by one into smaller chunks. Be careful- they squirt all over the place! Make sure to pour in all the liquid in the cans as well. Add all ingredients except salt, cheese, and wine.
  • Stir all ingredients together. Cover, and increase heat to med-high. Simmer/cook 30-40 minutes, stirring occasionally so that the sauce doesn't burn on the bottom.
  • Add about 1/3 of the bottle of merlot. Add the cheese. Stir, reduce heat slightly and let that cook uncovered for another 15-20 min, stirring occasionally.
  • Taste and determine if you need salt, and add to taste. For salt with a little tang, add some more cheese, if you have it. Let simmer another 15 minutes uncovered, stirring occasionally.
  • During the last simmering stage, cook your pasta.
  • Serve over pasta (1 ladleful is gracious plenty). Extra sauce can frozen for up to a month. To reheat, let simmer on low uncovered, stirring frequently so the sugar in the merlot doesn't burn.
  • *Spicy alternative: For a spicier sauce, use shiraz in place of merlot and add 2 tsp of dried red pepper flakes.

I haven't tried it yet but wanted to post it for safekeeping. The cooking method for this version is slightly different from my Recipe #351330. In this recipe, "the pasta finishes boiling in the wine sauce." This turns the pasta a deep burgundy and gives it a rich flavor, complimented by the slight spice of the pepper. Updated 4/15/09: The original recipe did not specify the amount of red wine used. I have corrected the recipe to use a 750ml bottle.

  • Add the pasta to the pot of water, cook until al dente (check recommended cooking time found on the box of pasta; remove pasta from heat and drain about 2-4 minutes before end of recommended cooking time; pasta will finish cooking in the red wine sauce).
  • Meanwhile, in a large high-sided skillet, sauté the shallot, garlic and cayenne in the olive oil over medium-high heat until tender, about 1 minute.
  • Add the red wine and basil (optional) to your skillet and bring to a boil. Reduce the heat slightly, keeping the sauce simmering.
  • Drain the pasta and add it to your skillet. Set the timer for the remainder of the cooking time for the pasta. As the pasta cooks, the wine should reduce down into a thick sauce. When the pasta is finished, add the butter to glaze. Season with salt and pepper. Take it out of the pan and serve.
  • Garnish with freshly grated Parmesan cheese.

1 tbsp olive oil
4 rashers smoked streaky bacon, finely chopped
2 medium onions, finely chopped
2 carrots, trimmed and finely chopped
2 celery sticks, finely chopped
2 garlic cloves finely chopped
2-3 sprigs rosemary leaves picked and finely chopped
500g beef mince
2 x 400g tins plum tomatoes
small pack basil leaves picked, ¾ finely chopped and the rest left whole for garnish
1 tsp dried oregano
2 fresh bay leaves
2 tbsp tomato purée
1 beef stock cube
1 red chilli deseeded and finely chopped (optional)
125ml red wine
6 cherry tomatoes sliced in half
75g parmesan grated, plus extra to serve
400g spaghetti
crusty bread to serve (optional)

Steps:

  • Put a large saucepan on a medium heat and add 1 tbsp olive oil.
  • Add 4 finely chopped bacon rashers and fry for 10 mins until golden and crisp.
  • Reduce the heat and add the 2 onions, 2 carrots, 2 celery sticks, 2 garlic cloves and the leaves from 2-3 sprigs rosemary, all finely chopped, then fry for 10 mins. Stir the veg often until it softens.
  • Increase the heat to medium-high, add 500g beef mince and cook stirring for 3-4 mins until the meat is browned all over.
  • Add 2 tins plum tomatoes, the finely chopped leaves from ¾ small pack basil, 1 tsp dried oregano, 2 bay leaves, 2 tbsp tomato purée, 1 beef stock cube, 1 deseeded and finely chopped red chilli (if using), 125ml red wine and 6 halved cherry tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes.
  • Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce.
  • Add the 75g grated parmesan, check the seasoning and stir.
  • When the bolognese is nearly finished, cook 400g spaghetti following the pack instructions.
  • Drain the spaghetti and either stir into the bolognese sauce, or serve the sauce on top. Serve with more grated parmesan, the remaining basil leaves and crusty bread, if you like.

2 bottles red wine
6 1/2 cups water
4 ounces extra-virgin olive oil
2 garlic cloves, split
1 cup cherry tomatoes, halved
1 teaspoon peperoncino (dried red chili flakes)
1/2 cup basil, fino verde and opal, torn
1/2 pound spaghetti, preferably Verrigni gold die cut
1/2 cup Pecorino Romano, freshly grated
salt

Steps:

  • Place the red wine in a large pot. Add an equal amount of water and bring to a rolling boil. While the wine-water is heating, Warm a 12-inch saute pan over low heat. Add the olive oil and the garlic. Toast the garlic, and when it has lightly browned on all sides and infused the oil, discard it. Add the cherry tomatoes and peperoncino and gently warm. Season with salt to taste, and turn off the heat.
  • When the wine-water liquid comes to a boil, add the spaghetti and cook the pasta for 8 minutes, or until very al dente and slightly underdone. Add a ladle-full of wine water to the tomatoes and gently stir to incorporate. When the time is up and the pasta is cooked, add the spaghetti to the pan with the tomatoes (do not discard the red wine water). Cook the spaghetti with the tomatoes and a drizzle of olive oil for about three minutes more, adding more of the wine-water mixture as necessary, until the spaghetti is cooked and a sauce has formed. Adjust seasoning. Because of the salt in the Pecorino Romano, be cautious with salt.
  • To finish, add the basil off the heat and serve immediately with the Pecorino Romano.
