Yummy oat bars filled with a gooey layer of caramel, chocolate and nuts!

32 individually wrapped caramels, unwrapped
5 tablespoons heavy cream
1 cup all-purpose flour
1 cup rolled oats
¾ cup brown sugar
½ teaspoon baking soda
¼ teaspoon salt
¾ cup butter, melted
½ cup semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over low heat, melt together the caramels and heavy cream, stirring occasionally until smooth.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter until well blended. Press Half of the mixture into the bottom of a 9x13 inch baking pan. Reserve the rest.
  • Bake the crust for 8 minutes in the preheated oven. Remove and sprinkle with chocolate chips and walnuts. Pour the caramel mixture over the top and then crumble the remaining crust mixture over everything.
  • Return to the oven and bake for an additional 12 minutes, or until the top is lightly toasted. Cut into squares while it is still warm.

32 unwrapped caramels
5 tablespoons evaporated milk
1 cup flour
1 cup oatmeal
3/4 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter or 3/4 cup margarine
2 cups chocolate chips

Steps:

  • Press half of oatmeal mixture into a 9 x 13 pan Bake at 350° for 10 to 15 minutes.
  • Remove from oven and sprinkle on enough chocolate chips to cover.
  • Then top with caramel mixture, then remaining oatmeal mixture.
  • Bake another 15-18 minutes.
  • Cool and cut.

1/3 cup milk
2 cups all-purpose flour
2 cups regular rolled oats, uncooked
1 1/2 cups packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, beaten
1 cup butter or 1 cup margarine, melted
1 (12 ounce) package semisweet chocolate morsels
1 cup chopped pecans

Steps:

  • To a saucepan over low heat, add the caramels and milk; cook and stir constantly, until caramels melt; set aside.
  • In a mixing bowl, add flour, oats, brown sugar, soda, and salt; stir to combine.
  • Add the egg and butter; stir until mixture is crumbly.
  • Press half of the oatmeal mixture into a greased 13x9 inch baking dish.
  • Bake at 350° for 10 minutes.
  • Sprinkle chocolate morsels and pecans evenly over the top; pour caramel mixture evenly on top.
  • Sprinkle with remaining oatmeal mixture.
  • Bake for 20-25 minutes.
  • Let cool and cut into bars.
  • Chill 8 hours.

Steps:

  • HEAT oven to 350°F Coat a 9 x 9-inch baking pan with no-stick cooking spray.
  • BEAT shortening, oats, brown sugar, 1/2 cup flour, whole wheat flour, baking soda and cinnamon in large bowl with an electric mixer at low speed until mixture resembles coarse crumbs. Reserve 1/2 cup for topping. Press remaining crumbs into prepared pan.

2 cups quick oat
1 ¾ cups all purpose flour
1 ½ cups brown sugar
1 teaspoon baking soda
¼ teaspoon salt
1 cup melted butter
2 ½ cups semi sweet chocolate chips
50 soft caramel candies, unwrapped
½ cup heavy cream

Steps:

  • Preheat your oven to 350˚F (175˚C).
  • In a large mixing bowl, combine oats, flour, brown sugar, baking soda, salt, and melted butter. Mix until well combined and has a crumbly consistency.
  • Line a 9x13 (22 x 33 cm) baking pan with parchment paper and lightly coat with a nonstick spray.
  • Pour about ½ of the oat mixture into the pan and press with the back of a spoon or spatula until it's nice and compact. Save the other ½ of the oat mixture for later.
  • Pour two cups (350 grams) of chocolate chips over the oat mixture and spread them out evenly. Save the ½ cup (85 grams) for the top.
  • In a saucepan, melt the soft caramels, and the heavy cream until it becomes a smooth.
  • Pour melted caramel over the chocolate chips and oat mixture. Carefully spread the caramel until it covers the chocolate.
  • Pour the rest of the oat mixture over the caramel and spread out evenly.
  • Add the other ½ cup of chocolate chips on top.
  • Bake for 20-25 minutes, or until the crust has turned a golden brown. (Times and temperatures may vary from oven to oven). Allow to cool COMPLETELY before cutting into bars.

These are my brother's favorite. It's a layer of oatmeal cookie, a layer of soft caramel, a layer of walnuts, chocolate chips and then topped with another layer of oatmeal cookie. They are easy and delicious!

3 cups quick-cooking oatmeal
1 1/2 cups all-purpose flour
1 1/3 cups light brown sugar, packed
1/2 teaspoon cinnamon (optional)
1/2 teaspoon baking soda
1 1/3 cups unsalted butter, melted
50 caramels
4 tablespoons unsalted butter
2 tablespoons milk
1 teaspoon vanilla extract
3 cups walnuts, chopped
2 cups semisweet mini chocolate chips

Steps:

  • In a large bowl, stir together oatmeal, flour, brown sugar, Cinnamon (if using), and baking soda.
  • Add melted butter, stir until all combined.
  • Set aside 2 cups packed oatmeal mixture for the topping.
  • Sprinkle the rest of the oatmeal mixture into a parchment-lined 9x13 baking pan.
  • Pat down with a spatula.
  • Bake for 12 minutes in a 350 degree oven.
  • While the bottom oatmeal crust is baking, start the filling. In a heavy saucepan combine caramels,4 tablespoons of butter, vanilla extract, and milk.
  • Cook and stir over medium heat until all the caramels have just melted.
  • When the bottom crust is done, spread caramel sauce evenly on baked oatmeal crust.
  • Sprinkle walnuts, mini-chocolate chips, and the 2 cups of the remaining uncooked oatmeal mixture, in that order.
  • With a flat spatula, carefully pat down the uncooked oatmeal mixture you just sprinkled on-top until you can't or can barely see the chocolate chips and nuts beneath.
  • Now, bake in a 350 degree oven for 25 minutes or until top is golden.
  • Cool in the pan on a wire rack.
  • After cooled completely, carefully grab the parchemnt you lined the pan with, and lift the cookies out the pan.
  • Cut it into bars.
  • Enjoy!

Now that I've got nut allergies to deal with in my household, I make these without the nuts and with extra crumb mixture (1 1/2 times the crumb mix), but the nuts are really good to cut the sweetness. The recipe is originally from a land-o-lakes pamphlet. Part of prep time is cool time.

1 1/2 cups flour
1 cup quick oats
1 cup brown sugar, firmly packed
3/4 cup butter, softened
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1 (14 ounce) package caramels, unwrapped (48 caramels)
2 cups semi-sweet chocolate chips, divided
1 cup chopped pecans, divided

Steps:

  • Preheat oven to 350°F.
  • Combine all crumb ingredients in a large bowl, stopping after adding the salt. Beat at medium speed until mixture is crumbly (about 3 minutes). Reserve 1 cup of crumb mixture.
  • Press remaining crumb mixture into bottom of a 13x9 inch pan. Bake for 10 minutes.
  • Combine milk and caramels in a saucepan. Cook over medium low heat, stirring occasionally, until mixture is creamy.
  • Sprinkle partially baked crust with 1 cup chocolate chips and 1/2 cup chopped pecans.
  • Pour caramel mixture evenly over chips and nuts. Sprinkle evenly with reserved crumb mixture and pat lightly.
  • Bake for 18-22 minutes or until caramel is bubbly around the edges.
  • Cool completely. Melt the remaining cup of chocolate chips and spread over the top. Sprinkle with remaining nuts and pat lightly.
  • When chocolate hardens, cut into bars.
