"MOCK" GARLIC MASHED POTATOES



Puree cauliflower instead of actual potatoes for a "Mock" Garlic Mashed Potatoes recipe from Food Network to get the same creamy comfort without the carbs.

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Steps:

  • Set a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
  • In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
  • Garnish with chives, and serve hot with pats of butter.

1 pinch garlic powder, or to taste
salt to taste
¼ cup butter
2 tablespoons olive oil, or as needed

Steps:

  • Place potatoes into a large pot and cover with salted water. Season water with garlic powder and bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer potatoes to a large skillet over medium-high heat.
  • Mash potatoes in the hot skillet and add butter and garlic powder. Form mashed potatoes into a large patty and coat the edges with olive oil, allowing oil to pour under the patty. Cook until bottom is golden brown, 5 to 10 minutes. Break patty using a wooden spoon and fold crisp bottom through the potatoes. Repeat cooking the bottom and folding into the mashed potatoes.

1/4 cup cream
1/4 cup sour cream
2 tablespoons butter
2 garlic cloves (optional)
salt and pepper

Steps:

  • Steam the cauliflower until tender.
  • I prefer to do this in the microwave. Drain well.
  • Place the steamed cauliflower in the food processor or mixer.
  • Do not put it in a blender, it doesn't give it the right consistency.
  • Pulse slowly adding only a little of the cream, butter and sour cream at a time.
  • Watch out that it doesn't get too runny.
  • Add the garlic and salt and pepper.
  • Keep mixing until smooth.

Ok, on Low Carb diets we use cauliflower as a substitute for potatoes. This particular recipe is a re-write of my Garlic mashed potato recipe. I just removed the exact same amount of potato and replaced it with the same exact amount of frozen cauliflower. Not only did I find THIS recipe much easier than using real potatoes, it tastes 10 times better and is LOADED with Vitamins! I'm forever giving this recipe out. I WILL be posting a recipe for "Low Carb, Low Fat Shepherd's Pie" soon, and I always use THIS recipe for the "Mash" potatoes you cover the Shepherd's pie with. I ask that you all please make THIS recipe for mashed potato when making my Low-carb recipe for Shepard's Pie for maximum benefits. This makes 12 SMALL servings or 6 larger ones (or 1 gluttony) Thank you!

2 lbs frozen cauliflower (2 one pound bags, you can even mix it up a bit for fun and get 1 bag just cauliflower and the other )
1 head garlic
1 tablespoon olive oil
1 (14 ounce) box of classic Philadelphia Cream Cheese (you can use 1/2 as much if you want to cut back on fat, but it will impact the recipe)
1/4 cup sour cream
4 tablespoons butter
milk or cream, if needed
salt
white pepper
chives (fresh or dried)
onion powder
garlic powder (totally optional, this is for garlic-holics)

Steps:

  • Steam the frozen cauliflower (all 2 pounds of it) until it's ready.
  • Separate head of garlic into individual cloves.
  • Toss in olive oil and wrap tightly in small piece of aluminum foil.
  • Bake in 350°F (180°C) oven for 45 minutes.
  • When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
  • Mash the roasted garlic with a fork.
  • .
  • Place the cooked cauliflower into a food processor/Cuisinart along with the garlic, sour cream, cream cheese, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth and all the spices are blended.
  • OPTIONAL: Add cream or milk to adjust consistency. Note: If you are going to be using this as a topping for the Shepherd's Pie, you will want to keep it thick. If it's a side dish and you want it a bit thinner - go for it.

They're the easiest to mash without becoming pasty and are even tastier steamed instead of boiled. Boiling potatoes can leave them waterlogged, diluting their earthy subtle sweetness, but steaming them preserves their inherent flavor. As the potatoes soften, they absorb just the right amount of moisture. Seasoning the dish only at the very end heightens their intrinsic subtle sweetness. If you have a ricer, use it for an exceptionally smooth texture: Press the steamed potatoes through the ricer back into the pot, then gently fold in the butter and milk with a wooden spoon or flexible spatula.

1 cup whole milk, plus more as needed
1/2 cup cold salted butter, cut into pats

1/4 cup heavy cream, plus more as needed (optional)

Steps:

  • Prepare a steamer: Arrange an insert or basket (or a large colander, if you have neither) in a large pot, and add enough water to come just below the base of the steamer. Bring water to a boil over medium-high heat.
  • Rinse potatoes well, then peel. Rinse again, then cut into 1-inch chunks. Spread evenly in the steamer, cover, reduce heat to medium and steam until the potatoes are very tender, 20 to 25 minutes. A fork should slide easily into a piece and break it without effort. Turn off the stove, carefully remove the steamer insert and drain the water from the pot. Pour the potatoes back into the pot and spread evenly.
  • Let the potatoes stand until their surfaces are dry, about 3 minutes. Meanwhile, heat the milk in a small saucepan over medium-high until steaming, then keep warm over low. Set the potatoes over low heat and mash thoroughly with a dinner fork. Add about one-quarter of the milk and mash until the milk is incorporated.
  • Scatter the butter evenly over the potatoes and mash in until all traces of butter disappear. Add half of the remaining milk and mash to incorporate, then add the rest of the milk and gently whip until smooth, circling the fork as if beating eggs. If you don't want your mashed potatoes so thick, beat in more milk. Sprinkle with salt and pepper, taste, and season more if you'd like.
  • Serve immediately, keep warm over low heat for up to 1 hour, or transfer to airtight containers and refrigerate for up to 2 days. Mashed potatoes thicken as they cool, so they need cream to regain the right consistency. If kept warm, gently mash in heavy cream until smooth and loose again, adding more if you'd like. If cold, heat the cream in a large pot until steaming, then add the potatoes. Gently mash and whip, adding more cream as needed, until heated through and fluffy. Season to taste again before serving.

1 head cauliflower, chopped into pieces
1 cup fat-free half-and-half
2 tablespoons I Can't Believe It's Not Butter® Spread
salt & freshly ground black pepper, to taste

Steps:

  • Clean the leaves off the cauliflower, and cut off the end of the stem.
  • Place on a glass plate, and add as much water into the dish as you can without spilling. Place a paper towel over the cauliflower, and put in microwave.
  • Cook on high for 10-12 minutes.
  • Take out, and cut into pieces small enough to fit in your blender.
  • Put enough cauliflower to fill blender about 1/2 way with cauliflower, add about 1/2 the half and half.
  • Turn on blender using the liquify button. Stop when it no longer seems to be mixing, and stir with a spoon. Puree until all is.
  • liquified. It will look like mashed potatoes.
  • Empty this into a dish, and add more cauliflower and half and half to the blender.
  • Repeat procedure.
  • When all done put potatoes in a glass dish and put in microwave, and heat until bubbling, about 3 minutes.
  • Serve with butter on the top, and sprinkle with salt and pepper. I used Nu-Salt.
