QUICK AND EASY BAKED FISH FILLET
We love boating here in the Hamptons in NY. Fluke (summer flounder) fishing is one of our favorite past times. The water is so clean you can actually watch the fish going to the hook. With fresh fish, we enjoy very basic, tasty recipes. This is a keeper!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place flounder in a baking dish; season with salt and pepper. Mix lemon juice, butter, and onion together in a bowl; pour over flounder.
- Bake in the preheated oven until fish is opaque and flakes easily with a fork, 25 to 30 minutes.

FABULOUS FLOUNDER!
Steps:
- Preheat your oven to 400 degrees F. In the meantime, rinse and pat dry your flounder. Also, spray a shallow baking dish (a cookie tray would work) with cooking spray. Drain your crabmeat, and combine it with your onion, Worcestershire sauce, mustard powder, salt, pepper, and seasoning to taste. In another dish, combine 2 Tbsp. of Kraft Mayo with your egg white. Whisk until thickened, and then stir into crab mixture. Then add your crushed crackers and mix. Set aside.
- Brush your flounder with melted butter on both sides. Place your flounder on the sprayed tray and top with the crab mixture. Add any leftover melted butter to the top. Bake for 12-15 minutes. While the topped flounder is in the oven, whisk your egg yolk then add the remaining Kraft Mayo. To this mixture, add your garlic, as well as your favorite seafood seasoning. Season the sauce to taste, and squeeze the lemon juice into the mixture.
- After your 12-15 minutes has passed, pull the topped flounder out and raise the oven temp to 450°F. Then apply the sauce over each topped filet. Cook for about 4 min, or until the sauce has a slight color to it. Remove and sprinkle with paprika and parsley. Yum!

FLOUNDER FRANCAISE
Steps:
- Combine all ingredients and mix well.
- In saucepan combine all ingredients. Bring to a boil and reduce by 1/2.
- Preheat Oven: 350 degrees. Dip fillets in batter and cook in a nonstick pan with a small amount of cooking spray. Cook on both sides until fillets are golden brown. Place fillets on oven pan and bake for 5 to 6 minutes. Saute shrimp with a small amount of butter, lemon juice and white wine. Place on top of fillets and serve topped with sweet lemon sauce.
FABULOUS FLOUNDER
This is a simple yet fabulous recipe for a quick dinner with lots of flavor. You can substitute any mild white fish for the flounder. Served with a green vegetable and rice, it makes a lovely dinner.

- In a bowl combine honey, sesame oil, and soy sauce. Stir well to combine.
- Lay out flounder fillets, in single layer, on greased baking dish.
- Season with pepper.
- Pour honey mixture over top of fillets.
- Bake, in preheated 400°F oven, for 12 minutes.
- Garnish with sesame seeds and diced green onions.

- In boiling water, blanch the asparagus for 1 minute and the green beans and peas for 2 min. Run under cool water and drain well.
- Have 4 sheets of foil ready, each 22 by 12 inches. Lay 1 sheet in front of you lengthwise, on a flat work surface. Center a flounder fillet on the bottom half of the foil (turning up the edges slightly so the vegetables will not roll off). Arrange 1/4 of the asparagus, green beans, peas and cucumber balls around the fish. Dot the fish and vegetables with 1 Tbsp. butter and sprinkle with 1 tsp. dill. Season with salt and pepper. Fold the top half of the foil over the fish and vegetables; crimp the edges together carefully to create a packet. Repeat with the other 3 fillets.
