As a side dish or a meal, greens lovers will enjoy this healthy concoction of meat, turnip greens, tomatoes, and onions. Serving size is for a side dish, so double it for a one-dish meal.

vegetable oil cooking spray
½ pound chopped cooked ham
½ medium yellow onion, chopped
1 (15.5 ounce) can diced tomatoes
1 pound fresh turnip greens, rinsed and chopped
2 tablespoons apple cider vinegar

Steps:

  • Set a large skillet over medium-high heat and coat with cooking spray. Add ham and onion; cook and stir until onion is clear. Add the tomatoes and turnip greens and cover the skillet. I use a 12 inch skillet and I have to pack the greens down a bit to make them fit at first. When the pan starts to steam, reduce the heat to medium-low and cook for about 12 minutes.
  • Transfer the greens and ham to a serving bowl and toss with apple cider vinegar.

This is an easy way to get the Glazed Ham Taste without cooking the whole Ham. The longer you let them marinate the more they taste like curred pork chops that are so expensive. This is simple and can be made on the grill or cooked inside in a frying pan. It is also great for tailgating @ South Carolina football games.

12 -16 ounces crushed unsweetened pineapple
1 cup orange juice (with or without pulp your choice)
3/4-1 cup dark brown sugar
4 center cut ham steaks
butter or margarine

Steps:

  • Mix pineapple, orange juice, and brown sugar in a large Zip-Lock bag.
  • Place ham Steaks and marinate for at least 2 hrs., (I have let them sit overnight and it is better.) This is not included in prep. time.
  • Cook on the grill over indirect heat until sugar caramelizes or melt butter inside of frying pan over medium heat. I usually use the frying pan cover for the first half of the cooking time.

1 large lemon, juice of
1/4 cup extra virgin olive oil
salt
fresh cracked black pepper
10 ounces top sirloin steaks or 10 ounces flank steaks
4 cups mixed greens, rinsed and drained
4 radishes, thinly sliced
2 small zucchini, grilled
3 green onions, thinly sliced (seasonal onion such as Walla Walla or Vidalia) or 1/2 cup sliced onion (seasonal onion such as Walla Walla or Vidalia)
6 -8 cherry tomatoes, cut in half
1/2 cup fresh basil, sliced into ribbons
1 cucumber, thinly sliced

Steps:

  • Prepare dressing. Set aside.
  • Preheat grill (or range) and cook zucchini on each side 2 to 3 minutes. Transfer to salad bowl. Grill meat until medium rare or cooked to desired doneness. Set meat aside.
  • Place mixed greens and other vegetables inlcuding the zucchini in salad bowl and add a little bit of the dressing and toss gently. Arrange the mixture on two salad plates.
  • Slice steak on grain. Serve the steak over the prepared salad.
  • Serve remaining salad dressing on side.

1 cup apple jelly
2/3 cup prepared yellow mustard
1/4 teaspoon pepper

Steps:

  • Trim the fat around the edges of the ham steaks.
  • Melt the apple jelly in a large skillet over medium heat for about 1-2 minutes.
  • Add mustard and pepper; mix in well.
  • Place ham steaks into skillet and spoon sauce over them to cover.
  • Cook, uncovered, about 5 minutes per side, basting often.
  • Turn out ham to a serving platter.
  • Cut into serving size pieces as desired.
