- Preheat oven to 400 degrees. Line a rimmed baking sheet with foil; top with parchment. Poke holes all over kielbasa. Transfer to sheet, pulling sides of foil up to create a well. Add 1/2 cup water.
- Roast until skin is crackling and beginning to brown, about 20 minutes. Flip; continue to roast until dark golden brown, about 20 minutes more.
- Slice and serve, with horseradish and mustard.

- Preheat oven to 350 degrees. Bring a large pot filled three-quarters full with water to a boil over high heat. Reduce heat to a simmer and add kielbasa; cook 15 minutes.
- Transfer kielbasa to 2 baking sheets. Pour 1/2 cup of the cooking liquid over each ring of kielbasa. Using a fork, poke holes all over the top. Roast until the skin is crackling and just beginning to brown, about 20 minutes.

- Preheat the oven to 400ºF. In a small bowl whisk together the olive oil, red wine vinegar, mustard, crushed garlic, salt, and freshly cracked pepper for the vinaigrette. Set the vinaigrette aside.
- Slice the kielbasa into 1/4-inch thick rounds. Wash the potatoes well and slice them into 1/4-inch rounds as well. Place the kielbasa and potatoes on a large baking sheet and drizzle with 1 Tbsp olive oil. Toss the kielbasa and potatoes in the oil until they are well coated and the surface of the baking sheet is also covered in oil. Sprinkle a pinch of salt and pepper over top.
- Remove any dirty or damaged leaves from the cabbage. Cut the stem off the cabbage, then cut it in half. Reserve one half for a different recipe. Slice the remaining half into 1-inch wide slices. Cut each slice into two pieces. Place the cabbage pieces on the baking sheet with the kielbasa and potatoes, nestling them down so that they are laying flat on the baking sheet.
- Brush the remaining 1 Tbsp olive oil over the surface of the cabbage pieces and add a final pinch of salt and pepper to each.
- Roast the kielbasa, potatoes, and cabbage in the preheated oven for 20 minutes. Remove the baking sheet from the oven and carefully flip the kielbasa, potatoes, and cabbage pieces. The cabbage may fall apart a bit as it's flipped, which is okay. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the cabbage is tender and the edges are slightly brown and crispy. The kielbasa and potato slices should be well browned.
- Remove the baking sheet from the oven and top with fresh chopped parsley and a drizzle of the mustard vinaigrette. Serve warm.

BROWN SUGAR GLAZED KIELBASA (ONLY 3 INGREDIENTS!)

- In a nonstick skillet, add sausage and brown over medium high heat for about 4-5 minutes. Pour coca-cola and brown sugar into the skillet. Bring to a boil then reduce heat to medium low.
- Stir and simmer anywhere from 10 to 40 minutes. (All stoves are different. On my stove, it takes about 30 minutes for these to caramelize. I've made these at friends' houses and it has taken 10 minutes. You have to eye ball it. You know your stove better than I do. What you're looking for is a thick, caramelized consistency so keep stirring until it becomes a thick glaze.)
- Once the cola and brown sugar mixture become a glaze over the sliced sausages, remove the skillet from the heat. Transfer sausages to a plate and let cool for 10 minutes before serving. The sausages will be VERY HOT, please be careful. Enjoy!

SHEET PAN KIELBASA CABBAGE AND POTATOES

- Preheat the oven to 400℉. Line a large baking sheet with parchment paper or a silicone baking mat.
- Place potatoes, onion, garlic, and cabbage on the baking sheet, being careful not to separate the leaves of each cabbage wedges. Drizzle with oil. Gently toss the potatoes, onions, and garlic with oil and carefully rub the oil over the surface of the cabbage wedges.
- Turn potatoes cut-side down. Arrange kielbasa over potatoes and onions. Sprinkle all with salt and pepper and nestle thyme sprigs into the veggies. If using dried thyme, sprinkle over the veggies along with the salt and pepper.
- Place pan in preheated oven and bake 45-55 minutes, rotating pan halfway through the baking time, or until potatoes are tender and golden brown on their undersides.
- Remove from the oven, serve with mustard if desired.
