CHICKEN PASTA WITH SOUR CREAM AND CHEESE SAUCE (ZWT3 WESTERN)
I found this in Bernard Clayton's Cooking Across America. I've had this cookbook for years and it's the first thing I've made from it! The original name of the dish is "Pasta Prima Peschke", named for a chef on a ranch in Wyoming who made it up, but that's not very descriptive, so I changed it. I also changed some of the amounts - I only used half of the butter and bacon and chicken called for in the original and it was plenty.

Steps:
- Poach the chicken in white wine, uncovered, seasoned with a dash of white pepper, about 10 minutes. Cut into small pieces and set aside.
- Fry bacon bits till crisp. Remove from skillet and drain on a peper towel. Set aside.
- Over medium heat saute the mushrooms and garlic in butter for about 5 minutes.
- Combine chicken, bacon and mushroom garlic mixture and keep warm.
- Prepare and drain fettucine, tossing with a light coating of olive oil if desired.
- Sauce:.
- Combine all sauce ingredients except parsley in a saucepan. Over low heat, mix till cheese is melted and sauce becomes smooth.
- Pour the sauce over the noodles and mix together well.
- Top with chicken, bacon and mushroom mixture.
- Garnish with chopped parsley.

MEXICAN FIRE RICE

- Preheat oven to 350 degrees F.
- Bring water to boil in a medium saucepan. Stir in the rice, reduce heat, cover, and simmer for approximately 20 minutes.
- In a large skillet over medium heat brown sausage until no longer pink.
- In a medium mixing bowl add cooked rice, cooked sausage, picante sauce, and sour cream. Mix well, place in casserole dish, and top with cheddar cheese.
- Bake approximately 20 minutes or until cheese is bubbly. Serve with sides of extra picante sauce and sour cream.

LEMON PASTA WITH SOUR CREAM
My kids will only eat this lemon pasta. Rich, lemony and creamy.....uuuummm, try to cook this with fresh linguine pasta, its heavenly!

Steps:
- Boil water and cook pasta according to package instruction.
- If using fresh pasta, it wont take 3 minutes. Set aside.
- Melt butter in a large pan.
- Saute onions till fragrant.
- Add in the minced garlic.
- When light brown, add the sour cream.
- Lower heat, add 2 T. Parmesan cheese, milk, lemon pepper, juice and zest of lemon and salt if desired.
- Simmer for 1-2 minutes only.
- Remove from heat.
- Pour over cooked pasta.
- Toss gently, add parsley and remaining 2 T Parmesan cheese. Serve with Garlic bread.
PASTA WITH CHICKEN AND PEPPER CHEESE SAUCE
This creamy, spicy sauce is a nice change from the traditional, tomato based pasta sauces. Just add a nice salad, some bread, and you've got a great meal that's good enough for company and can be on the table in almost the time it takes to boil the water and cook the pasta.

Steps:
- Over medium heat saute the chicken breasts in the oil until all the pink is gone.
- Remove the meat from the skillet.
- In the same skillet, add onion, red and jalapeno pepper and garlic.
- Cook until just tender.
- Stir in the flour and cook for 1 minute.
- Add broth, milk and Worcestershire sauce.
- Cook and stir until bubbly.
- Stir in cheese and sour cream; then add the chicken to the sauce.
- Reheat-- BUT DO NOT LET BOIL.
- Serve over cooked spaghetti.

Found this recipe few years ago in a BH cookbook. The variety of peppers add a nice kick and the creamy monterey cheese sauce provide the perfect balance.

Steps:
- Cook pasta to package directions. Drain and keep warm.
- Cut chicken into 1 inch pieces. In small mixing bowl combine 1 tablespoons flour, salt, and red, white and black pepper. Toss flour mixture with chicken to coat. Set aside.
- In large skillet over medium-high heat heat oil (add more oil as necessary during cooking.) Add red bell pepper, onion, jalapeno and garlic; cook and stir until tender. Remove veggies with slotted spoon to seperate bowl; set aside.
- Add chicken to skillet. Cook and stir about 5 minutes until chicken is tender and no longer pink. Remove chicken to bowl with veggies.
- Stir 2 tablespoons four into drippings in skillet. Add chicken broth, milk and worcestershire. Cook and stir until thickened and bubbly. Add monterey jack, stir until cheese melts. Stir 1 cup of the hot mixture into sour cream; return all of sour cream mixture to skillet. Stir in the chicken and veggies. Cook until heated through being carefully not to boil mixture.
- Arrange pasta on individual plates or a large serving platter. Spoon the chicken mixture over pasta.

Steps:
- Cut chicken in bite size pieces. Put half of the chicken broth in a pot and add chicken, cook until no longer pink.
- Add the remaining chicken broth, cream cheese and chopped garlic, stir frequently to melt cream cheese.
- Once cream cheese is melted, add spinach.
- Cook pasta separately
- Cut the cherry tomatoes in quarters and add last.
- Stir in the pasta.
- Let stand for a few minutes to thicken.
- Season with salt and pepper as desired.
- Sprinkle with parmesan cheese if desired.
