3 large white onions, peeled and quartered
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/4 cup balsamic vinegar
1/2 teaspoon sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the onion quarters with the olive oil, balsamic vinegar, sugar, and season with salt and pepper. Place in an ovenproof, large, nonstick skillet, spreading them out in an even layer. Cover the skillet with aluminum foil. Roast for 20 to 25 minutes, and then remove the foil. Toss the onions well to coat with the reduced balsamic glaze and put back in the oven to roast another 20 to 25 minutes. Serve warm.

1 ½ tbsp olive oil
1 ½ tbsp balsamic vinegar
2 tbsp maple syrup

Steps:

  • Heat oven to 180C/160C fan/gas 4. Cut about 1cm off the top and bottom of each onion and peel off the skin. Nestle the onions in a small roasting tin or casserole dish, so that they fit snugly together in a single layer. Drizzle over the oil and balsamic vinegar, season, then get your hands in and toss the onions to coat. Cover the tin with foil and roast for 40 mins until tender.
  • Remove the foil and drizzle over the maple syrup, then return to the oven, uncovered, for 20-30 mins, until the onions are caramelised.

1 Tablespoons Olive Oil
6 Small or 4 Medium Sweet Onions
1/3 Cup Balsamic Vinegar
2 Tablespoons Dry White Wine
1 Tablespoon Sugar
Salt & Pepper
2 Tablespoons Chopped Fresh Green Herb Such As Parsley, Thyme, Or Oregano

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel the onions and slice crossways in half.
  • Put olive oil along with the butter into an ovenproof casserole large enough to hold all of the onion halves.
  • Whisk in the vinegar, wine, salt, sugar, and pepper.
  • Place the onion slices side by side in the dish, cut side down.
  • Cover loosely with foil, and bake for 20 minutes.
  • Turn onions over, and brush with juices in the pan.
  • Uncover, and bake another 20 to 25 minutes or until onions are tender and browned.
  • Remove from oven and serve warm or at room temperature, topped with fresh chopped herb of choice.

2 lbs carrots, peeled and cut into 1 1/4-inch pieces
1 medium red onion, peeled and cut into one-inch wedges through the root end
3 tablespoons balsamic vinegar
2 tablespoons unsalted butter, melted or 2 tablespoons olive oil
table salt & fresh ground pepper

Steps:

  • Heat oven to 375 degrees. If using the garlic, put whole, unpeeled head in a small saucepan with water to cover. Bring water to boil, then simmer to soften cloves and loosen skins, about 10 minutes. Drain and refresh garlic head under cold water. Separate cloves and peel.
  • Put vegetables (excluding garlic) into a roasting pan large enough to hold them without crowding. Toss vegetables with butter and/or oil, balsamic vinegar and sprinkle with salt. Roast, stirring or shaking vegetables every 15 minutes for 30 minutes. Add garlic (if using) Raise heat to 425 degrees and continue roasting until tender and evenly browned, 15 to 20 minutes. 1 cup red wine vinegar

1 tsp fresh rosemary (chopped)

Steps:

  • Blend marinade ingredients in small bowl and pour into a baking dish that will hold all 8 onion halves. I use 8x8" baking pan or round 12" baking stone (pictured) depending on size of onion.
  • Trim the end of onions and cut horizontal (leaving skin on) and place cut side down in marinade. Marinate overnight covered in refrigerator.
  • Preheat oven to 400°F. Flip the onions over in the marinade, and lay on the flat bottom of each side. Top each onion with 1/2 tablespoon of butter and remaining teaspoon of rosemary.
  • Roast uncovered in oven for 1 hour or until golden brown, basting once or twice during roasting. Remove from heat, spoon reduced sauce over and sprinkle with parsley or more fresh chopped rosemary. Remove outer skins before eating and serve.

I've made it a few times and substituted 1 package frozen pearl onions, thawed, for the red onions, and added medium sized button mushrooms half way through the cooking time. I was never sure just how much a 'half bunch' of fresh thyme was, (and rarely have it on hand) so I used a little less than a tblsp of dried thyme. I also doubled the sauce recipe, due to the size of the onion pkg, and addition of the mushrooms. Delicious.

  • Gather the ingredients. Preheat the oven to 400 F.
  • Trim and peel the onions, removing and discarding their stem and root ends along with their papery peels. Bigger than bite-size is fine, but you don't want diners wrestling with giant whole onions that are tricky to cut.

  • ON THE DAY Preheat the oven to 200°C/400°F/gas 6. Peel the onions, cut into 1cm-thick rounds and place in a large roasting tray. 6 sprigs fresh rosemary
6 tablespoons olive oil

  • Prepare steak: Marinate the steak overnight in the refrigerator with the garlic, rosemary, olive oil and soy sauce.

  • In heavy saute pan, heat olive oil over medium heat.
  • Arrange onion disks in pan in a single layer so they all touch the bottom.
  • Cook for 6 to 8 minutes without turning, until brown on one side.
  • Add sugar, salt and pepper.
  • Turn the onion disks over without separating them.
  • Cook on the other side for 6 to 8 minutes.
  • When brown, add half the vinegar and reduce until nearly evaporated.
  • Stir the onions, separating them into rings.
  • Add remaining vinegar to the pan and cook until almost evaporated.
  • Remove onions from pan and allow to cool.
  • Season the steaks with salt and pepper, and grill on both sides to desired doneness (about 8 minutes total for medium rare).
  • Slice steak and arrange on plate, garnished with the onions.
