Contrast sweet grilled fruit with salty robust blue cheese and a honey vinaigrette in this stylish salad

4 firm, ripe pears , sliced lengthways into 1cm slices
2 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp honey
250g bag mixed salad leaf
150g pack blue cheese , crumbled
crusty bread , to serve (optional)

Steps:

  • Put the pears in a bowl and drizzle with 1 tsp of the oil. Heat a griddle pan, then cook the pears, in batches, for 1 min on each side. Set aside to cool.
  • Mix the remaining oil, vinegar and honey. Toss the pears, leaves and cheese, divide between 4 plates and drizzle with the dressing. Serve with bread, if you like.

2/3 cup coarsely chopped peeled fresh pear
1/3 cup olive oil
SALAD:
1 large pear, thinly sliced
1 tablespoon lemon juice
8 cups torn romaine lettuce
Salt and pepper to taste
1 cup glazed pecans
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup dried cherries

Steps:

  • Place the first eight ingredients in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream., For salad, toss sliced pear with lemon juice. In a large bowl, toss romaine with 1/2 cup dressing; season with salt and pepper to taste. Top with pear, pecans, cheese and cherries. Serve immediately with remaining dressing on the side.

Turn pears over; bake 5-7 minutes longer or until golden and tender., When cool enough to handle, peel pears. Thinly slice two pear halves lengthwise and set aside. Place remaining pear halves in a blender. Add the vinegar, water, honey, salt and white pepper; cover and process until smooth.   • Toast nuts in small pan over medium heat until fragrant. Cool.

  • 3. Dry roast the pine nuts in a skillet for 5 minutes, until toasty brown. Remove from the heat and set aside.

  • For dressing:

  • Preheat oven to 400°F. Scatter thyme sprigs on rimmed baking sheet. Place pear halves, cut side down, on work surface. Starting 1/2 inch from stem and leaving pear half intact, cut each lengthwise into scant 1/3- to 1/2-inch-wide slices. Press pear gently to fan slices; place atop thyme sprigs. 2-3 Teaspoons olive oil
4 cups washed baby spinach, 4 ounces
1/2 cup roughly chopped toasted hazelnuts
1/3 cup pomegranate arils
1 ripe avocado, sliced
2 Tablespoon white balsamic vinegar
1 Teaspoon Dijon mustard
1/4 Teaspoon sea salt
1/4 cup olive oil

Steps:

  • Preheat the oven to 425ºF and line a baking sheet with parchment paper. Cut the pears into quarters and core them, then slice them into 1/2″ slices. Place them on the lined baking sheet and lightly brush them with olive oil. Roast them for about 20 minutes, or until golden, then turn them over and roast again for an additional 10 minutes. When the pears are golden brown and caramelized, but still holding their shape, remove them from the oven and let them cool until they're warm, or room temperature.
  • While the pears are roasting, assemble the rest of the salad ingredients.
  • Make the dressing by whisking together the vinegar, Dijon mustard, and sea salt until combined. Then whisking constantly, add the olive oil in a slow steady stream. Whisk until all the oil had been added, and the dressing is emulsified.
  • When the pears are done and have cooled, either arrange all the ingredients over the top of the spinach, or toss them all together. Add as much dressing as you'd like, or serve it on the side.

Steps:
