OVEN ROASTED POTATOES AND FENNEL

Oven Roasted Potatoes and Fennel image

Oven Roasted Potatoes and Fennel. A simple, delicious vegetarian dish combining two favorite vegetables and makes an excellent side dish to any main meal.

Provided by Marisa

Categories     Vegetarian

Number Of Ingredients 6

4 medium potatoes (sliced into 1/4 inch slices)
1 fennel bulb (sliced into 1/2 inch wedges (see note))
2 tablespoons of olive oil (plus more for drizzling)
1 teaspoon chopped fresh rosemary (extra springs to nestle between veggies)
1 teaspoon fresh thyme (extra springs to nestle between veggies)
salt and pepper (to your taste)

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a large baking sheet with parchment paper and set aside. (I used an 18x12x1 sheet pan)
  • Place the sliced potatoes and sliced fennel in a large bowl.
  • Add the 2 tablespoons of olive oil, rosemary, thyme, salt and pepper to the vegetables.
  • Toss to combine and then spread them out in one single layer onto the prepared baking sheet.
  • Tuck in a few extra sprigs of rosemary and thyme and drizzle with a teeny bit more olive oil.
  • Roast the vegetables in the preheated oven for about 40 minutes or just until the potatoes are crispy and the fennel is tender with a rich golden brown colour.
  • Serve while still warm.
  • NOTE
  • Slicing fennel is really quite simple. First start by cutting off the stalks from the bulb (you can reserve the stalks for making soup).
  • Cut the fennel vertically in half and leave the hard core attached, then slice into 1/2 inch wedges.
  • Leaving the hard core attached will insure the wedges stay intact.

BRAISED FENNEL WITH CARROTS AND POTATOES

Braised Fennel With Carrots and Potatoes image

The slightly aniseed taste of fennel is a great match with carrots and potatoes, so I combined them all in this original recipe. It's a real treat served as a side dish with roast pork and gravy!

Provided by Kookaburra

Categories     Potato

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 11

1 large fennel bulb
25 g butter
3 cloves garlic, crushed and sliced
4 carrots, sliced
1 onion, halved and sliced
3 potatoes, peeled and sliced
1/2 teaspoon ground fennel
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups chicken stock
1/2 cup wine

Steps:

  • Cut the top off the fennel, reserving feathery leaves.
  • Chop feathery leaves finely and reserve.
  • Cut fennel into quarters, remove core and any tough outer layers, and slice finely.
  • Melt butter in a large saucepan or dutch oven.
  • Add garlic, fennel, carrots, onion and potato, together with ground fennel, salt and pepper.
  • Cook, stirring frequently, until fragrant and the onions and fennel are beginning to soften and turn transparent.
  • Add chicken stock, wine and fennel leaves and heat until simmering.
  • Lower heat, cover and simmer gently for 20-30 minutes, or until carrots and potatoes are soft.
  • Remove cover, increase heat and allow to boil briskly for 30 minutes, stirring occasionally, until the potato is broken down into an almost'mashed' consistency, but still with a little texture- the remaining liquid should be well thickened with the potato.
  • Taste and add extra seasoning if required.

ROASTED POTATOES, PARSNIPS AND CARROTS

Roasted Potatoes, Parsnips and Carrots image

I love roasted vegetables. This is an easy and simply delicious recipe by Jamie Oliver. Your veggies will be crisp on the outside and tender on the inside. Yum!

Provided by LifeIsGood

Categories     Potato

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 1/2 lbs potatoes (I use Idaho or Russet)
6 parsnips
6 carrots
1 bulb of garlic
3 sprigs fresh rosemary
sea salt & freshly ground black pepper, to taste
2 tablespoons olive oil, approx

Steps:

  • Preheat oven to 400 degrees F.
  • Peel the veggies and halve any larger ones lengthways. I like to quarter my potatoes (sometimes more if they are large).
  • Break the garlic bulb into cloves, smash them slightly and take peels off. (Jamie leaves his unpeeled, but I prefer the garlic peeled.).
  • Pick the rosemary leaves off the stalks.
  • Put the potatoes and carrots into a large pan of salted boiling water on high heat and bring back to a boil. Boil for about 5 minutes, then add the parsnips and cook for another 4 minutes.
  • Drain the veggies in a colander and allow to steam dry.
  • Take the carrots and parsnips out and set aside.
  • "Fluff" the potatoes in the colander by shaking it around a little. It's important to do this if you want the yummy crispy bits and edges.
  • Put a large roasting pan over medium heat and add the olive oil. Add the garlic and rosemary leaves. Then put all the veggies into the pan with a good pinch of salt and pepper. Stir them around to get them well coated.
  • Spread the veggies evenly out into one layer. This is important, so they will roast, not steam.
  • Put them into the preheated oven and cook for about 45 minutes to an hour. This will depend on your oven. I like to stir them up at least once while cooking. Watch so they don't burn.
