Steps:
- Preheat oven to 350°F Heat oil in an oven-proof saucepan, saute' onion for about 5 minutes.
- Add garlic, rice, and vermicelli. Saute 2 minutes, stirring constantly.
- Stir in broth, salt and pepper. Bake uncoered at 350 for 30 minutes. Let stand 5 minutes. Stir in fresh parsley and serve.
TURMERIC PILAU WITH GOLDEN ONIONS
This side dish can be part-cooked in the kitchen, then quickly tossed together in a wok over the coals on the barbie

- Thoroughly rinse the rice until the water looks completely clear. Drain, then tip into a large pan of salted water. Bring to the boil and cook for 6 mins until just tender, but check after 5 mins. Drain well, cool and chill.
- Heat the oil in a large wok and fry the spices until they start to pop. Add the onions, then cook, stirring frequently, until the onions are tender and golden. Stir in the turmeric and chilli, and cook for 1-2 mins more. Cool.
- TO BARBECUE: Heat the wok over the coals and, when the onions are sizzling, add the rice and cook, turning until heated through. If the embers are starting to die down a bit, cover the wok with a lid or the wok with a lid or foil to keep in the heat.

Steps:
- Melt butter in a large pan, add onion and garlic, stir and cook for 5 mins until soft and golden colour.
- Add rice and stock, bring to the boil, stir.
- Reduce heat to low simmer uncovered for 5 mins or until almost all of the liquid has been absorbed.
- Add peas, stir until combined.
- Cover pan and cook over very low heat for another 10 mins or until rice is tender.
- Stir in parmesan cheese and parsley and serve immediately.

SPICY QUINOA PILAU
I wanted to make some sort of pialf/pilau type thing with quinoa, read a bunch of different recipes, looked in my cupboard and came up with this. Very aromatic Indian-inspired dish. If you like it less spicy, then leave out the chili. Feel free to play around with the vegetables too, I just used what was in my fridge/freezer. I mostly eyeballed the ingredients, but this is a basic estimation.

- In a large pot, fry the onion in a little oil.
- Add the garlic, cloves, cardamom and chili pepper, and fry a bit more.
- Add the vegetables (if using any frozen vegetables, don't add them in just yet) and continue frying.
- Add the quinoa, water, cinnamon, coriander seeds, and bay leaves.
- Bring to a boil, then lower the heat, cover and simmer for about 12 minutes, or until the quinoa has absorbed the water.
- About halfway through the simmering, stir in any frozen vegetables you want to add.

PILAU WITH PEAS
This spicy rice serves eight so is ideal if you've got friends coming over for curry

Steps:
- Wash the rice, then soak in enough cold water to cover for 15 mins. Meanwhile, heat the oil in a large pan with a lid, add the cumin seeds and cloves, then fry until fragrant. Stir in the onions, then reduce the heat and cook with the lid on for 10 mins, stirring occasionally or until soft. Add the chillies and bay leaves, then increase the heat and fry until the onions are golden.
- Drain the rice, then add it to the onions and spices, stirring to coat the grains with oil. Cover the rice with stock and bring to a simmer. Scatter the frozen peas on top, put the lid on, then cook on a very low heat for 12-15 mins - don't be tempted to remove the lid.
- Turn the heat off and leave, with the lid on, for another 5 mins. Lightly fluff up the rice with a fork before serving.

- Make the pilau masala: In a medium bowl, combine the cumin, paprika, cardamom, black pepper, and cloves. Set aside.
- Heat a large pot over medium-high heat. Add the oil and red onion and sauté for 10-15 minutes, until dark brown.
- Add the garlic, ginger, serrano chile, pilau masala, beef stock cubes, cinnamon stick, and cilantro. Cook for 1-2 minutes, until fragrant.
- Add the beef and cook until browned, about 8 minutes.
- Add the tomatoes and cook for 4-5 minutes, until the tomatoes have released their liquid.
- Add the potatoes and the water. Bring to a boil and cook for 10 minutes.
- Add the rice, stir, and cover. Reduce the heat to medium-low and cook for 20 minutes, until the rice is cooked and the liquid is absorbed.
