ROASTED CORN RELISH



Roasted Corn Relish image

This relish combines several different sweet grilled vegetables (corn, bell peppers, green onions) with cilantro, chiles and lime. Adapted from a recipe by Joshua Bousel at Serious Eats. http://bit.ly/oYPpNr

3 ears corn, husks and silks removed
1 tablespoon unsalted butter
1 jalapeno pepper
1 medium red bell pepper
6 green onions
1/4 cup finely chopped fresh cilantro
1 teaspoon lime zest
1/2 teaspoon sugar
1/2 teaspoon chili powder
1/4 teaspoon cumin
kosher salt
fresh ground black pepper

Steps:

  • Prepare a hot charcoal grill or preheat gas grill to high. Cover and preheat grill grate for 5 minutes.
  • Lightly butter each ear of corn, then season with salt and pepper. Wrap each ear in aluminum foil.
  • Clean and oil the grill grate. Place the corn, red pepper, and jalapeno on the grill and cover. Grill red pepper and jalapeno until they start to blister, but not blacken, on each side. Grill corn until it's lightly charred all over. Remove pepper, jalapeno, and corn to a cutting board as they are done.
  • Brush green onions lightly with oil and place on the grill. Cook until softened and lightly browned on both sides. Remove to cutting board.
  • In a medium bowl, cut kernels off each ear of corn. Remove seeds and ribs from jalapeno and red pepper, then dice and add to bowl with corn. Thinly slice green onions and add to corn and peppers along with cilantro, lime juice, lime zest, sugar, chili powder, and cumin. Stir to combine. Season with salt and pepper to taste. Serve immediately or store in an airtight container in the refrigerator.

2 1/2 tb White wine vinegar
1 Whole scallion; trim,slice
1 lg Red bell pepper
5 tb olive oil
6 Ears fresh corn; unhusked
1 ts olive oil
; seeded and
8 Cloves garlic; left as is
Chopped

Steps:

  • Soak the fresh corn in a pot of cold water for about 1 hour. Preheat the oven to 400?. Place the garlic in a piece of aluminum foil, drizzle with 1 teaspoon of the oil, and wrap tightly. Place the bell pepper on another piece of aluminum foil. Do not wrap. Place the drained corn directly on the oven rack and roast along with the garlic and bell pepper. Remove the corn and garlic after 10 minutes and let cool slightly. Squeeze the garlic cloves out of their skins and chop. Husk the corn and, using a sharp knife, cut the kernels off the cobs into a medium size bowl. Roast the bell peper, turning it every few minutes, until almost charred on all sides, for a total of about 15 minutes. Wrap the pepper in the foil and let cool slightly, about 5 minutes. Peel the skin off the pepper, remove the seeds and core, and chop it. Mix the corn with the chopped garlic and bell pepper and add the remaining ingredients. 6 ears fresh corn
4 green chiles
1 red pepper
1 red onion
1/2 cup chopped cilantro leaves
1 lime, juiced
Olive oil
Salt
Garlic powder

Steps:

  • Preheat a grill to 350 degrees F.
  • Place corn and chiles on grill, and grill until corn is partially charred on outside and chiles are fully charred on outside. Transfer both to a platter. Peel the outer skin from the chiles and remove stems and seeds, leaving only the tender meat of the chiles.
  • Remove corn kernels from the cob with a knife or spoon and then place in a medium bowl. Dice chiles, red pepper, and onion and then add to bowl with kernels. Add cilantro and lime juice. Drizzle with olive oil. Add salt and garlic powder, to taste. Thoroughly combine and then refrigerate for 2 to 3 hours before serving.

6 cobs fresh corn, shucked or (28-ounce) can corn
1 red pepper
1 large poblano pepper (poblanos are called pasillas in California and the Southwest)
2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, diced
1 yellow pepper, diced
1 orange pepper, diced
4 Roma tomatoes, diced
1 to 2 ounces cream cheese
1/4 cup milk or cream
Salt and freshly ground black pepper
1 bunch fresh cilantro leaves, chopped
1 bunch fresh chives, chopped

Steps:

  • Heat grill to medium.
  • Place corn in foil, sprinkle with water, wrap and put on the grill, with the red and pablano peppers. Char the peppers, remove, peel and dice for relish. Remove the corn to a cutting board, cut off the kernels and reserve in a medium bowl.
  • Add oil to a large skillet and saute the garlic and onion. Saute for a minute, then add the roasted and fresh peppers, tomatoes, and corn heat for another quick minute. Add cream cheese and stir in milk very slowly until the cream cheese is melted and the mixture is smooth. Pour into a serving bowl, fold in cilantro and season with salt and pepper, to taste. Serve garnished with chives.

Steps:

  • Heat oven to 450°F
  • Prick bell peppers in several places with fork.
  • Place on baking sheet or in shallow roasting pan.
  • Roast peppers 30 minutes or until skin is blackened, turning occasionally.
  • Transfer peppers to paper bag; close bag. Let stand 10 minutes.
  • Meanwhile, combine green and red tomatoes and onion in medium bowl.

  • Remove peppers from bag; peel off and discard skin.

  • Fill a large bowl with ice water. In a large pot of boiling water, cook the corn until the kernels become slightly translucent, about 3 minutes. Transfer the corn to the ice water; let cool. Drain the corn and pat dry. Cut off the kernels.
  • Roast the bell peppers and jalapeños over a gas flame, turning, until charred all over, about 5 minutes. Transfer to a bowl, cover and let cool slightly. Peel, stem and seed the peppers and jalapeños. Cut the bell peppers into 1/2-inch dice and the jalapeños into 1/4-inch dice.
  • In an enameled cast-iron casserole, combine the vinegar and sugar and bring to a boil, stirring. Add the corn, peppers, jalapeños, onion and mustard and bring to a boil. Simmer for 15 minutes. Season with salt and let cool.
