CRUNCHY ORANGE FRENCH TOAST

1 orange
4 large eggs, lightly beaten
1 1/2 cups milk
1 teaspoon ground cinnamon
4 cups cornflakes, crumbled
3 slices bacon, cooked and crumbled
1 loaf challah, cut into 1-inch-thick slices
6 tablespoons unsalted butter
1 cup warm maple syrup
Ground cinnamon, for serving

Steps:

  • Preheat the oven to 200 degrees F. Fit a baking sheet with a wire rack. Heat a griddle pan or nonstick skillet over medium heat.
  • Zest the orange and set aside. Working over a medium bowl, segment the orange; squeeze the juice from the remaining orange membranes.
  • Whisk the eggs, orange zest, milk, cinnamon and orange juice in a baking dish or shallow bowl. Add the cornflakes and bacon to another baking dish and toss together. Dip the bread slices in the egg mixture and let them soak for 1 minute.
  • While the bread is soaking, melt 2 tablespoons of the butter on the griddle pan or skillet.
  • Working with one slice of bread at a time, let the excess egg mixture drip off and then dredge the bread in the cornflake mixture. Add the bread to the griddle, carefully placing as many slices of bread as can comfortably fit without touching too much (it's OK if the edges need to touch a little). You can dredge the bread, transfer it to an unlined baking sheet and hold for 5 minutes while one batch is cooking.
  • Cook on one side, rotating occasionally, until the bottom is golden brown and crisp, about 3 minutes. Flip and cook the other side until it is equally browned, another 2 minutes. Transfer the slices to the prepared baking sheet and keep warm in the oven while you complete the next batches. Repeat the cooking process, melting 2 tablespoons of butter for each batch.
  • When all of the French toast is cooked and you are ready to serve, gently stir together the maple syrup and orange segments, making sure not to break up the segments. Spoon the syrup over the French toast and sprinkle with cinnamon. Serve immediately.

2 loaves par-baked sourdough baguettes
4 eggs, beaten
Melted butter, for brushing griddle, optional
Orange Bourbon Butter, recipe follows
Spiced Pecans, recipe follows
8 tablespoons (1 stick) unsalted sweet butter, softened
1 tablespoon bourbon (recommended: Jack Daniels)
2 tablespoons orange zest
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground fennel seed
1/2 teaspoon ground star anise
1/2 teaspoon finely ground black pepper
1/2 cup pecan pieces
1 egg white, beaten until foamy

Steps:

  • Preheat a large nonstick griddle or large skillet over high heat.
  • Slice the bread on a diagonal into 1-inch slices. Thoroughly coat the bread with the beaten eggs, but do not soak the bread in the egg mixture-it will fall apart. Lightly brush the griddle with melted butter, if desired. Place the coated bread slices on the griddle. Cook over high heat until golden brown and cooked through, about 5 minutes per side. Remove from the pan to warm plates. Top each serving with 1 tablespoon Orange Bourbon Butter and sprinkle with 2 tablespoons Spiced Pecans. Serve immediately.
  • Cream butter in a mixer. Add the bourbon and orange zest and mix well. Leave at room temperature and serve with the French toast. Refrigerate any leftovers.
  • Yield: 8 servings
  • Preheat oven to 350 degrees F.
  • In a small bowl, mix the sugar and spices and set aside. In a medium bowl, mix the pecan pieces with the egg white until well coated. Add the sugar and spice blend to the pecans and toss together until well coated. Turn the nut mixture out onto a nonstick cookie sheet and bake until nuts are golden brown, about 20 to 30 minutes. Remove from the oven, let cool and then chop into small pieces.

4 large eggs
1 tablespoon light brown sugar
1 teaspoon lightly packed orange zest
1/2 teaspoon vanilla extract
1/2 teaspoon ground cardamom
1/2 teaspoon kosher salt
8 (1-inch thick) slices sweet batard or brioche
3 or 4 tablespoons unsalted butter (1/2 stick)
Honeyed Strawberries, recipe follows
1 tablespoon honey
1/2 vanilla bean, split lengthwise and seeds removed
1/4 cup freshly squeezed orange juice
1 pound strawberries, hulled, and halved lengthwise

Steps:

  • In a large bowl, whisk together milk, eggs, sugar, orange zest, vanilla, cardamom, and salt until eggs are broken up and evenly combined. Soak 3 bread slices in egg mixture turning once, until soaked through, about 4 minutes total.
  • Meanwhile, melt 1 tablespoon of butter in a large frying pan over medium heat. When butter foams, place 3 pieces soaked bread in the pan and cook until browned, about 2 minutes per side. Repeat with remaining bread. Serve topped with Honeyed Strawberries.
  • Mix honey, vanilla, and orange juice together in a medium bowl until honey is dissolved. Add strawberries, stir to coat, and let sit until berries give off their juices, at least 5 minutes. Stir briefly before using.

Here's a recipe for the kind of French toast people line up for outside restaurants on Sunday morning. It's simple: no new ingredients, tools or technology needed. You don't even need stale bread. What you do need is thick-cut white bread, dunked into an egg-milk mixture with extra richness from egg yolks and heavy cream. That gives the French toast a buttery taste and firm but fluffy texture. (Oversoaking is the enemy here; the mixture should fill the bread, not cause it to break.) For an appetizing, lacy brown crust, sprinkle on sugar toward the end of cooking: It will caramelize and turn glossy. Just make sure to keep the heat low after you add the sugar. Otherwise, it could burn quickly over high heat.

2 whole eggs
2 egg yolks
2 cups whole milk, or 1 3/4 cups milk, plus 2 to 4 tablespoons cream
1 teaspoon vanilla extract (optional)
Pinch of salt
Unsalted butter, for cooking
8 slices white bread, such as Pullman, brioche or challah, sliced 1/2- to 3/4-inch thick
Cinnamon sugar or granulated sugar (see note)

Steps:

  • Heat oven to 200 degrees, and place a wire rack on a sheet pan inside.
  • In a shallow bowl, whisk the eggs, additional yolks, milk, vanilla (if using) and salt until foamy and smooth. Set aside. Place a small lump of butter (enough to coat the bottom of the skillet when melted) in a large, heavy nonstick skillet over low heat. It will melt very slowly.
  • When butter is just melted and bubbling, raise heat and bring to a sizzle. Place 2 slices of bread in the bowl with the egg mixture. Turn them a few times in the mixture until evenly saturated, about 5 seconds on each side. Do not soak.
  • Lift a slice out of the egg mixture, gently shake off any excess, and place in the pan. Repeat until the skillet is full, and let the slices cook at a sizzle for about 2 minutes, until just turning golden brown on the bottom.
  • Add another small lump of butter to the pan and flip the slices over, swirling the pan so that the fresh butter coats the bottom. (This will allow the second side to brown.)
  • Continue cooking over low heat until the second side is golden brown. Dust with cinnamon sugar, flip again, and dust the other side. Test for doneness by pressing the center: The dent should slowly spring back. If it remains, the interior is not yet cooked. Continue cooking at low heat, flipping occasionally, until done. Serve immediately, or transfer to the oven to keep warm while cooking remaining bread. Serve as soon as possible. Top with maple syrup, berries, jam, sliced bananas, orange supremes - whatever you'd like.

I've seen other baked French Toast and other Orange French Toast recipes on the 'zaar, but I haven't seen any quite like this one. I got it from my sister. It is great to feed a larger group and can be made the night before. The orange and honey flavors meld very well in this nice French Toast. Even better, it doesn't need butter or syrup at the table.

3 tablespoons honey
4 tablespoons butter (or margarine, try for at least 70% oil)
1/2 teaspoon cinnamon
3 eggs
1/2 cup orange juice
6 slices bread

Steps:

  • MAKE HONEY SAUCE:.
  • 1. Microwave: Measure honey into a small microwavable cup or bowl. Add cinnamon (you don't need to stir it in yet) and cut butter into chunks on top. Microwave honey and butter for about 60 seconds on medium (60-70% power). Stir until butter is completely melted.
  • 2. Stovetop: Melt the butter in a small saucepan over low to medium heat, then mix in honey and cinnamon, stirring until smooth. Remove from heat.
  • PREPARE THE PAN:.
  • 3. Lightly grease the sides of a 9x13 pan or baking dish. You may omit this step but it will help the slices come out neatly when serving.
  • 4. Pour honey sauce into the 9x13 pan and tilt the pan around until sauce evenly covers bottom.
  • PREPARE THE BREAD:.
  • 5. Break eggs into a shallow dish (a pie pan works perfectly) and lightly beat with a fork to break the yolks. Add orange juice and beat thoroughly with a fork.
  • 6. Dip each slice of bread into the egg mixture, covering both sides. Allow any excess egg to run back into the dish. Place bread on sauce in pan, allowing slices to touch on all sides but not overlap one another.
  • 7. Bake at 400 F for 15-20 minutes or until nicely golden.
  • 8. "Cut" along the edges of the pan and between each slice of bread with a turner, then turn each slice out of the pan and onto a plate with the honey side on top. The honey sauce will have baked into the bread, but if there is any left in the pan spoon it on the top (it will be very thick).
  • NOTES: You can also prepare up through step 6 the night before. Cover and refrigerate the dish, then bake in the morning. Be sure to use a metal pan and not glass or ceramic if you do this.
  • It isn't as pretty, but I often use leftover hamburger or hotdog buns for this recipe. I prefer the "crust" side down in the honey, but my sweetie prefers the "cut" side down so that there is more texture.

6 eggs

1/2 cup sugar
2 tablespoons (1/4 stick) unsalted butter
2 teaspoons fresh lemon juice
1 teaspoon grated orange peel

Steps:

  • Generously butter large roasting pan. Arrange bread in single layer in prepared pan, fitting closely together. Beat half and half, eggs, cinnamon and nutmeg to blend in medium bowl. Pour egg mixture over bread. Cover pan and refrigerate until bread absorbs mixture, turning once, about 3 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat oven to 400°F. Uncover pan and bake French toast until tester inserted into center of bread comes out clean, about 30 minutes.
  • Meanwhile, stir orange juice and cornstarch in small saucepan until smooth. Add sugar and stir over medium heat until thick, about 8 minutes. Add butter, lemon juice and orange peel and stir until butter melts.
  • Recut French toast into 8 separate slices. Serve with warm orange syrup.
