Made with roasted garlic, heavy whipping cream, butter, Parmesan cheese and spices, this creamy sauce is amazing on pasta, as a dip for bread, and more!

Provided by The Chunky Chef

Categories     Main Course

Time 25m

Number Of Ingredients 7

1 head roasted garlic (*see note #1)
6 Tbsp unsalted butter
1 3/4 cup heavy whipping cream
1 1/4 cup Parmesan cheese (freshly grated is best)
1/2 tsp black pepper, more or less, depending on your tastes
1 Tbsp heavy whipping cream
2 tsp cornstarch

Steps:

  • Remove cloves of roasted garlic from the head and mash with a fork until smooth and pasty. This can also be done in a food processor if you'd like.
  • In a medium saucepan over MED-LOW heat, add butter and melt.
  • Pour in heavy whipping cream and roasted garlic paste. Stir and heat to a simmer.
  • Stir in Parmesan cheese and whisk until smooth.
  • In a small bowl, combine 1 Tbsp heavy whipping cream and 2 tsp cornstarch (or flour), and whisk until smooth.
  • Add the cornstarch and heavy cream mixture (it will be a thick paste-like consistency), whisking as you add it to remove any lumps and fully incorporate it into the sauce.
  • Continue to whisk and simmer until sauce has thickened to a classic cream sauce consistency. This may take a few minutes, or it could happen quicker, it all depends on your stovetop and saucepan.

Roasted Garlic White Pizza with Garlic Sauce image

Provided by Food Network

Categories     main-dish

Time 3h35m

Yield 1 large (15-inch) pizza, serving 4 to 6

Number Of Ingredients 24

1 cup whole milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon plus a pinch salt
1/4 teaspoon cayenne pepper
3 to 4 heads Roasted Garlic, recipe follows
2 to 3 tablespoons yellow cornmeal, for sprinkling on baker's peel
1 recipe Parmesan Pizza Dough, recipe follows
8 ounces fresh mozzarella, sliced
4 ounces grated fontina
2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh parsley leaves
3 to 4 heads garlic, upper quarter removed
4 teaspoons olive oil
Kosher salt
Freshly ground black pepper
1 cup warm water (105 to 115 degrees F)
1 (1/4-ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
2 3/4 cups unbleached all-purpose flour
1/2 cup finely grated Parmesan
Pinch salt
Yellow cornmeal, for sprinkling the baking sheet

Steps:

  • Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered.
  • In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. Pour the hot mixture into a blender, cover tightly, and process until smooth. Transfer to a small bowl and cool slightly, placing a piece of plastic wrap directly on the surface.
  • Place a pizza stone in the oven and preheat to 500 degrees F.
  • Sprinkle about 2 tablespoons of the yellow cornmeal on a baker's peel or baking sheet. Place the rolled out pizza dough circle on the prepared baker's peel or baking sheet.
  • Spread the cooled sauce over pizza dough, leaving a 3/4-inch border. Place sliced mozzarella on top of the sauce. Sprinkle the remaining roasted garlic cloves (whole) over the cheese and top with the grated fontina. Bake the pizza for 8 to 10 minutes, or until the crust is golden and cheese is melted and bubbly and golden brown in spots. Remove from the oven and sprinkle chopped herbs over the top. Serve immediately.
  • Preheat the oven to 350 degrees F.
  • Place the garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt and pepper and place, cut side down, on the baking sheet. Bake until the cloves are soft and golden, about 1 hour. Remove from the oven and let sit until cool enough to handle. Carefully remove each clove of garlic from the head. Squeeze each head of garlic to expel any cloves that you cannot remove individually. Set aside until needed.
  • In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.
  • Punch dough down and turn out onto a lightly floured surface and roll into a 15-inch circle.

CREAMY VEGAN GARLIC SAUCE

Creamy Vegan Garlic Sauce image

This creamy roasted garlic sauce is completely dairy-free! There are no cashews which means no cashew-soaking required! Just roast your garlic, blend the ingredients, and pour over pasta, pizza, or garlic bread!

Provided by Brittany Roche

Yield 5 servings of sauce

Number Of Ingredients 10

6 large cloves garlic, split in half
olive oil (for drizzling, omit for oil-free)
pinch of salt
1 (16-oz) package silken tofu
6 cloves roasted garlic
3 Tbsp vegan cheese seasoning or vegan parmesan
2 Tbsp lemon juice
2 Tbsp olive oil (optional)
1 tsp sea salt
1/2 tsp onion powder

Steps:

  • ROAST THE GARLIC: Heat your oven to 400F and add your garlic to a small oven-safe dish or baking sheet. Drizzle it with the oil lightly (or skip for oil-free). Sprinkle with a pinch of salt and cook for about 10-12 minutes, flipping once. You want it to be slightly browned but not burnt, so keep an eye on it. Usually, when you smell it, it's almost there!
  • MAKE THE SAUCE: Next, throw all your ingredients in a blender and blend on high until everything is combined. If you're using the olive oil, blend it a little longer to emulsify everything. Taste and adjust seasonings as you see fit.
  • TO USE: Pour this sauce over just-cooked pasta, use it on homemade pizzas, as a garlic bread spread, or to dip all the things!
  • TO STORE: Store this sauce in an air-tight container in the fridge for 5-7 days. We do not recommend freezing the sauce.

TOUM GARLIC SAUCE RECIPE

Toum Garlic Sauce Recipe image

Toum is a Middle Eastern garlic sauce that is smooth, creamy, and bold. Once you master this easy 4-ingredient toum recipe, you have a versatile sauce or spread to use with many things from chicken kabobs, kofta, and shawarma to falafel, or fish. You can even toss it in your pasta or use it as a spread for your sandwiches. The sky's the limit!

Provided by Suzy Karadsheh

Categories     Dip

Time 20m

Number Of Ingredients 5

1 head garlic
1 tsp kosher salt
1 lemon juice of
1 3/4 cups grape seed oil or sunflower oil ((a neutral tasting oil) )
4 to 6 tbsp ice water

Steps:

  • Peel the garlic cloves. Cut the cloves in half and remove the green germ (this is optional).
  • Place the garlic and kosher salt in the bowl of a food processor (a smaller one may work better here). Pulse a few times until the garlic looks minced, stopping to scrape down the sides. Add the lemon juice and pulse a few times to combine (again, scrape down the sides)
  • While the food processor is running, drizzle the oil in ever so slowly (use the top opening of the processor to drizzle in the oil). After you've used about 1/4 cup or so, add in about 1 tablespoon of the ice water. Stop to scrape down the sides of the processor bowl.
  • Keep the processor running and continue to slowly drizzle in the oil, adding a tablespoon of the ice water after every 1/4 cup of oil. Continue on with this process until you have used up the oil entirely. The garlic sauce has thickened and increased in volume (it should look smooth and fluffy). This should take somewhere around 10 minute or so.

Yield 8

Number Of Ingredients 6

1 head garlic
½ teaspoon olive oil
freshly ground black pepper to taste
2 cups heavy cream
½ cup prepared horseradish
½ teaspoon salt

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut about 1/2 inch off the top of the garlic head, making sure that the tops of the cloves are open and exposed. Place on a square of aluminum foil, drizzle the top with olive oil, and lightly season with pepper. Wrap the bulb up in the foil.
  • Bake in the preheated oven until the cloves are soft and the tops are brown and caramelized, 30 to 40 minutes. Set aside.
  • Pour the cream in a small saucepan and heat over medium heat, stirring often, until just starting to bubble. Reduce heat to low and simmer, stirring occasionally, until reduced by half, 25 to 30 minutes.
  • Remove the garlic cloves from the head using a fork and place them in a small bowl. Mash them with the fork until smooth. Add horseradish and salt and stir until combined.
  • Stir horseradish-garlic mixture into the cream and continue to simmer until the sauce is thick and creamy and the horseradish flavor has mellowed, 5 to 10 minutes.

  • Preheat oven to 400°F. Cut off the top 1/2 inch of each garlic bulb to expose ends of individual cloves. Leaving garlic bulbs whole, remove any loose, papery outer layers. Place bulbs, cut ends up, in a 1- to 1 1/2-quart casserole. Drizzle bulbs with 1 tablespoon of the oil; cover casserole. Arrange sweet pepper halves, cut sides down, on a foil-lined baking sheet; brush with the remaining 2 tablespoons oil.
  • Roast garlic and peppers about 40 minutes or until garlic feels soft and peppers are charred. Cool garlic in casserole on a wire rack. Bring foil up around peppers and fold edges together to enclose. Let peppers stand about 15 minutes or until cool enough to handle. Peel off and discard skins. Chop peppers; set aside.
  • Remove garlic cloves from paper skins by squeezing the bottoms of the bulbs. Place garlic cloves in a food processor. Cut peeled tomatoes into chunks; add some of the chunks to the garlic in food processor. Cover and process until chopped.
  • Transfer chopped garlic and tomatoes to a 7- to 8-quart stainless-steel, enamel, or nonstick heavy pot. Working in batches, repeat chopping the remaining tomatoes in the food processor. Add all of the tomatoes to pot.
