1 (#10 can) black-eyed peas, rinsed and drained
1/2 red bell pepper, seeded and finely chopped, optional
1/2 green bell pepper, seeded and finely chopped, optional
1/2 to 1 small or medium red onion, chopped
1 clove garlic, peeled and finely minced
3/4 cup chopped flat-leaf Italian parsley
1/2 fresh jalapeno, very finely minced
1/4 cup olive oil
1/4 cup canola oil
1/3 cup red wine vinegar
1 tablespoon whole-grain mustard
1 tablespoon brown mustard
1/2 tablespoon salt
1/2 tablespoon ground black pepper

Steps:

  • In a large salad bowl, combine the black-eyed peas, red and green peppers, onions, garlic, parsley and jalapeno. In a medium bowl, whisk together the dressing ingredients. Pour over the salad mixture and toss well before serving.

1 pound dried black-eyed peas
5 cups beef stock or canned broth
2 medium onions, finely chopped
4 large garlic cloves, minced
3 large jalapeño chilies
2 bay leaves
1 tablespoon Cavender's All Purpose Greek Seasoning*
1 4-ounce jar diced pimientos, drained
*Available in the spice section of many supermarkets.

Steps:

  • Place black-eyed peas in heavy large saucepan. Pour enough cold water over peas to cover by 3 inches and soak overnight. Drain peas.
  • Return peas to same saucepan. Add stock, onions, garlic, chilies, bay leaves and seasoning and bring to boil. Reduce heat and simmer until peas are tender, stirring until peas are tender, stirring occasionally, about 1 1/2 hours.
  • Mix pimientos into peas. Season with salt and pepper. (Can be prepared 1 day head. Cover and refrigerate. Bring to simmer before serving.)

Steps:

  • In an electric mixer or large mixing bowl, mix together the peas, Cheddar, jalapenos, 3 tablespoons of the reserved jalapeno juice, butter, garlic powder and onion until blended. Season with salt and pepper. Heat the dip in a medium slow cooker and serve it warm with corn chips.

1 15-ounce can black-eyed-peas, drained, but reserve the liquid (you may also want to reserve a tablespoon or so of the black-eyed peas for garnish if desired)
1/3 cup tahini
1-2 fresh jalapenos (seeded and roughly diced (more or less to taste))
3 tablespoons freshly-squeezed lemon juice
2 medium garlic cloves (minced)
1/2 teaspoon salt (plus more to taste; I prefer kosher salt)
2 tablespoons - 1/4 cup fresh cilantro (to taste)
1/2 teaspoon cumin
Optional garnishes: fresh cilantro (sliced jalapenos, black-eyed peas, a drizzle of olive oil)

Steps:

  • Add black-eyed peas, tahini, jalapenos (start with less then add more if more heat is desired), lemon juice, garlic, 1/2 teaspoon salt, cilantro, and cumin to the pitcher of a high-powered blender or to the bowl of a food processor fitted with the S-blade. Puree until smooth, adding the reserved liquid as needed to keep everything moving. Taste and add additional jalapeno pepper, cilantro, and salt, if desired.
  • Spoon into a bowl and smooth the top. Scatter on optional garnishes, if desired, and drizzle with olive oil. Serve with pitas, pita chips, veggies, or whatever else you like to dip in hummus!
  • Keeps refrigerated in an airtight container for 3-4 days.

1/2 cup finely chopped onion
3 tablespoons fresh lime juice
1/2 teaspoon hot pepper sauce
1 cup all purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 large egg
1/3 cup sour cream
1 tablespoon minced seeded jalapeño chilies
2 teaspoons (about) vegetable oil
Purchased medium-hot salsa

Steps:

  • Place dried black-eyed peas in medium pot. Add enough cold water to cover by 3 inches; let stand overnight. Drain peas.
  • Return peas to pot. Add 3 cups water. Cover; simmer until peas are tender, stirring occasionally, about 40 minutes. Drain peas, reserving 1/3 cup cooking liquid.
  • Transfer 1 1/4 cups peas to processor and puree until smooth, adding enough reserved cooking liquid 1 tablespoon at a time to help blend. Transfer puree to a large bowl. Mix in milk, onion, lime juice, hot pepper sauce and remaining whole peas. Stir in flour, baking powder and baking soda. Season with salt and pepper. Mix in egg. Cover and chill batter 30 minutes.
  • Mix sour cream and jalapeño chilies in small bowl. Let stand 30 minutes.
  • Preheat oven to 250°F. Heat 1/2 teaspoon oil in heavy large skillet over medium-low heat. Using 1 1/2 tablespoons batter for each pancake, spoon batter into skillet. Cook until bubbles atop pancakes break and batter is almost set, about 3 minutes. Turn pancakes over; cook until cooked through. Transfer pancakes to baking sheet; keep warm in oven. Repeat with remaining batter, adding more oil to skillet as needed, making 24 pancakes.
  • Spoon salsa onto plates. Arrange 4 pancakes alongside salsa on each plate. Top with sour cream mixture and serve.

4 slices bacon
1 medium onion, chopped
1 (16 ounce) package dried black-eyed peas, washed
1 (12 ounce) can diced tomatoes with green chilies, undrained (Rotel works well)
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon black pepper
3 cups water

Steps:

  • In a large saucepan, cook the bacon slices, until crisp.
  • Remove the bacon, crumble and set aside to use as a topping for the finished peas.
  • Saute the onion in the bacon drippings until tender.
  • Add the peas, diced tomatoes with green chiles, salt, chili powder, pepper, and water.
  • Cover and cook over medium heat for 45 min to an hour, or until the peas are tender.
  • Add additional water, if necessary.
  • Serve over rice with the crumbled bacon as a garnish.

BLACK EYED PEA CORNBREAD

This is apparently a recipe they make at the Black Eyed Pea restaurant (EDIT: apparently not the Black Eyed Pea Restaurant cornbread - thanks Kelly - but still yummy), but I tried it out at home and it was delicious. Rather filling, it's maybe a little too much for a side, but it's very good. Try it out! I've also just remembered that I actually used a couple of red chilli peppers, rather than jalapeno peppers, which gave it a bit more kick. So it's up to you which you use :)

1 cup onion, chopped
1 cup black-eyed peas
3/4 cup creamed corn
1 cup cornmeal
1/2 cup flour
1 cup buttermilk
1/4 cup cooking oil
2 eggs, slightly beaten
1 teaspoon salt
1/2 teaspoon baking soda
2 jalapenos or 2 red chili peppers, chopped
1 cup cheddar cheese, grated

Steps:

  • Brown the meat and drain well. Break it into small pieces.
  • Add other ingredients in order given.
  • Mix well and place in a 13x9x2" pan that has been well greased.
  • Cook at 350 degrees for 45mins, or until done.
  • Serve hot!

1 lb dried black-eyed peas
6 cups water
2 garlic cloves (minced or pressed)
1 bell pepper, diced
1 small onion, diced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar
1 teaspoon dried oregano (crushed)
1 teaspoon dried thyme (crushed)
1 (26 ounce) can chopped tomatoes (do NOT drain)
1 (4 ounce) can diced green chilies (do NOT drain)
1/4 cup red wine vinegar

Steps:

  • Either presoak beans overnight, or, boil beans for 2 minutes and then remove from heat, cover and let set for 1 hour.
  • Combine garlic, onions and bell pepper in a skillet.
  • Cook over low heat, with a little water to prevent from scorching.
  • Cook until onion is translucent.
  • Add the cooked onion mix and all remaining ingredients to the black eyed-peas and bring to a boil.
  • Cover and reduce heat to low.
  • Cook for 1 1/2- 2 hours, or until peas are soft.

A Southern Classic! In most Southern homes, black-eyed peas are always served on New Year's Day for good luck. I usually cook these early on New Year's Eve day. That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

These are just the best black-eyed peas I've had. Ordinarily I would use fresh jalapeño peppers,but the pickled worked very well in this. I like to serve this with Southern Cornbread made in a cast iron skillet. Served this on New Years day for good luck.

1 lb smoked ham hock (2 hocks)
1 cup chopped onion
32 ounces low sodium chicken broth
3 cups water
3 garlic cloves, chopped
3 tablespoons pickled jalapeno chilies, chopped
salt and pepper

Steps:

  • Add peas to a large dutch oven.
  • Add chicken stock, water, onions and ham hocks.
  • Bring to a boil, cover and reduce heat to simmer for 1 hour.
  • Remove lid and add chopped garlic and jalapeños, cover and simmer another 30 minutes or until they are tender.
  • Season with salt and pepper to taste.
  • Remove ham hocks before serving. (You can add the meat from the hocks if you desire. I don't).
  • Enjoy.
