BAKED ASPARAGUS WITH SHIITAKE, PROSCIUTTO AND COUSCOUS

Baked Asparagus With Shiitake, Prosciutto and Couscous image

In this satisfying, set-it-and-forget-it spring dinner, asparagus, mushrooms and prosciutto are steamed in a parchment packet under low heat. The technique was inspired by a recipe in Paula Wolfert's "The Slow Mediterranean Kitchen: Recipes for the Passionate Cook." The parchment insulates the ingredients, while keeping the temperature steady and allowing the flavors to mingle. Here, the result is tender asparagus infused with earthy and sweet flavors from the mushrooms and prosciutto alike.

Categories     dinner, easy, weekday, one pot, main course, side dish

Time 1h20m

Yield 2 main-course servings, or 4 side-dish servings

Number Of Ingredients 9

1 pound asparagus, ends trimmed
1/4 pound shiitake mushrooms, stems removed, sliced 1/4-inch thick
2 ounces thinly sliced prosciutto, cut into 1/4-inch strips
2 tablespoons plus 2 teaspoons extra-virgin olive oil, plus more for drizzling
1/2 teaspoon kosher salt
Black pepper
Grated nutmeg
3 tarragon sprigs
3/4 cup whole-wheat couscous

Steps:

  • Heat oven to 200 degrees. Line a baking sheet with parchment paper (it should be twice as long as the pan). Lay asparagus in a pile in the center. Scatter mushrooms and prosciutto on top. Drizzle with 2 tablespoons oil and season with 1/4 teaspoon salt, the pepper and nutmeg. Toss vegetables to coat evenly. Lay tarragon over top.
  • Fold parchment to completely enclose vegetables, and staple top and sides shut (or tie up with string). Transfer pan to oven and bake for 1 hour. Asparagus should be just cooked through. If too crisp, return to oven until done to taste.
  • In a small pot over medium-high heat, bring 3/4 cup plus 3 tablespoons water, 2 teaspoons olive oil and remaining salt to a simmer. Stir in couscous and remove pot from heat. Cover and let stand for 5 minutes. Fluff with fork.
  • Spoon couscous onto serving plates and drizzle with oil. Divide prosciutto and vegetables, and their juices, among the plates and serve.

PROSCIUTTO-WRAPPED ASPARAGUS

Prosciutto-Wrapped Asparagus image

Prosciutto-wrapped asparagus, roasted in the oven until crisp, is such an easy way to make your asparagus extra special. Great for Easter, Mother's Day, graduation parties, or any spring meal!

Provided by Lisa Lin

Categories     Side Dish

Time 20m

Yield 6

Number Of Ingredients 6

1 pound asparagus, preferably thick spears
3 to 3 1/2 ounces sliced prosciutto
1 to 2 tablespoons olive oil
Ground black pepper
Lemon zest, optional
Freshly grated Parmesan cheese, optional

Steps:

  • Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
  • Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
  • Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. Tug the prosciutto a little as you wrap it around the asparagus to give it tension. This helps to ensure that the prosciutto wraps around the asparagus tightly. Lay the wrapped asparagus spears on the lined sheet pan.
  • Drizzle the asparagus with 1 to 2 tablespoons of olive oil: Sprinkle a pinch of black pepper on top.
  • Bake the asparagus for 8 to 10 minutes: When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

OVEN-ROASTED ASPARAGUS

Oven-Roasted Asparagus image

Ree Drummond's oven-roasted asparagus recipe is one of the most ridiculously simple vegetable dishes in existence. Make it for the holidays, or a weeknight dinner.

Categories     Christmas     Thanksgiving     dinner     main dish     roasted     side dish     snack

Time 20m

Yield 4 servings

Number Of Ingredients 4

1 bunch asparagus
4 tbsp. (up to 5 tablespoons) olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Preheat oven to 425 degrees.
  • After you wash the asparagus thoroughly, stack a bunch together and lop off the tough/thick bottom an inch or so.
  • Spread out the asparagus in a single layer on a rimmed baking sheet. Pat it as dry as you can, as you don't want any water to "steam" the asparagus in the oven.
  • Begin by generously drizzling olive oil all over the asparagus and then sprinkle the asparagus generously with kosher salt and freshly ground black pepper.
  • Roast the asparagus for about ten minutes. The secret here is for the oven to be very hot so the asparagus can begin to brown on the outside without overcooking and getting too flimsy. You want the finished asparagus to still have a bite to it. Enjoy!

PROSCIUTTO WRAPPED ASPARAGUS WITH GARLIC AND HERB CHEESE

Prosciutto Wrapped Asparagus with Garlic and Herb Cheese image

This low carb appetizer uses fresh asparagus that is paired with a garlic and herb cream cheese and wrapped in salty prosciutto and baked until tender. Perfect as a side dish or finger food at your next cocktail party.

Provided by Debi

Number Of Ingredients 5

12 Organic Asparagus Spears, slightly trimmed and peeled
4 slices Prosciutto
4 oz. Garlic and Herb Cheese (I used Boursin found in the cheese section of your market)
olive oil to coat
Balsamic Glaze to drizzle

Steps:

  • Begin by cutting about 1/2″ off the bottom of the asparagus or any unsightly trunks. Blanch the asparagus by boiling it in a large skillet over high heat in enough water to cover it by 1″. Boil rapidly for 1 minute. Remove the asparagus and immediately plunge in ice water. Dry with paper towels.
  • Spread a thin layer of softened (room temperature) cheese over the slices of prosciutto (this can get messy so start with a little and add as you go).
  • Bundle 3 asparagus spears together and wrap with the prosciutto like a candy cane or on an angle twisting up as you go.
  • Place them on a baking sheet with parchment paper sprayed with cooking spray.
  • Using a brush (or fingers) moisten the exposed asparagus with a little olive oil. This will help prevent them from drying out while cooking.
  • Bake for 15 minutes at 400 F on the middle rack. They are done when a fork just pierces thru the thickest part of the asparagus. Be careful not to overcook.
  • Place on a platter and lightly drizzle with balsamic glaze if desired.
  • These can be served, hot, room temperature or cold.

  • Preheat the oven to 400°. In a large bowl, toss the asparagus with 1 tablespoon of the olive oil and season with salt and pepper. Arrange the asparagus in a single layer on a rimmed baking sheet and roast for 20 minutes, until tender and browned in spots.
  • Reduce oven temperature to 350°. On a parchment paper–lined baking sheet, arrange the slices of prosciutto and bake for about 10 minutes, until crispy.
  • Meanwhile, in an enameled cast-iron casserole, heat the remaining olive oil and cook the onion over moderately high heat until softened, 8 to 10 minutes. Add the roasted asparagus, chicken stock, arborio rice and nutmeg and bring to a simmer. Cover and cook the soup until the rice is very soft, about 20 minutes.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and puree, then return to the casserole. Add the lemon juice and season with salt and pepper. Ladle the soup into bowls and garnish with shards of the crispy prosciutto.

  • Place the asparagus on the sheet and drizzle with the olive oil. Sprinkle with salt and pepper. Roast for 20 minutes, until the spears are tender.
  • While the asparagus is roasting, make the cheese sauce. Heat a small saucepan over medium heat and add butter. Once sizzling, whisk in the flour and cook until golden and fragrant, about 1 to 2 minutes, to create a roux. Add the milk and stir constantly until slightly thickened, then reduce the heat to low and stir in the fontina. Stir until melted, then whisk in the salt, pepper and nutmeg.
  • The asparagus should be finishing now, so you can use the same sheet pan. Place the slices of bread on the sheet. You can spread just 2 or all 4 of the slices with Dijon mustard if you wish – it’s your call. Layer 3 slices of prosciutto each on 2 slices of bread. Top the prosciutto with a few asparagus spears. On the other 2 slices, drizzle on some of the fontina cheese sauce. Sprinkle that with a bit of the shredded gruyere. Sandwich the pieces together to create 2 sandwiches.

  • Place the asparagus on a baking sheet and drizzle with olive oil, salt and pepper. Toss to evenly coat and roast for about 10 to 15 minutes or until crispy. Remove from oven and allow to cool completely and cut them in half.
  • Work with one sheet of puff pastry at a time, keeping the other one in the fridge until ready to use. Cut each sheet into 4 long triangles. Spread with a bit of mustard (at the thickets part of the triangle). Sprinkle with a bit of cheese, a prosciutto slice on each, and a few pieces of asparagus (cut in half). Roll the croissants into tight logs, starting at the widest part and rolling down towards the thin pointed edge. Place point side down, on a baking sheet lined with parchment paper. Repeat with the second puff pastry sheet. You should get 8 croissants in total.
  • Brush them with egg wash and bake for about 25 to 30 minutes or until golden brown and flaky. Allow to cool slightly before serving. These can be made in advance and stored in the freezer until ready to bake. Place the frozen croissants on a baking sheet (no need to thaw) and brush with egg wash. Bake for 35 to 40 minutes, if frozen. Enjoy!
