Paprika Roasted Cornish Hen with Vegetables (carrots and sweet potatoes) - a delicious way to prepare cornish hen. Great recipe for the Fall season, Thanksgiving and Christmas.

6 cloves garlic (, minced)
2 tablespoons olive oil
2 tablespoons smoked paprika
2 teaspoons chili powder
1 teaspoon cumin
1/4 cup chicken stock
1 teaspoon salt (, or more)
2 Cornish game hens (, rinsed, patted dry)
3 carrots (, peeled and sliced into 1/2-inch-thick slices)
1 onion (, peeled and sliced)
1 sweet potato (, peeled and sliced into thin stripes)
1/2 cup chicken stock
1/2 cup white wine
salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degree Fahrenheit.
  • Rub the insides of Cornish hens with salt and pepper and 3 minced garlic cloves.
  • In a bowl, combine 2 tablespoons olive oil, paprika, chili powder, cumin, remaining minced garlic, 1/4 cup chicken stock and stir well to combine. Use 2/3 of this mixture to rub all over the outside of Cornish hens. Sprinkle the desired amount of salt over the outside of the hens. Sprinkle a very small amount of additional paprika over the hens (for color).
  • Toss carrots, onions, and sweet potatoes in the remaining 1/3 of the mixture to coat. Sprinkle with salt and pepper.
  • Transfer vegetables to the large roasting pan. Place hens breast sides up on top of vegetables. Add a little bit of chicken stock on the bottom of the pan to prevent vegetables from burning.
  • Roast Cornish hens at 425 Fahrenheit for 30-35 minutes. Reduce heat to 350 Fahrenheit. Combine 1/2 cup of chicken stop and 1/2 cup of white wine and pour the mixture over the hens and into the bottom of the roasting pan. Continue roasting at 350 degrees F for 15-20 more minutes, basting hens with pan juices, until hen juices run clear.
  • Transfer hens and vegetables to a platter. Make sure to pour juices from the hen cavities into a roasting pan. Cover hens with foil. Transfer the sauce from the roasting pan into a smaller saucepan and boil it down a little bit to thicken, if desired. You can also dissolve a little bit of cornstarch in water and add it to the boiling sauce to thicken it. After hens sit under the foil, pour juices from rested hens back into the sauce you just made. If desired, add more chicken stock to the thickened sauce.
  • Serve Cornish hens whole or cut in half.

2 Cornish game hens or poussin, about 1lb (500gr) each
1 lemon, washed, cut in half, seeds removed
1 tsp lemon pepper
1 tsp smoked paprika
3 tbs olive oil
2 carrots, cut in thirds the long way, then halved or quartered lengthwise
2 ribs celery, cut in thirds the long way, then halved or quartered lengthwise
2 potatoes, cut into 8 wedges
4 small shallots or 2 large, cut in half, leaving cloves whole if possible

Steps:

  • Put a lemon half in each hen, then tie the legs together
  • Put hens, breast side down, in a lightly oiled (or non-stick) baking dish large enough to hold everything.
  • Put hens into 400F (200C) oven. Bake for 20 minutes.
  • While hens bake prepare the vegetables.
  • In a large bowl combine olive oil, lemon pepper, and paprika.
  • Add all vegetables and stir well to coat.
  • When ready remove hens from oven and turn breast side up.
  • Put vegetables around hens.
  • Pour remaining oil and seasonings over hens.
  • Return to oven and roast another 40 minutes.
  • Stir vegetables half way through.
  • Remove and serve, pan juices on the side if you like.

1/2 cup red wine vinegrette dressing
1 teaspoon chopped fresh rosemary leaves, plus 4 sprigs
1 teaspoon chopped fresh oregano leaves, plus 4 sprigs
1 teaspoon chopped fresh thyme leaves, plus 4 sprigs
1 teaspoon chopped fresh parsley leaves, plus 4 sprigs
4 Cornish game hens, rinsed
1 lemon, cut in quarters
1 (16-ounce) bag baby carrots
1 (16-ounce) bag frozen pearl onions, thawed
1/2 pound red potatoes, cut into small chunks
Salt and fresh ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
  • Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
  • In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.

  • For caramelized root vegetables:
  • Melt butter with oil in very large pot over medium-high heat. Add onion; sauté 5 minutes. Add rutabagas and next 4 ingredients; sauté until vegetables are caramelized and tender, stirring often, about 30 minutes. Stir in chestnuts, garlic, and thyme; sauté 5 minutes. Season generously with salt and pepper. Do ahead Can be made 1 day ahead. Cover and chill. Rewarm over medium heat, stirring frequently, until heated through before serving.
  • For hens:
  • Mix 1/4 cup thyme, shallots, oil, orange peel, garlic, and crushed juniper berries in small bowl for marinade. Rub marinade all over hens. Place hens in large roasting pan; cover and refrigerate at least 6 hours or overnight.
  • Preheat oven to 325°F. Pour 1 1/2 cups broth into roasting pan with hens. Sprinkle hens with salt and pepper. Cover pan tightly with foil. Roast until hens are cooked through and juices run clear when thighs are pierced with fork, about 1 hour 15 minutes. Remove from oven. Preheat broiler.

  • Preheat oven to 425 degrees with racks in top and bottom. Place hen, breast-side down, on a work surface. Using kitchen shears, cut along both sides of backbone to remove. Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F.
  • Melt butter with olive oil in a large, heavy skillet over low heat. Add the minced garlic and herbs. Remove about 1 1/2 to 2 tablespoons of the mixture and set aside.
  • Add the onion slices , potatoes, and carrots to the skillet. Sprinkle with salt and pepper. Toss well to coat the vegetables with the butter, oil, and herbs; cook, stirring, for about 2 minutes.
  • Sprinkle the cavities of the game hens with salt and pepper.
  • Rub the reserved herb mixture all over the hens. If desired, put pieces of lemon and onion and some herb sprigs in the cavities.
  • If the skillet is not oven safe, move the vegetable mixture to a baking dish or pan.
  • Arrange the hens on the vegetables, and place in the oven. Roast for about 1 hour and 15 minutes, or until the hens register at least 165 F in the meatiest part of the thigh, not touching bone.
  • If the hens are browning too quickly, cover loosely with foil near the end of the cooking time. If they don't brown enough, turn the broiler on for 2 to 3 minutes before you take them out of the oven.

Freshly ground pepper to taste
2 tablespoons corn, peanut or vegetable oil
8 small white onions, about 3/4 pound, peeled
8 small red waxy potatoes, about 3/4 pound
1/2 pound mushrooms, thinly sliced
1 bay leaf
1/2 cup dry white wine
1/2 cup chicken broth
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle hens inside and out with salt and pepper. Ideally you should truss them with string, but it is not essential.
  • Heat oil in heavy casserole large enough to hold hens comfortably in one layer. Add hens and cook, turning often, until nicely browned all over, about 5 minutes.
  • Meanwhile, trim ends off potatoes and cut lengthwise into quarters. Put in saucepan with cold water to cover and salt to taste. Let simmer about 3 minutes and drain.
  • Add potatoes to hens and onions. Pour fat from casserole. Return to heat and add mushrooms and bay leaf, stirring from bottom.
  • Cover closely and let cook about 3 minutes.
  • Add wine and broth. Cover closely and let simmer 30 minutes. Remove bay leaf. Serve chicken and vegetables sprinkled with parsley.

1/2 cup extra virgin olive oil
salt & freshly ground black pepper

5 -6 fresh rosemary sprigs, leaves only
1 cup white wine

Steps:

  • Preheat the oven to 400 degrees F. Brush the chicken or game hens liberally with some of the olive oil and season with salt and pepper inside and out. Sprinkle with paprika.
  • Place the lemon quarters in the cavity, giving each (lemon) a little squeeze to release the oil from the skins.
  • Season the potatoes with salt and pepper and toss them with the rest of the olive oil and the rosemary leaves. Spread them around the chicken in a large baking pan.
  • Fold a piece of aluminum foil double into a rectangle about the size of the chicken. Grease it down the middle, making a little tent, and lay the foil loosely over the breast.
  • Roast the chicken for 45 minutes, basting 2 to 3 times with the fat in the pan.
  • Add the wine (it will quickly evaporate in the hot oven, leaving a lovely flavor in the potatoes), remove the foil, and cook for 15 to 20 more minutes.
  • If the breast is not browned enough, turn on the broiler for a few seconds to crisp the skin, but watch carefully so as not to burn your masterpiece.

  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

This is an easy weeknight dinner that will feed 4. I just love what rosemary, thyme, and Dijon do to these delectable little birds. It's great served over baked sweet potatoes or fingerlings.

2 Cornish hens
4 garlic cloves, peeled and rough chopped
2 tablespoons Dijon mustard
2 tablespoons white wine
2 teaspoons fresh rosemary leaves
2 teaspoons fresh thyme leaves
1 teaspoon olive oil
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 400 degrees.
  • Rinse and dry the hens.
  • In the bowl of a mini food processor, add the mustard, wine, rosemary, thyme, oil, salt and pepper.
  • Pulse until all is a smooth paste. It will be more of a liquid form than a paste.
  • Place the hens in a little roasting pan and shmear the mixture all over the birds, under the skin, around the breasts, and into the cavity.
  • Roast, breast side down for 25 minutes then flip and roast for another 25-35 minutes, or until done.
  • Remove from the oven and let rest at least 10 minutes.
  • Cut each hen in half, down the breastbone, and serve with some sauce on top.
