BAKED BRIE AND ROASTED GARLIC
This baked brie and roasted garlic makes a simple, delicious appetizer. In this recipe, garlic is roasted with olive oil until golden, and so soft it spreads like butter.

Steps:
- Preheat the oven to 400°F
- Remove any loose papery outer layers from the garlic, but leave the tight fitting peel intact.
- Slice about ¼ inch off the top of the garlic head - the side that doesn't sit flat.
- Cut 3 pieces of heavy duty aluminum foil, roughly 12". Set one garlic head in the middle. Add 2 teaspoons of olive oil carefully, making sure it sinks into the individual cloves.
- Bring up all four sides of the aluminum foil and wrap tightly on top. Repeat with the remaining garlic.
- Place the garlic heads on a baking sheet and roast for 40-50 minutes. until they're golden, and a spreadable consistency.
- Remove the garlic from the oven. Turn off the oven for a little while; so it to cools off a bit to bake the brie.
- Preheat the oven to 350°F
- Cut the baguette into ½ inch rounds. Arrange the bread on a baking sheet and set aside.
- Place the brie wheel on a baking sheet, lined with parchment paper. Bake the brie for 15-20 minutes, or until the inside is melted. The brie should give when pressed lightly.
- When the brie is almost done, place the bread in the oven for the last 5-6 minutes to toast it just a little bit.
- Spread a clove of roasted garlic on a piece of bread and top with a generous amount of brie cheese.

- To roast garlic, place an unpeeled head of garlic in a heavy saucepan with oil. Cook and stir over medium heat for 5 minutes. Cover and reduce the heat to medium-low. Cook for about 15 minutes more or until garlic is soft. Remove garlic from oil. Drain on paper towels and cool.
- Slice the thin rind off one of the flat sides of the Brie. Place on a baking sheet, cut side up. Divide head of garlic into cloves and peel. Chop the roasted garlic. Place garlic* and olives on the Brie.
- Bake, uncovered, in a 400 degree F oven for 10 to 12 minutes or until Brie is warm and slightly softened. To serve, sprinkle with parsley. Makes 4 servings.

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. , Meanwhile, cut the top fourth off the loaf of bread; carefully hollow out enough of the bottom of the bread so cheese will fit. - Preheat oven to 325ºF. Place garlic in medium glass baking dish. Drizzle with 2 tablespoons oil. Cover dish with foil. Bake until garlic is golden and very tender, about 30 minutes. Transfer dish to rack and cool garlic.
- Heat remaining 4 tablespoons oil in heavy large saucepan over medium heat. Add onion and sauté until translucent, about 10 minutes. Add celery and carrot and sauté until vegetables are tender, about 10 minutes. Add flour and stir 3 minutes. Gradually stir in stock. Bring to boil, stirring frequently. Reduce heat to medium-low and simmer until soup is slightly thickened, stirring occasionally, about 15 minutes.
- Peel garlic and transfer to processor. Add 1 cup soup to garlic. Purée until smooth. Return mixture to saucepan. Stir in oregano and thyme. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Bring soup to a simmer over medium-low heat. Gradually add Brie, stirring until melted after each addition. Season soup to taste with white pepper and salt. Ladle soup into bowls and serve.

- Roasted Garlic:.
- Peel off the outer papery covering of the head of garlic. Using a sharp knife, then slice of 1/4″-1/2″ of the tops of the cloves, so that the inside of each clove is exposed.
- Place the head on a square of aluminum foil. Drizzle the olive oil over the top of the cloves, and then use your fingers to spread it around well. Then fold up the foil over the top of the clove, so that it is fully enclosed. Either place the pouch directly on the oven rack, or you can place it on a pan (or muffin tins work well if you're roasting multiple heads of garlic!).
- Bake at 400 degrees for 30-35 minutes, until the garlic is soft and lightly browned. Remove from foil.
- Soup:.
- Heat olive oil in a large pot over medium-high heat. Add celery, onion and carrot and saute for 8-10 minutes, stirring regularly until the vegetables have softened.
- Add flour and stir for another minute to combine. Then add chicken broth and bring to a boil. Reduce heat and simmer 15 minutes, stirring often.
- Carefully squeeze the roasted garlic cloves out of the heads, and place them in the food processor (or blender). Add in one cup soup mixture and process until smooth. Returm processed mixture to pot and add in the thyme and oregano. Bring to a simmer.
- Add cheese and stir slowly until melted. Season to taste with salt and freshly ground black pepper (or a tiny dash of white pepper), and serve. Garnish with chopped parsley if you'd like.

- Cut off the bottom of the garlic and drizzle with 1 tsp EVOO.

- Preheat oven to 350 degrees.
- Cut the tops off of the garlic, so that the cluster of cloves can be seen. Do not seperate cloves.
- Baste with oil and sprinkle lightly with Thyme.
- Place garlic on a medium piece of foil and then wrap foil around garlic, until it is complelety wrapped up in foil.
- Bake in oven for 1 hour to 1 hour and 15 mins. Allow to cool.

- Place Brie in 6 individual baking dishes. Place 2 garlic halves in each dish around Brie. Pour 3/4 cup honey over each Brie. Season with salt and pepper.

- Preheat oven to 350°F Wrap unpeeled garlic cloves tightly in aluminum foil. Bake 30 minutes. Remove from oven, open foil & let garlic cloves rest about 10 min till cool enough to handle.
- When cool, pinch ea clove from the root end & squeeze the garlic pulp into a sml bowl. Set aside.
- While garlic cloves are cooling, melt Brie or Fontina cheese in a double-boiler over simmering (not boiling) water, stirring till smooth.
- Using a food proc or heavy-duty blender, puree olives, garlic & olive oil about 15 seconds. Add melted cheese & pulse about 10 more seconds till combined.
- Place mixture in a bowl lined w/plastic wrap & cover w/plastic wrap touching the top of the spread. Refrigerate at least 2 hours.
- To Serve - Turn out the pate on a serving platter & surround w/crusty bread, zucchini rounds & assorted crackers. Can also be plastic-wrapped in a log shape as desired.
