This recipe for roast peaches from John Doe restaurant in Notting Hill is super-easy but looks great and tastes delicious. It's ready in under 30 minutes, so it's perfect for a dinner party dessert

225g caster sugar
50g butter, cubed
1 stick cinnamon
1 star anise
6 ripe peaches, halved & stoned
250ml mascarpone
1 vanilla pod, seeded
16 amaretti biscuits, gently crushed

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Sprinkle the sugar into the bottom of a baking tray, dot over the butter and add the spices. Put the peaches flat-side down on the mix and roast for 15-20 minutes, or until soft but still holding their shape.
  • Meanwhile, mix the vanilla with the mascarpone. Remove the peaches from the oven and while still warm, peel and discard the skin. Keep warm while you make the sauce.
  • Scrape the sugar from the tray into a small pan, and reduce the cooking liquor until you get a drizzling consistency.
  • Put 3 halves of peach per person on a plate, add a blob of the mascarpone, drizzle over the sauce and sprinkle over the amaretti biscuits.

2 tablespoons butter
1 cup ricotta cheese
3 tablespoons honey

Steps:

  • Arrange peaches, cut side up, in glass baking dish.
  • Sprinkle with sugar and dot with butter.
  • Bake 30 minutes at 325 degrees.
  • With slotted spoon, transfer peaches to individual plates.
  • Reserve juices.
  • In bowl, mix ricotta and honey.
  • Stir in reserved juices.
  • Pile ricotta mixture onto peaches and sprinkle with almonds.

6 ripe but firm peaches (about 2 1/4 pounds), halved, pitted, and cut into 1-inch wedges (about 6 cups)
2 tablespoons fresh lime juice
1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 225 degrees. In a bowl, gently toss peaches with lime juice and oil. Lightly season with salt and pepper. Spread in a single layer on a rimmed baking sheet lined with parchment. Place confectioners' sugar in a fine-mesh sieve and dust peaches evenly.
  • Bake until peaches darken and begin to curl, about 1 hour. Let cool completely; serve.

1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 cup dark brown sugar
1 to 2 pints frozen vanilla yogurt
Suggested toppings: toasted sliced almonds

Steps:

  • Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
  • Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.

1 purple onion, skin removed
1 red bell pepper, stemmed, seeded, and ribs removed
2 jalapenos, stemmed, seeded, and ribs removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper
4 ripe fresh freestone peaches, halved and pitted

Steps:

  • Preheat oven to 400 degrees F.
  • Cut the onion and red bell pepper into rough chunks and put in a bowl; mince the jalapenos and add them to the onion and peppers. Drizzle about 1 tablespoon of the extra-virgin olive oil over the vegetables and toss. Add a good pinch of salt and some pepper, toss, and place on 1 side of a rimmed baking sheet.
  • Drizzle the peaches with another tablespoon of oil, being sure to coat the cut sides well. Put them, cut side down, on the other side of the baking sheet. Roast the fruit and vegetables until caramelized, about 25 minutes. Using tongs, pull the skin off the peach halves and discard.
  • Arrange 2 peach halves on each serving dish, cut side up, on a bed of the roasted vegetables.
  • Note: If freestone peaches are not available, split the peaches leaving the pits intact; they can be removed easily after roasting.

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.
