FIRECRACKER VEGETABLE ROAST
From Cooking Light. It was presented as a vegetarian main dish, but I think it would make a nice side dish for meat-eaters. If you prefer a milder dish, remove the seeds and ribs from the jalapeno.

Steps:
- Preheat oven to 450.
- Place first 9 ingredients in a food processor, process til smooth.
- Combine basil mixture, cauliflower and next 5 ingredients, tossing well to coat. Arrange vegetables on a jelly roll pan coated with cooking spray.
- Bake at 450 for 15 min or til lightly browned. Add tomato and chickpeas; bake an additional 5 minutes. Serve with rice, if desired.

ROASTED EGGPLANT FIRECRACKER ROLLS

Steps:
- Cut the eggplant in half lengthwise. Brush the exposed flesh with 2 tablespoons of the olive oil. Lay the eggplant halves cut side down on a cookie sheet and roast in a 350 degree oven for about 35 minutes, until the fleshside of the eggplant is nicely browned and the eggplant has softened and fully cooked. Remove from the oven, and cool.
- When cool, use a large spoon to scoop the pulp away from the skin. Discard the skin. Heat the remaining 3 tablespoons of olive oil in a large skillet and saute the onion and red pepper until translucent. Add the garlic and continue to cook for another minute. Do not allow the garlic to brown.
- Add the eggplant pulp to this mixture and cook for another 6 to 7 minutes until all the flavors have mingled and the eggplant has begun to brown in the saute pan. Add the cayenne, cumin, salt, pepper, cilantro leaves and bread crumbs and mix well. Set aside to cool.
- Using 3 phyllo pastry leaves at a time, brush each leaf very lightly with melted butter and layer the sheets together. Cut the stack in half. Place 3 tablespoons of the eggplant mixture in a long thin strip in the center of each stack, so the phyllo can be rolled around it to form a cigar or firecracker shape. Roll the phyllo tightly, crimping the ends shut to seal in the filling. Repeat until all of the eggplant has been used. This will yield approximately 10 to 12 eggplant firecrackers. At this point, they can be held for up to 2 days, covered and refrigerated.
- To cook the firecrackers, saute in olive oil or lay them on a nonstick baking pan, and bake in a 375 degree oven until lightly browned, about 10 to 12 minutes. Serve hot.
FIRE CRACKERS
Seasoned saltine crackers that are simple to make and add a special touch for your dips and spreads at parties. I have had these on several occasions at bachelorette parties and babies showers but was never given the recipe. My sister had them recently at a birthday party, got the recipe, and passed it on to me. Unfortunately, I don't know who to credit for this, but it's certainly a keeper!!! Was initially concerned about the amount of oil, but hey, it's party food, RIGHT? I have used whole wheat crackers and different kinds of dip/dressing mixes successfully so have fun and get creative!

Steps:
- Line crackers on ends (like dominoes) in an air-tight container.
- In a small bowl, mix oil, dressing mix, peppers, and garlic powder.
- Stir until all ingredients are well mixed.
- Continue to stir to prevent the pepper from settling on the bottom of the bowl.
- Spoon mixture evenly over crackers, like drizzling icing on a cake.
- Close lid tightly and flip the container over every 5 minutes for about 20 minutes. Lightly shake back and forth to make sure all the crackers are coated.
- Store in a ziplock bag. Will keep for about a week -- if they last that long!

ROOSTER'S FAMOUS FIRE CRACKERS
'Originally developed at Roosters, a gourmet take-out, cookware shop, and cooking school in Greensboro, North Carolina, food scientist and best-selling cookbook author Shirley Corriher shared this recipe with us.' All the rage presently at CT Classic (you know who you are!). Copying here for posterity (and easier access). You can experiment with regular saltines, various seasonings and cheeses. - Arrange a rack in the center and preheat oven to 475ºF. Spray a 10x15-inch jelly-roll pan (not shiny) with nonstick cooking spray, and arrange crackers (about 40) in rows so that crackers are touching each other. One sleeve fits almost perfectly in this size pan.
- Sprinkle seasoning over crackers, then sprinkle with as many pepper flakes as you dare. About 5 flakes to a cracker is good. Finally, top evenly with grated cheese.
- Bake for 1 minute only. Turn the oven off. Leave in the oven overnight.The hot oven melts and browns the cheese, producing an even coating of crisp brown cheese. The fat from the cheese soaks inot the crackers and puffs them slightly. Leaving them in the oven dries them out well so that they are super crunchy. Break apart and eat or store. They keep well for several weeks sealed in an airtight tin.
- Note: From The Oregonian: The basic method, which we cribbed from an old recipe called Rooster's Famous Fire Crackers, calls for placing a layer of saltines on a baking sheet, sprinkling it with shredded cheese and spices, and baking briefly in a super-hot oven. The cheese melts, then crisps up as it cools. The spices -- any blend of you can dream up -- give it zing, and the results are addictive. After falling in love with Fire Crackers, we couldn't stop there. We tried different cheeses -- some mellow, some sharp -- and different spices, from barbecue rubs to lemon-dill. FIRECRACKER BURGERS
This is a great, easy burger recipe. The ground beef is combined with green chile peppers and beef bouillon. This makes them very moist and flavorful. Serve on hamburger buns with your favorite fixings.
