5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

1 cup cherry tomatoes, chopped
1/4 cup fresh cilantro, chopped
3 tablespoons chopped green onions
1/4 cup crumbled queso fresco
3 tablespoons olive oil
2 cloves garlic, minced
juice from half a lime
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon agave syrup
1 tablespoon apple cider vinegar

Steps:

  • Remove the husks and silk from the 4 ears of corn. Apply a thin coat of extra virgin olive oil or butter and place on a heated skillet. Allow the corn to cook until heated. Once the corn has cooled to the touch then use a sharp knife to cut off the kernels into a large bowl. Into the same bowl add the chopped tomatoes, cilantro and green onion. In a small jar add the ingredients for the vinaigrette. Shake the jar to combine and mix the dressing. Pour the dressing over the top of the salad. Stir to combine. Sprinkle with the crumbled queso fresco. Serve the salad immediately or place in the refrigerator. Serve the salad cold.

Steps:

A handful of snap peas
Crumbled feta cheese
For the Vinaigrette:
1/2 medium-size orange
Champagne vinegar
1 clove garlic
Olive oil

Steps:

  • In a small bowl, add some of the Champagne vinegar, olive oil, freshly squeezed orange juice, salt, and 1 teaspoon of freshly grated garlic. Whisk the ingredients together until thoroughly combined.
  • Using a knife, remove all of the kernels from your ear of corn.
  • Drizzle a tablespoon of olive oil in a skillet over medium heat. Add the corn and a pinch of kosher salt.
  • Roast the corn for about five minutes, stirring constantly with a wooden spoon until all sides of the kernels are lightly toasted and slightly caramelized.
  • Next, slice about five whole snap peas into rings and add them to a small bowl.
  • Once the corn is fully roasted, add it to the bowl with the snap peas.

1 red bell pepper, diced

Steps:

  • Place the corn in a large pot with enough water to cover, and soak at least 15 minutes.

3/4 teaspoon chopped fresh thyme leaves

6 ears corn, shucked
1/2 jicama, peeled and cut into 1/2-inch pieces (2 cups)
2 small poblano chiles, seeded, stemmed, and cut into 1/2-inch pieces (1 cup)
1/2 cup packed fresh cilantro leaves
3 tablespoons extra-virgin olive oil
4 1/2 ounces queso fresco, crumbled (1 cup)
1 tablespoon fresh lime juice
1 cup sour cream

Steps:

  • Stir together paprika, sugar, thyme, and 1 1/2 teaspoons salt.
  • Char corn over the flame of a gas stove or in a broiler, turning with tongs, until blackened and blistered, about 3 to 4 minutes each. Let cool, then cut kernels into a large bowl. Toss with jicama, chiles, cilantro, oil, cheese, and lime juice. Season lightly with salt.

1/2 cup of red onion, diced

1/2 cup of cherry tomatoes, quartered
1 clove of garlic, minced
1 tablespoon of jalapeno, minced
1 tablespoon of cilantro, chopped
2 tablespoons of sunflower seeds
1/4 cup of extra virgin olive oil
2 tablespoons of mint, chopped
1/4 cup of cilantro, chopped
2 tablespoons of apple cider vinegar
1 tablespoon of lime juice
zest of 1 lime
1 teaspoon of honey (maple syrup or agave work great here as well for a vegan alternative)
1 clove of garlic, minced

freshly ground black pepper to taste

Steps:

  • Lightly brush each of the ears of corn with olive oil and then generously sprinkle with salt and pepper.
  • Heat your grill and once hot, add corn. Cook for 2-3 minutes on each side, rotating so that every side gets a bit charred, 10-12 minutes total. Once done, let cool enough to handle and then cut the kernels off of the cob and transfer to a large bowl.
  • Add the onion, bell pepper, cucumber, tomato, avocado, garlic, jalapeno, sunflower seeds and cilantro to the bowl.
  • Make your dressing by adding all of the dressing ingredients to a blender and blend until combined. About 30 seconds. Season with salt and pepper to taste.
  • Drizzle the dressing onto the corn salad and combine. Season with additional salt and pepper to taste and enjoy!
