1 pound garlic (6 to 8 heads, depending upon size)
Kosher salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Using a serrated knife, slice off top quarter of garlic heads, exposing as many cloves as possible. Arrange garlic heads, cut side up, in an 8- or 9-inch square baking dish (make sure garlic heads sit flat).
  • Season garlic with salt and pepper and sprinkle with thyme. Slowly pour oil over each head, letting it soak into and around cloves. Cover dish tightly with foil and roast until cloves are golden, completely soft, and begin to protrude slightly from skins, about 1 hour. Let stand until cool enough to handle.
  • From the bottom up, squeeze each head to push out cloves (peel skins from any completely enclosed cloves). Transfer garlic and cooking oil to an airtight container. (Garlic will keep, refrigerated, up to 2 weeks.)

Steps:

  • In a large bowl, toss garlic with a generous amount of olive oil - enough to coat each clove.
  • Spread garlic cloves onto a foil lined baking sheet (I use the bottom of my broiling pan), then sprinkle with salt and pepper. Be sure to use a baking sheet that allows to the garlic cloves to be mostly single layer, but also fit snugly together.
  • Cover the baking sheet with foil, making sure you have a good seal over top and around the edges. Feel free to use multiple layers of foil if necessary to get a good seal.
  • Bake at 425 degrees for 45 minutes. Remove from oven and allow to cool (without removing foil) for about 15 minutes.
  • Remove foil and allow to cool to room temperature before placing in a freezer bag and freezing flat. (Make sure to taste test some on a toasted baguette first though!)
  • When you're ready to use, just break off as much as you want to thaw, then return the rest to the freezer!

The World's Best Roasted Garlic Bread image

Yield 1 loaf

Number Of Ingredients 8

1 cup warm water
2 1/2 tsp instant yeast
1 tsp sugar
1 tsp salt
1 tsp garlic powder
1 head garlic (paper removed and separated into cloves)
3 tbsp olive oil (divided, plus more for greasing bowl and baking sheet)
2 1/2-3 cups flour

Steps:

  • In a large bowl or in the bowl of your stand mixer, stir together the water, yeast, and sugar. Set aside for about ten minutes, or until foamy.
  • Add the salt, garlic powder, and 1 tablespoon olive oil to the yeast mixture and stir to combine.
  • If using a mixer, use the dough hook attachment and add the flour about 1/2 cup at a time. Continuing adding flour until the dough pulls away from the edge of the bowl and is just a little sticky to touch. Knead with the dough hook on low speed for about five minutes. To knead by hand, stir in flour 1/2 cup at a time until it becomes to difficult to stir. Turn the dough onto a well-floured surface and continue to knead in the flour a bit at a time, until barely sticky to the touch.
  • Oil a large bowl with a little olive oil. Add the dough to the bowl and turn to coat. Cover with plastic wrap and leave in a warm place to rise until doubled, about an hour to an hour and a half.
  • While the dough is rising, roast the garlic. Preheat oven to 400°F (200°C). Arrange the garlic cloves on a piece of foil large enough to wrap around them. Pour 2 tablespoons olive oil over the cloves and wrap the foil tightly around them. Bake for 15-20 minutes, or until cloves are just soft. Roughly dice the cloves.
  • After dough has risen, punch it down. Move one oven rack to the bottom of the oven, another to the middle. Preheat oven to 425°F (218°C). Lightly oil and flour a baking sheet.
  • On a lightly floured surface, knead the garlic cloves into the dough. Form the dough into a loaf on the baking sheet. Cover and let rise until almost doubled, about 45 minutes to an hour.
  • Once risen, lightly sprinkle the top with flour. Using a sharp knife, make three diagonal slits in the loaf.
  • Place an empty rimmed baking sheet on the bottom rack in the oven. Place the baking sheet with the shaped dough on the middle rack. Before closing the oven door, pour 1/2 cup water onto the empty sheet pan on the bottom rack. Close the oven door quickly to trap the steam. Bake for 15-20 minutes, or until golden brown.

1 garlic bulb
4 tbsp olive oil
1 medium squash (about 800g), peeled, halved and cut into 2-3cm wedges
1 tsp smoked paprika
200g orzo
1 large leek, halved lengthways and finely sliced
½ tbsp unsalted butter
1 preserved lemon, finely chopped
150ml chicken or vegetable stock
1 small bunch of flat-leaf parsley, finely chopped
200g feta
3½ tbsp yogurt
½ lemon, juiced

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Remove the outer layers of the garlic bulb and slice off the root end, being careful to not cut too deep into the cloves. Put on a small sheet of foil, drizzle with 1 tbsp of the olive oil and sprinkle over a pinch of salt. Scrunch to enclose the garlic in the foil and bake for 45 mins. Remove from the oven and leave to cool still wrapped in the foil.
  • Meanwhile, toss the squash with 2 tbsp of the oil, the paprika and some seasoning. Tip onto a baking sheet and roast for 30-40 mins, turning halfway, until the squash is tender and has some colour.
  • For the sauce, combine the feta, yogurt, lemon juice and 4 of the roasted garlic cloves (squeezing the flesh out of the skins) to create a smooth paste. It should be thick but pourable - add up to 2 tbsp water to loosen if needed. Set aside.
  • Cook the orzo in a pan of salted water over a medium heat for 4-5 mins until it's cooked but still has bite. Drain, reserving a cupful of the orzo water and cool in a sieve under cold running water.
  • Cook the leek with 1 tbsp oil and the butter over a medium heat in a large pan, stirring regularly, for 5 mins. Add the preserved lemon and the flesh of 3 roasted garlic cloves, then mash together well. Once the leeks are translucent, tip in the cooked orzo, stock and a splash of the pasta cooking water. Stir for a minute to warm through the orzo. Mix in half of the parsley.
  • Spoon the orzo and leeks onto plates, top with the squash and drizzle over the feta sauce. Sprinkle with remaining parsley and serve.

4 heads garlic
¼ cup olive oil
1 ½ teaspoons kosher salt, divided
¼ teaspoon freshly ground black pepper
½ stick unsalted butter, softened
¼ cup fresh parsley, minced
1 tablespoon fresh oregano, minced
1 sourdough boule
8 oz mozzarella cheese, sliced into thick 2-inch-long matchsticks
2 oz parmesan cheese

Steps:

  • Preheat the oven to 400°F (200°C). Place a sheet of foil on a small baking sheet and line another baking sheet with parchment paper.
  • Cut ½ inch off the tops of the garlic heads and place on the baking sheet with the foil. Drizzle the garlic with the olive oil and season with 1 teaspoon salt and the black pepper. Place the tops back on each garlic bulb. Bring up the corners of the foil around the garlic, then roll closed to form a tight packet. Place in the oven and roast until the garlic is caramelized, about 45 minutes. Remove from the oven and let sit for 30 minutes, until cool enough to handle. Leave the oven on.
  • Unwrap the foil packet and squeeze the heads to release the roasted garlic cloves into a medium bowl. Mash with a fork until a thick paste forms (some chunks are okay).
  • Add the butter, parsley, oregano, and remaining ½ teaspoon salt and stir to combine.
  • Using a serrated knife, carefully cut the bread into 1-inch-thick (2.54 cm) slices, stopping ½ inch (1.24 cm) from the bottom of the loaf to keep intact. Turn the loaf 90° and repeat cutting in the opposite direction.
  • Place the loaf on the parchment-lined baking sheet and stuff the mozzarella between the bread slices. Spread the roasted garlic butter over the entire loaf.
  • Place the loaf into the oven and bake until the cheese is melted and the top of the loaf is golden brown and crispy, 25-30 minutes.
  • Remove the loaf from the oven and transfer to a serving platter. Grate the Parmesan cheese directly over the top. Serve hot.

8 chicken thighs
Kosher salt and freshly ground black pepper
1 head garlic, separated into whole cloves, papery skin removed (about 20 cloves)
3 tablespoons olive oil
1 tablespoon butter
2 teaspoons herbes de Provence
1 teaspoon flour
1/4 cup chicken stock
1/2 lemon, juiced
Bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic. In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside. Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence. Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes. Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.
