MOM'S STUFFED BELL PEPPERS



Mom's Stuffed Bell Peppers image

What I love most about these stuffed peppers is that the meat goes in uncooked, so it forms kind of a solid "meatball" in the pepper. I think these are much better than the stuffed peppers where the meat is cooked first and stays "loose". If someone in your family does not like peppers, make some meatballs from the mixture and drop them in the pot along with the stuffed peppers. Enjoy!

4 -6 green peppers
1 lb ground beef
1 cup cooked white rice
1 teaspoon salt
1/4 teaspoon black pepper
1 egg
2 small onions, chopped
1 tablespoon butter
1 (32 ounce) can crushed tomatoes
1 (10 1/2 ounce) can condensed tomato soup

Steps:

  • Cut the top section of the peppers off and discard.
  • Remove seeds and rinse the inside of peppers.
  • Parboil peppers until slightly tender.
  • Saute onions in butter until tender.
  • Combine ground beef, cooked rice, egg, salt, pepper and half of the sauteed onions.
  • Stuff each pepper with the ground beef mixture.
  • Place stuffed peppers in a stock pot or dutch oven.
  • Combine crushed tomatoes and tomato soup and pour on top of the peppers.
  • Sprinkle the remaining sauteed onions on top of peppers.
  • Bring to a boil and then reduce heat.
  • Stir GENTLY occasionally.
  • Simmer for about 45 minutes or until meat is no longer pink.

An easy recipe for the best Stuffed Peppers, a classic dinner now made healthier and more affordable! Freezer-friendly, versatile, and simple with only a handful of real food ingredients. Enjoy with roasted potatoes and a side salad.

3 large bell peppers
1 cup shredded or diced cooked chicken
1 cup cooked rice
1 cup red pasta sauce, divided
1/4 cup creamy cauliflower sauce
1/2 Tbsp Italian seasoning
1/2 tsp dried sage
1/2 tsp dried thyme
salt & pepper, to taste
3/4 cup shredded Monterey jack or mild cheddar cheese
1/4 cup shredded Parmesan cheese (optional)

Steps:

  • Preheat the oven to 400F and bring a large pot of salted water to a boil.
  • Meanwhile, prepare the peppers by washing well, cutting in half (through the middle, not from the top down) and removing the seeds and white pulp the pepper.
  • Place cleaned peppers in the pot of water, boiling for 5 minutes. Remove and let cool.
  • In a large bowl, combine cooked chicken, cooked rice, creamy cauliflower sauce, seasonings and 1/2 cup red pasta sauce. Taste and season with salt and pepper, adjusting seasonings as desired.
  • When peppers are cool, spoon 1/4 cup of red pasta sauce into the bottom of a 9×13 glass baking dish. Smear around, covering the entire bottom with a thin layer of sauce.
  • Place peppers in the baking dish, cut side up.
  • Fill each pepper evenly with the chicken and rice mixture, pressing the mixture into the peppers well so that they are truly "stuffed." Fill each pepper approximately 3/4 of the way full.
  • Top each pepper with approximately 2 Tbsp of shredded Monterey jack or mild cheddar cheese.
  • Bake in the oven for 15-20 minutes, or until the cheese is melted and the peppers are hot.
  • If desired, place peppers under the broiler for 2-3 minutes to brown and bubble the cheese.
  • Serve hot with the optional Parmesan cheese sprinkled on top and the remaining 1/4 cup red pasta sauce, if desired.

3 cups cooked rice
1 cup cheddar cheese, cubed
2 tablespoons butter
1/2 onion, diced
2 tablespoons flour
2 cups milk

Steps:

  • Remove tops from bell peppers (retain), remove seeds. Boil bell peppers and tops in large pan of salted water for 5 minutes. Remove, drain, cool. Arrange in baking dish.
  • Mix rice with cubed cheese, set aside.
  • Saute onion in butter, stir in flour. Add milk, boil and stir until thick and smooth. Remove from heat and combine with rice mixture. Stuff bell peppers, and cover each with it's stem top.
  • Pour 1/4" water in bottom of pan, then bake at 350 degrees for 25-30 minutes.

Another Slovak favorite, this is one of my Mom's great recipes. Again, uses condensed tomato soup (see my Velveeta Mac and Cheese for another way tomato soup compliments a recipe). So good, it rivals Stouffer's frozen in the store. Compare them for yourself!

5 medium green peppers
1 lb ground beef, uncooked
1 cup cooked rice (Minute Rice works well)
1 (10 ounce) can condensed tomato soup
3/4 cup water
2 eggs
1 teaspoon sugar
2 teaspoons minced garlic
2 teaspoons diced onions
2 teaspoons seasoning salt

Steps:

  • Slice tops horizontally off of 4 large or 5 medium-sized green peppers. Cut out the seeds and membrane from inside each pepper and rinse with water. Arrange in baking dish.
  • Prepare 1 cup of rice per package instructions. When done, allow rice to cool slightly (the cooler the rice, the easier to handle).
  • In mixing bowl, break up raw ground beef. Add garlic, onion, and seasoned salt. Crack 2 eggs into mixture. Add the cooled rice and mix all together using hands in a mixing bowl (as if you were making a meatloaf or burger patties).
  • Once mixture is combined, fill each green pepper to the top (Note: If there is any mixture left over, you can shape into meatballs for a pasta dinner).
  • In a small bowl, empty contents of tomato soup can. Add 3/4 cup of water. Add 1 teaspoon of sugar to cut the acidity of the tomato soup. Stir to combine, then pour over green peppers in baking dish.
  • Place baking dish in oven, uncovered, for 70 to 90 minutes at 350 degrees. Check beef mixture in peppers near the end of cooking time to make sure beef is cooked thoroughly.
  • Remove from oven. Spoon tomato mixture over top of green peppers and serve.

6 large bell peppers
1 1/2 lbs extra lean ground beef
1 tablespoon sugar
1 tablespoon sweet basil
16 ounces tomato sauce
1 yellow onion, chopped
1/2 cup white rice
1 cup water
1 teaspoon butter
2 cups cheddar cheese, shredded

Steps:

  • Cut tops off bell peppers, making a bell pepper "bowl".
  • Remove seeds and membrane, rinsing well under cold water.
  • Par-boil peppers for approximately 5 minutes.
  • Remove peppers from boiling water and place in a 9 x 13 baking dish.
  • Brown ground beef and drain any excess fat.
  • Add chopped onion to ground beef, stirring every few minutes.
  • Meanwhile, make rice by boiling the cup of water and butter, adding rice and simmering until rice is cooked, as you would normally make steamed rice.
  • While rice is cooking, mix tomato sauce, sugar and basil together in a seperate bowl.
  • When rice is done, add to meat and onion mixture.
  • Add half of the sauce and half of the cheddar cheese to meat mixture, stirring all together.
  • Spoon meat mixture into each bell pepper; if you have any left over you can spoon some around the peppers as well.
  • Spoon remaining sauce mixture over each bell pepper and top with remaining cheese.
  • Bake at 350 for approx 20 minutes.
  • NOTE: Although this sounds like a lot of steps to go through, this is one of those recipes where you can be doing more than one thing at a time.
  • I usually start my water to boil for the par-boiling of the peppers at the same time I'm browing the ground beef and chopping my onion, and cleaning the bell peppers.
  • I am also guilty of making more sauce than needed, and adding more cheese than necessary. I really don't think you can screw this up -- it's just a matter of personal taste, so feel free to play with the amounts.

1 cup cooked rice
1/2 cup chopped onion
1/2 cup chopped celery
1 cup diced tomato
1 teaspoon minced garlic

1 (10 ounce) can tomato soup
1/2 teaspoon basil

Steps:

  • Cut tops off peppers, remove seeds.
  • Drop in boiling water for 3 minutes.
  • Drain, rinse in cold water.

  • Spoon into peppers.
  • Put in a greased 13x9-inch pan.
  • Mix soup and basil.
  • Spoon over peppers.

Stuffed bell peppers are a great way to enjoy one of the most flavorful veggies. Stuffed with a savory mixture of beef and buckwheat, these peppers are sure to satisfy.

1 lb thinly sliced beef
3 large bell peppers
1 lb mushrooms (sliced)
1 large onion
2 cup diced carrots
2 cups cooked buckwheat
2 tbsp olive oil
1 tsp pepper (adjust to taste)
1 tbsp salt (adjust to taste)

Steps:

  • Slice the bell pepper into two pieces. Remove the seeds from the pepper. Dice carrots and onions into small squares.
  • Cut beef into small, thin pieces. Preheat oiled skillet on high heat. Cook beef until it gets a golden color. Remove from the skillet and set aside.
  • In the same skillet, sautee carrots and onions until they soften. Add sliced mushrooms and continue cooking until all the ingredients are golden.
  • Add buckwheat and beef to the skillet, season with salt and pepper. Stir to combine everything together.
  • Fill each one of the peppers with the cooked buckwheat filling.
  • Bake for 35 minutes at 370F. Place slice of cheese on each pepper, cook for another 5 minutes or until cheese is melted.
