Roast red wine lamb with Italian beans image

Good roast lamb is hard to beat, Lesley Waters's recipe gives it new flavour

Provided by Lesley Waters

Categories     Dinner, Main course

Time 1h45m

Number Of Ingredients 13

2kg leg of lamb
4 garlic cloves , sliced
8 good sprigs thyme
5 tbsp olive oil
half a bottle red wine
zest 1 lemon
1l hot lamb stock
3 red onions , each cut into 6 wedges
2 tbsp balsamic vinegar
2 rosemary , needless roughly chopped
100g SunBlush tomato , drained and roughly chopped
3 x 400g cannellini beans
handful flatleaf parsley , roughly chopped

Steps:

  • Using a sharp knife, cut small slashes all over the lamb, then push a slice of garlic into each. Put half the thyme, 3 tbsp olive oil, wine, lemon zest and a good grinding of black pepper into a large freezer bag. Addthe lamb, tie the bag tightly and refrigerate for at least 4 hrs, preferably overnight.
  • Heat oven to 220C/fan 200C/gas 7. Put the rest of the thyme into the bottom of a roasting tin then lift the lamb out of the marinade and sit on top of the thyme. Roast for 20 mins, then toss onions into the pan, drizzle with a little oil, then turn the oven down to 190C/fan 170C/gas 5. Roast for 15 mins/450g for medium. Meanwhile, strain the marinade into a pan, add most of the stock and boil until reduced by two thirds (this will take about 20 mins). Set aside. Gravy can be made ahead or the day before if necessary, as long as the meat has marinated for 4 hrs.
  • Once the lamb is ready, take out and rest on a board, wrapped in a tent of foil to keep warm. Set the onions aside in a bowl. Put the roasting tin onto a low heat and add the balsamic vinegar to the tin with a splash more stock and scrape all the meaty bits from the bottom. Tip into the jug with the gravy.
  • For the beans, add 2 tbsp oil to the roasting tin. Add the rosemary and tomatoes, and fry for 1 min until the rosemary smells aromatic. Tip in the beans, the red onions and the final splash of stock, then warm through. Season, then stir in the parsley just before serving. Serve on a platter, topped with the lamb.

ROAST LEG OF LAMB WITH RED WINE GRAVY

Roast Leg of Lamb With Red Wine Gravy image

Although I personally prefer my lamb done Greek-style with lots of garlic and oregano, this way of preparing it is nice also. I make shepherd's pie from the leftover meat and gravy.

Provided by Irmgard

Categories     Lamb/Sheep

Time 2h30m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 (4 lb) short-cut leg of lamb
3 cloves garlic, slivered
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon dried rosemary
1 small onion, minced
1/2 cup red wine
1 cup beef stock
1 tablespoon cornstarch
1 teaspoon tomato paste
salt and pepper

Steps:

  • Using a sharp knife, remove the thin membrane and most of the fat from the lamb.
  • Cut about 25 tiny slits all over the lamb; insert the garlic slivers.
  • Combine the oil, lemon juice and rosemary; brush over the lamb.
  • Let stand at room temperature for 30 minutes.
  • On a greased rack in a roasting pan, roast the lamb in a 325 degree F oven for 1-3/4 to 2 hours, 25 to 30 minutes per pound, or until the meat thermometer registers 140 degrees F for rare or 160 degrees F for medium.
  • Remove the lamb to a platter; cover loosely with foil and let stand for 15 minutes.
  • To make the gravy, skim the fat from the pan.
  • Add onion and cook over medium heat, stirring often, for 4 minutes or until softened.
  • Pour in the wine and bring to a boil over medium-high heat; boil for 1 minute, stirring to scrape up the brown bits.
  • Add the stock and return to the boil; cook 2 to 3 minutes or until reduced to about 1 cup.
  • Mix the cornstarch with 1 tablespoon water; stir into the stock mixture and cook, stirring, for 1 minute or until thickened.
  • Blend in the tomato paste.
  • Taste and adjust the seasoning with salt and pepper.

ROASTED LAMB SHANKS WITH RED WINE,TOMATO & GARLIC RISOTTO

Roasted Lamb Shanks With Red Wine, tomato & Garlic Risotto image

This is a great one dish meal--you basically throw it all in the oven and it cooks itself. Don't be afraid of the amount of liquid used as a lot evaporates & a lot is soaked up by the rice. You can also add some whole fresh tomatoes to roast alongside the lamb if you like.

Provided by Mandy

Categories     Rice

Time 2h45m

Yield 4 serving(s)

Number Of Ingredients 12

4 lamb shanks, frenched
1 cup arborio rice
2 carrots, peeled and diced
2 stalks celery, trimmed and sliced
425 g crushed tomatoes or 425 g diced tomatoes
1 teaspoon mild chili pepper, minced
2 cups beef stock
1 cup red wine
2 teaspoons dried rosemary
2 garlic cloves, crushed
water or stock
2 tablespoons fresh parsley, chopped

Steps:

  • Roast lamb shanks at 200 C in a roasting pan for approx 30 minutes.
  • Remove shanks from pan and drain fat from pan then add rice. Sprinkle carrots & celery over rice.
  • Mix chili, garlic, stock, tomatoes, wine & rosemary together and pour over rice. (This mixture could be used as a marinade for the lamb prior to cooking).
  • Place shanks on top of rice with tomatoes. Cover & cook at 150 C for approx 2 hours.
  • Check after an hour or so and add more liquid if necessary.
  • Serve garnished with chopped parsley.

  • Clean the lamb shoulder of membranes and fat, if any. Make 10-12 incisions with a knife and spike the meat with garlic cloves. Mix the olive oil, lemon juice, honey and rosemary together and brush the lamb thoroughly with this sauce. Leave it in a covered container to sit for awhile to get seasoned.

Meanwhile, prepare the wine sauce by frying the chopped onion in a little oil until soft. Pour in the wine, bring to a boil until it begins to evaporate and pour in the broth.
  • Boil until the sauce is reduced to 1 cup. Dilute the corn flour with a little water and thicken the sauce with it. Add tomato paste and spices to taste. Stir and serve a portion of lamb, covered with wine sauce.

  • Prepare lamb: Preheat oven to 325 degrees F. Trim fat from meat. Using a paring knife, cut 1/2-inch-wide pockets about 1 inch deep in the meat at 1-inch intervals. (These pockets allow flavors to better penetrate the meat.) Place meat, fat side up, on a rack in a shallow roasting pan. Season lamb with lemon-pepper seasoning. Pull small bunches of leaves from the rosemary sprig. Push slivers of garlic and rosemary leaves into the pockets in the meat. Insert a meat thermometer in thickest portion of meat.
  • Roast lamb, uncovered, in preheated oven for 2 to 2 1/4 hours or until meat thermometer registers 140 degrees for medium-rare doneness or 155 degrees for medium doneness. Cover and let stand 15 minutes before carving. (The meat's temperature will rise 5 degrees during standing time.)
  • Meanwhile, prepare sauce: In a medium saucepan, cook shallots in 1 tablespoon of the butter over medium heat until tender, about 3 minutes. Stir in preserves until melted. Stir in wine. Bring to boiling. Boil gently, uncovered, for 15 minutes or until slightly thickened and reduced to 1 1/3 cups. Whisk in the remaining 1 tablespoon butter. Remove from heat. Stir in lemon peel, salt and pepper. Serve warm sauce with lamb.
