1/2 cup kosher salt
1/2 cup packed light brown sugar
1 tablespoon black peppercorns
1 tablespoon coriander seeds
2 cups warm water
6 cups cold water
1 (3 1/2-pound) center-cut boneless pork loin
2 cloves garlic, minced
2 tablespoons olive oil, divided
1 tablespoon salt
1/2 teaspoon freshly ground pepper
2 teaspoons chopped fresh thyme leaves
2 teaspoons chopped fresh rosemary leaves
1 tablespoon olive oil
1 cup dried prunes, halved
1 pound pearl onions, peeled
1/3 cup dry white wine
1 cup pineapple juice
Salt and freshly ground black pepper

Steps:

  • For the brine: Combine the salt, brown sugar, peppercorns, coriander seeds, and 2 cups warm water in a large bowl. Stir until the salt dissolves. Add 6 cups cold water. Add the pork, cover, and refrigerate overnight (the pork should be submerged in the liquid).
  • Preheat the oven to 400 degrees F.
  • For the herb rub: Mix the garlic, olive oil, salt, pepper, thyme, and rosemary in a small bowl. Remove the pork from the brine and pat it dry (discard the brine). Spread the herb mixture over the pork loin, making sure you coat all sides of the loin.
  • For the pork: Heat the olive oil in a medium, heavy saute pan over high heat. Add the pork and sear until browned, 4 minutes. Carefully turn the pork over and sear until browned, another 4 minutes. Meanwhile, add the prunes and pearl onions to a 10 by 7 by 2-inch glass baking dish, creating a bed for the loin. Transfer the seared pork loin to the baking dish (making sure the loin fits in the baking dish, leaving a 1-inch border on every side).
  • Add the wine to the same saute pan used to sear the pork and cook, scraping the bottom of the pan to remove the browned bits, until almost evaporated, about1 minute. Stir in the pineapple juice and remove from the heat. Season with salt and pepper. Pour the mixture over the pork. Season the prunes and onions with salt and pepper.
  • Place the pork in the oven and roast until a thermometer inserted into the center registers 160 degrees F, about 1 hour, basting with the pan juices every 20 minutes. Transfer the pork to a cutting board, tent with foil, and let it stand for 10 minutes. Slice the pork into 1/4 to 1/2-inch thick slices and arrange on a platter. Top the pork slices with the pearl onions, prunes, and sauce.
  • Cook's Note: In place of a 3 1/2-pound pork loin, you can use 2 (1 1/4-pound) pork tenderloins. The total cooking time will be about 1 hour.

  • Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix honey, Dijon mustard, and black pepper together in a bowl until texture of a paste.
  • Heat a cast iron skillet over medium-high heat. Cook pork loin in the hot skillet until browned on all sides, about 5 minutes. Transfer pork loin to a baking dish. Spread honey paste over entire pork loin. Spread pineapple chunks around pork loin and sprinkle salt over pork loin.

1 pound lean pork
1 tablespoon soy sauce
1 tablespoon sweet vermouth
1 teaspoon minced garlic
1 teaspoon minced ginger
4 tablespoons oil, divided, plus 4 cups oil, for deep frying
1/2 cup cornstarch
1/2 cup diced red and yellow bell peppers
2 tablespoons diced onion
Strips of green onion, for garnish
Toasted sesame seeds, for garnish
1/2 cup ketchup
1/2 cup vinegar
1/2 cup water
2 teaspoons soy sauce
1 cup sugar
1/4 cup orange marmalade
1 1/2 teaspoons minced ginger
1 teaspoon minced garlic
1/4 teaspoon hot pepper sauce
2 tablespoons pineapple juice
1/2 cup chopped canned pineapple
4 tablespoons cornstarch mixed with 3 tablespoons water, for thickening

Steps:

  • Cut pork into bite-size pieces and marinate for 30 minutes in mixture of soy, vermouth, garlic, ginger, and 2 tablespoons oil. Set aside.
  • Meanwhile, make the sweet and sour sauce:
  • In a medium saucepan, combine all ingredients except the cornstarch mixture, blend well and bring to a boil. Add cornstarch mixture. Reduce heat and simmer, stirring frequently until thickened. Be sure and bring your sauce to a boil before adding the cornstarch, otherwise the sauce may retain an unpleasant starchy taste.
  • Heat oil in a Dutch oven to 350 degrees F.
  • Remove pork pieces from marinade and roll in cornstarch to coat well. Deep fry in hot oil until golden brown and crispy.
  • In a large saute pan, heat 2 tablespoons oil on medium-high heat. Stir-fry red and yellow pepper and diced onion for 2 minutes, then add sweet and sour sauce and fold in fried pork. Let simmer for 2 minutes, arrange on serving platter and garnish with long strips of green onion and toasted sesame seeds.

1 (2 lb) boneless pork loin
1 (20 ounce) can pineapple slices in juice
3/4 cup light corn syrup or 3/4 cup dark corn syrup
1/3 cup soy sauce
1/3 cup thinly sliced green onion
1 1/2 tablespoons minced gingerroot
3 cloves garlic, minced and pressed
1/2 teaspoon dry mustard

Steps:

  • Drain pineapple and reserve ¾ cup juice.
  • In medium bowl, stir together corn syrup, reserved pineapple juice, soy sauce, green onion, ginger, garlic and mustard.
  • Add pork and turn to coat well.
  • Cover and refrigerate at least 6 hours or overnight, turning occasionally.
  • Drain and reserve marinade.
  • Place pork on rack in foil-lined roasting pan.
  • Roast in 375 degrees oven, brushing frequently with reserved marinade about 1-½ hours or until temperature in meat thermometer reaches 170 degrees.
  • PINEAPPLE SAUCE: In small saucepan, bring 1 cup reserved marinade to boil.
  • In small bowl, stir together 1 tbsp cornstarch and 2 tbsp water until smooth and stir into marinade.
  • Stirring, bring to boil over medium heat and boil 1 minute.
  • Add 4 pineapple slices and heat until pineapple is hot and glazed.
  • Arrange remaining pineapple slices on a platter.
  • Place pork roast on pineapple and pour pineapple sauce over pork.
  • Serve warm.

⅓ cup Worcestershire sauce

Amazingly tender and flavorful sweet and savory Instant Pot Pulled Pork with pineapple, onion, garlic and lime juice makes an amazing taco or burrito bowl!

2 Tbsp avocado oil
½ red onion
3.5 to 4 lbs pork shoulder roast
1 ½ tsp sea salt
2 tsp ground cumin
2 tsp paprika
2 tsp garlic powder
½ tsp black pepper
1 ½ cups apple cider or apple juice
1 (20-oz) can pineapple chunks, undrained (use liquid)
3 Tbsp lime juice

Steps:

  • Plug in your pressure cooker and add the avocado oil. Press the Sauté button and wait a minute or two for it to heat up. Add the red onion and sauté, stirring occasionally, for 3 minutes.
  • Unwrap the pork shoulder from the netting (if applicable) and lay it out on a cutting board (it will likely be folded over on itself or contain multiple pieces, so lay it all out). Sprinkle all sides with sea salt, ground cumin, paprika, garlic powder, and black pepper.
  • Move the onions off to one side of the Instant Pot and place the pork shoulder in the IP. Allow it to brown 3 to 5 minutes, until it has a nice crisp on it. Flip the roast over and brown on the other side another 3 to 5 minutes.
  • Add the remaining ingredients to the Instant Pot. Secure the lid and select "Manual." Make sure it's set on the high pressure setting and adjust the time for 1 hour and 20 minutes. Leaving the steam valve closed, allow the Instant Pot to do its thing. Once the time is up, allow it to naturally release for at least 20 minutes (up to 1 hour).
  • Remove the lid, and transfer the roast to a cutting board. Use two forks to shred the meat (it should fall apart very easily! I often just use tongs to shred the pork).
  • Transfer the shredded pork back to the Instant Pot and allow it to sit in the juices until ready to serve.
  • Note: If you'd like crispy shredded pork carnitas, heat a skillet over medium-high heat on your stove top and add a thin layer of shredded pork. Pan fry it, stirring occasionally, until the pork becomes crispy and golden-brown.
  • Use pineapple shredded pork for tacos, burritos, burrito bowls, or serve as-is with side dishes.

15 slices approximately pineapple (1 fresh, or 2 large cans)
1 large sweet onion (sliced)
¼ cup teriyaki sauce
1½ teaspoon kosher salt (or to taste)
½ teaspoon black pepper

Steps:

  • Prepare a 13x9 baking dish by spraying with cooking spray.
  • Preheat oven to 350-degrees, or prepare an outdoor grill by heating to medium/high.
  • Layer a few slices of pineapple on the bottom of the dish.
  • Place the pork tenderloin pieces on top of the pineapple slices.
  • Drizzle the teriyaki sauce evenly over the pork tenderloin.
  • Season with salt and pepper.
  • Lay the slices of onion over the seasoned pork tenderloin.
  • Top with the remaining pineapple slices.
  • Place in a preheated oven for 40 minutes, or until an instant-read meat thermometer reads 145-degrees. OR place on top of two bricks on an outdoor grill, cover, and cook until an instant-read meat thermometer reads 145-degrees.
  • Once the pork reaches 145-degrees remove it and allow it to rest for 5 minutes before slicing.
  • Slice and serve the pineapple pork tenderloin by spooning the pan juices over the top, if desired.

1/4 cup rice vinegar

  • Cut rind from pineapple in wide strips; core and cut pineapple into bite-size pieces. Set aside rind and fruit.
  • In food processor, process garlic and fresh coriander, adding enough of the vinegar to make smooth paste. Mix in sugar, soy sauce, fish sauce, ground coriander, pepper, cumin, cloves, nutmeg and HALF of the cayenne and remaining vinegar.
  • Place pork in roasting pan; cover with spice mixture. Lay pineapple rind (rind side up) over top. Pour 1 cup (250 mL) water into pan; roast in 325°F (160°C) oven for 1-½ hours, adding 1/4 cup (60 mL) water at a time to pan, if necessary, as liquid evaporates.
  • Remove rind; continue to roast pork, basting every 10 minutes with pan juices, until meat thermometer inserted in centre registers 170°F (75°C), 30 to 45 minutes.
  • Transfer to serving platter; surround with pineapple pieces; sprinkle remaining cayenne and salt over pineapple; spoon pan juices over pork. Garnish with coriander stems and leaves, if desired.

8 ounces pineapple chunks
1 1/4 cups water
2 tablespoons molasses
1 teaspoon dry mustard
salt and pepper
2 tablespoons cornstarch
1 cup chicken stock
1 tablespoon wine vinegar (I used red wine vinegar)

Steps:

  • Preheat oven to 425°F.
  • In an overproof saucepan, heat oil. Brown the pork on all sides.
  • Let drain the pineapples and keep the juice.
  • In a bowl, mix pineapple juice and water. Incorporate the molasses, mustard, salt and pepper. Pour on the pork. Cover. Cook in oven for 1 hour. Baste with the cooking juice each 15 minutes. Remove the lid for the last 15 minutes of cooking.
  • Put the pork roast in a serving dish. Keep it warm.
  • In a bowl, mix the cornstarch with the chicken stock. Set aside.
  • Skim the cooking juice. Add vinegar and the cornstarch with chicken stock. Bring to boil stirring constantly. Add the pineapple chunks. Adjust seasoning. Pour on the slices of pork.

3 to 4 lbs pork shoulder*
2 tbsp coarse salt
2 tsp garlic powder
1-2 tsp cumin (to taste)
1 tsp pepper
1 large fresh pineapple**
16 oz pineapple juice***
1/2 cup pineapple juice
1/3 cup hoisin sauce
1/4 cup brown sugar

Steps:

  • Mix the dry rub and season the pork shoulder generously. This can be done the day before - store the meat covered and refrigerated and bring it to room temperature before you roast it.
  • Preheat the oven to 400 F.
  • Peel the pineapple and carve out 3 thickish rounds to place the pork shoulder on. Cut the rest into bite-sized pieces, cover with plastic and set aside.
  • Place the pineapple rounds in a roasting pan and lay the seasoned pork shoulder on top. Roast for 20 minutes and take it out. Add the pineapple juice.
  • Lower the oven temperature to 275-300 F depending on how strong your oven is. Continue to slow roast the pork. After one hour begin checking on the pork periodically - baste or brush it with the pan juices and turn it over as needed so that more of its surface is exposed to the dry heat of the oven. Once it begins to get tender but it is not quite fork tender add the pineapple chunks all around the meat and continue roasting. If needed add a bit of water to the pan.
  • Once the pork is very tender when pierced with a fork place it on a cutting board to rest for 5-10 minutes before you slice it. (Depending on the exact weight of the pork and your oven's calibration total roasting time will vary - from 2 1/2 to 4 hours).

3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup pineapple preserves
2 tablespoons stone-ground mustard
1/4 teaspoon dried basil
1 can (20 ounces) unsweetened pineapple tidbits, drained

Steps:

  • Preheat oven to 350°. Place roast on a rack in a shallow roasting pan, fat side up. Sprinkle with salt and pepper. Roast 25 minutes., Meanwhile, for glaze, in a small bowl, whisk preserves, mustard and basil; brush half the mixture over roast. Add pineapple to roasting pan. Roast 25-35 minutes longer or until a thermometer reads 145°., Remove roast from oven and brush with remaining glaze; tent loosely with foil. Let stand 10 minutes before slicing. Using a slotted spoon, serve pineapple with pork.
