For those of you who are fans of C.S. Lewis, Chronicles of Narnia. A recipe for Turkish Delight originally from The Art of Candy Making Fully Explained, Compiled by Mrs. Sherwood P. Snyder(1915)

Number Of Ingredients 8

2 cups granulated sugar
1 cup cold water
1.5 (1/4 ounce) envelopes unflavored gelatin
1 orange, juice of
1 lemon, juice of
red food coloring, to your liking
1/2 cup chopped nutmeats
powdered sugar (confectioners)

Steps:

  • Soak gelatin in one-half cupful of the cold water for ten minutes.
  • Place sugar and remaining cold water in a saucepan and bring to the boiling point, add soaked gelatin and the juices of the orange and lemon.
  • Boil to 240°F on a candy thermometer, or soft ball stage(spoon a drop of this mixture into a glass of cold water and it should form a soft putty ball).
  • Add nutmeats and red food coloring until desired color is achieved.
  • Remove from heat and beat until creamy.
  • Turn into a bread pan that is lightly greased and placed in cold water to the depth of one inch.
  • Let stand until firm, turn out onto board, and cut into cubes. Roll in powdered sugar.

This is a creamy smooth and exotic tasting lil cocktail, tastes kind of like the creamy part of a rootbeer float, but there's no rootbeer, or more like a thin milkshake. It's delicious and my favorite Amarula cocktail.

2 ounces Amarula cream liqueur
2 ounces coffee liqueur
4 ounces low-fat milk
4 ounces Coke zero

Steps:

  • Blend Amarula liqueur and coffee liqueuer with milk (I use the Magic Bullet).
  • pour into a glass and top off with Coke Zero or the real thing if you prefer.

MICROWAVE ONLY COCONUT ICE

This recipe is great because it doesn't need an oven or pan, just a microwave! Great for a quick treat or last minute present or dish!

100 g butter
1/4 cup milk
4 cups icing sugar
1 1/2 cups desiccated coconut
1 teaspoon vanilla essence
red food coloring

Steps:

  • 1. Place icing sugar, milk and butter into a glass, microwave friendly bowl.
  • 2. Microwave on High for 3 to 4 minutes (or until the mixture has melted).
  • 3. Add vanilla essence and coconut.
  • 4. Beat mixture until thick.
  • 5. Divide the mixture in half and put the other half in another bowl.
  • 6. Add a few drops of red food colouring to one half of the mixture.
  • 7. Press white mixture (no food colouring) into a 20cm square tin.
  • 8.Leave until firm before pressing pink mixture (food colouring) on top.
  • 9. Refrigerate until firm then cut.

This is just the same as the first coconut ice, except this one has the right measures so it will set properly, you really will get a kick out of it, so please try it, it's very popular with all the family. UPDATED - now corrected

4 3/4 cups icing sugar
2 3/4 cups coconut
1 (375 g) can sweetened condensed milk
1 egg white, lightly beaten
pink food coloring

Steps:

  • Line a 19cm cake pan with foil.
  • Sift icing sugar into a bowl, stir in coconut then milk and egg white. stir until well combined.
  • Press half of mixture into pan,.
  • Tint remaining mixture pink.
  • Spread over first layer.
  • Refrigerate for several hours, preferably over night, once set cut into whatever size you wish.
  • Can be made a week ahead.

2 1/2 cups powdered sugar icing
1 1/2 cups desiccated coconut
1/2 cup pistachio nut, toasted and chopped (or other nut of choice)
1/4 cup dried apricot, chopped (optional)
100 g rose flavoured Turkish Delight, chopped (not chocolate coated)
200 g sweetened condensed milk
1 egg white, lightly beaten
2 teaspoons rose water

Steps:

  • Grease a deep 19cm square cake pan and line base and 2 sides with baking paper, extending paper 5cm above pan edges.
  • Combine all of the ingredients in one large bowl and mix well.
  • Using your hands is easiest!
  • Press mixture evenly over the base of the prepared pan.
  • Cover and refridgerate for several hours until firm.
  • To serve, cut into bite sized pieces.
  • Decorate dish with unsprayed rose petals if you can get some.
