CRANBERRY WALNUT MUFFINS

1 1/2 C all purpose flour
3/4 C granulated sugar
1/2 C chopped walnuts
1/2 C old fashioned oats
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 C pumpkin puree
1/2 C coconut oil, melted (needs to be in liquid form)
2 large eggs
1 tsp vanilla extract
1 1/4 C fresh cranberries
1 tbsp all purpose flour

Steps:

  • Preheat your oven to 350 degrees. Lightly grease and flour a 12 cup standard muffin pan. You can also line with cupcake papers. NOTE: this recipe makes 14 muffins so you can use 2 muffin pans or you can reuse the pan you used for the initial batch of muffins.
  • In a large mixing bowl, whisk together the flour, sugar, cinnamon, salt, baking soda, baking powder, nutmeg, walnuts and oats. In another mixing bowl, whisk together the eggs, vanilla extract, pumpkin puree, coconut oil and pumpkin puree. Pour the wet ingredients into the dry ingredients and gently mix until incorporated. The batter will be thick and lumpy.
  • Toss the cranberries in 1 tbsp of flour to coat. Carefully fold into the muffin batter.
  • Fill each muffin cup 2/3 full.
  • Bake at 350 for 20-25 minutes, or until slightly golden and a toothpick inserted into the center of one of the muffins comes out clean. If using fresh berries, reduce your baking time by about 5 minutes.
  • Cool on a wire rack for 15-20 minutes before serving.

1 1/2 cups chopped fresh cranberries
1/4 cup white sugar
1 cup rolled oats
1 cup buttermilk
1/3 cup shortening
1/2 cup light brown sugar
1 egg
1 cup whole wheat pastry flour (or whatever flour you have)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt

Steps:

  • Combine the chopped cranberries and white sugar.
  • Set aside.
  • In a second bowl, combine the oats and buttermilk.
  • Allow the mixture to stand for 45 min-1 hour.
  • In a large bowl, mix the shortening, brown sugar, and egg.
  • Stir the baking powder, baking soda, salt and flour together.
  • Then add the dry mixture into the wet, alternating with additions of the oat-buttermilk mixture.
  • Combine everything until just moistened.
  • Fill greased muffin tins 3/4 full.
  • Bake in a 400 degree oven for 25 minutes, or until a tester comes out clean.

2 cups all-purpose flour
3/4 cup packed brown sugar
2 teaspoons baking powder
2 large eggs
2/3 cup orange juice
1/3 cup vegetable oil
1 cup cranberries, coarsely chopped
1 cup chopped pecans

Steps:

  • preheat oven to 375°. In a large bowl, combine flour, brown sugar and baking powder. In another bowl, beat eggs. Add orange juice and oil; stir into the dry ingredients just until moistened (batter will be lumpy). Fold in cranberries and pecans. Spoon into 12 greased or paper-lined muffin cups (cups will be almost full). Bake until golden brown, 20 minutes. Remove from pan to cool on a wire rack.

¼ cup milk, at room temperature
1 tablespoon white vinegar
½ cup brown sugar
¼ cup white sugar
½ cup butter, softened
2 eggs, at room temperature
1 egg yolk, at room temperature
1 tablespoon vanilla extract
1 ½ cups brown rice flour
1 cup white rice flour
½ cup ground flax seeds
4 tablespoons baking powder
1 teaspoon xanthan gum
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup dried cranberries
½ cup chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 18 muffin cups with cooking spray or line with paper liners.
  • Place milk and vinegar in a small bowl; stir and set soured milk aside.
  • Beat brown sugar, white sugar, and butter together in a bowl using an electric hand mixer or stand mixer until creamy and smooth. Add soured milk, eggs, egg yolk, and vanilla extract; beat until smooth, scraping down the sides of the bowl as needed.
  • Mix brown rice flour, white rice flour, flax seeds, baking powder, xanthan gum, cinnamon, and salt together in another bowl. Stir slowly into creamed butter mixture until just mixed. Stir in cranberries and walnuts.
  • Spoon batter into the prepared muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes.

2 seedless oranges
1 cup cranberries, coarsely chopped
1 cup walnuts, chopped (about 4 ounces)
2 cups flour
1 tablespoon baking powder
2/3 cup sugar
1/3 cup butter, unsalted (melted and cooled)
1 egg
1 teaspoon sugar

Steps:

  • Preheat oven to 400 degrees F. arranging a rack in the center of the oven. Generously grease 12 muffin cups. Remove zest from the oranges. Mince the zest and measure out 1 tablespoon plus 1 teaspoon. Squeeze the juice from the oranges and reserve 2/3 cup.
  • In a medium bowl, toss together the cranberries, nuts and reserved orange zest. In a large bowl, combine the flour, baking powder and the 2/3 cup sugar and whisk together.
  • In a medium bowl, combine the reserved orange juice, melted butter and egg. Whisk until blended. Pour the liquid over the flour mixture and stir lightly 3 or 4 times with a rubber spatula, to combine. Add the cranberry-nut mixture and distribute evenly, using as few strokes as possible (the batter will not be perfectly smooth).
  • Quickly divide the batter among the prepared muffin cups. Sprinkle a pinch of the 1 teaspoon sugar over the top of each muffin. Bake 25 minutes in preheated oven or until golden. Let muffins rest in pan for about 2 minutes. Using a blunt knife, ease the muffins out onto a wire rack and let cool 15-20 minutes.
