Was looking for a quick and easy dinner for me and the man. Had leftover pizza dough that I like to use for flatbreads. It is simple to add veggies to meat mixture and play with the flavors! Feel free to add your favorite hot sauce for a spicier kick. Serve with a side salad to complete the meal. You can switch out ingredients as you like; turkey or chicken for beef or experiment with different cheeses. Fold flatbread like a taco and enjoy!

1 pound lean ground beef
salt and ground black pepper to taste
1 small yellow onion, diced
2 cloves garlic, diced
1 (1.25 ounce) package taco seasoning
1 pinch red pepper flakes, or to taste
2 tablespoons canola oil
1 (11 ounce) package pizza dough
1 cup shredded Cheddar cheese
1 small green onion, minced

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add yellow onion, garlic, taco seasoning, and red pepper flakes; cook and stir until onion is tender, about 10 minutes.
  • Heat oil in a separate skillet over medium heat.
  • Roll dough into a thin crust onto a work surface; cut into 6 equal pieces.
  • Fry each piece of dough in the hot oil until golden, about 1 minute per side. Transfer cooked flatbread to a paper towel-lined plate.
  • Top each flatbread with ground beef mixture, Cheddar cheese, and green onion.

2 teaspoons ranch salad dressing mix
1 teaspoon lemon juice
1-1/2 pounds ground beef
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 envelope taco seasoning
1 tablespoon hot pepper sauce
1 tube (16.3 ounces) large refrigerated buttermilk biscuits
Optional toppings: sliced ripe olives and shredded lettuce and cheddar cheese

Steps:

  • In a small bowl, combine the sour cream, dressing mix and lemon juice; chill until serving. , In a large skillet, cook beef over medium heat until no longer pink; drain. Add the beans, tomatoes, taco seasoning and pepper sauce; heat through., Meanwhile, roll out each biscuit into a 6-in. circle. In a small nonstick skillet over medium heat, cook each biscuit for 30-60 seconds on each side or until golden brown; keep warm., To serve, spread each flatbread with 2 tablespoons ranch sour cream; top each with 2/3 cup meat mixture. OK, I MIGHT be a bit over confident in the title... but my family doesn't think so! This takes just a little bit of work and some time to simmer and will (IMHO) make you completely incapable of ever using a taco seasoning packet again. Try not to use dried onion or garlic as it really does make a huge difference in the end product. You may need to play with the amounts of the chile powder and crushed red pepper depending on how hot you like your taco meat. This recipe is reasonably mild, but YMMV Finally, try to get some high quality chile powder made with a blend including ancho and chipotle chiles. Most bulk "chile powder" out there has salt, garlic and "other spices" in it and is not even CLOSE to as good as the "real" thing! I hope you enjoy these as much as my family does!

1 medium yellow onion, diced
2 lbs lean ground beef
5 medium garlic cloves, minced

1 1/4 teaspoons salt
1 teaspoon cumin
1/4 teaspoon oregano

1 -2 cup water

Steps:

  • in a large skillet, cook the diced onion for about 3-4 minutes on medium heat, just until they start to go translucent.
  • Add the ground beef and cook until it is nearly, but not quite, all browned.
  • Add the minced garlic and continue cooking until the ground beef is completely browned through.
  • Add all the remaining ingredients, including enough water to ensure the spices get evenly distributed throughout the mixture, but not so much that it's going to take forever to cook off.
  • Simmer until the tomatoes are cooked through and the mixture is dry enough to put in a taco shell. - How dry that is, is completely up to you and your taste!

Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

2 lbs ground beef
1 teaspoon salt
1 -2 tablespoon chili powder
2 tablespoons paprika
1 teaspoon cumin
1 -2 teaspoon garlic powder
1/2 green bell pepper, diced
1/2 cup onion, diced
12 corn tortillas (Packaged or Homemade)
lettuce (Plus other toppings listed below)

Steps:

  • In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
  • Bring to a boil.
  • Simmer for about an hour.
  • Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
  • Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
  • Full Corn Tortilla Shells just about 1/2 way full or desired amount.
  • Put into a preheated oven (300) for about 10 minutes or until completed heated through.
  • Ready to Serve!

  • When the oven is pre-heated, place the flatbread directly onto the middle rack and bake for about 4 minutes until it stands firm when lifted. Remove the flatbread from the oven and spread a tablespoon of taco sauce across the surface of each flatbread, leaving a bit of space around the edge for the crust. Top the sauce with the taco meat mixture from step one, dividing it evenly between the two flatbreads. Add about half the chopped tomatoes. Sprinkle the cheddar cheese over the top.
  • Return the flatbread to the middle rack of the oven and bake for another 5 minutes until the cheese is melted and the edges are lightly browned. Remove from the oven and top with the desired amount of shredded lettuce. Sprinkle the remaining chopped tomatoes over the top. Slice and serve immediately.
