- Line an 8-inch square baking dish with aluminum foil and spray generously with nonstick cooking spray. Combine the cereal with 1 bag marshmallows in a large bowl; set aside.
- Melt the butter in a large heavy-bottomed pot or stockpot over medium-high heat. Add the 3 remaining bags of marshmallows and cook, stirring occasionally, until they are fully melted, about 5 minutes. Remove the pan from the heat and stir in the vanilla extract. Fold half the cereal mixture into the melted marshmallows until well-coated; fold in the remaining cereal mixture.
- Scoop the mixture into the prepared pan. Spray another piece of foil with cooking spray and use it to cover the mixture, pressing gently on the foil to evenly spread the mixture out, getting it evenly into the corners and flattening the top (you can dome the top slightly if you have extra mixture). Place in the refrigerator to set, around 1 hour. Cut into 2-inch squares and serve. Leftovers keep in an airtight container at room temperature, 2 days; or wrap in a freezer bag and freeze.

- Melt 8 tablespoons of butter in a large saucepan on medium-low heat. We like soft and buttery Rice Krispie Treats so we use more butter in our recipe than most other recipes out there. Trust us, it makes a difference in the taste.
- Don't melt the butter too fast or on too high a heat.
- Add 8 cups of Mini Marshmallows to the melted butter.
- Stir the marshmallows so they are completely covered in the melted butter.
- On medium-low heat, stir the marshmallows continually until they are completely melted.
- As soon as the marshmallows are melted, take the pan off the heat. Marshmallows that are melted too quickly or heated too long can make your Rice Krispie Treats too hard and crunchy.
- Add 8 cups of Rice Krispie Cereal to the marshmallow mixture.
- Gently fold the Rice Krispie Cereal into the marshmallow mixture.
- Working quickly, keep folding the mixture until every piece of cereal is covered in the marshmallow mixture.
- Spoon the mixture into a 9x13" pan. You don't need to grease the pan, the butter in the Rice Krispie Treats will allow the squares to easily release from the pan.
- Lightly press the mixture into the pan. You don't want to press the mixture down too compactly, just smooth the top with a spatula or butter your fingers and pat down the top.
- Let the Rice Krispie Treats cool and then cut them into squares. That's it. So very easy. You'll be done in less than 15 minutes!

OREO RICE KRISPIES
Steps:
- Place a heavy-bottomed pot on the stove over low heat. Inside the pot, put the butter to melt.
- When the butter is melted, add half of the marshmallows and the vanilla essence. Stir occasionally.
- Cook the marshmallows on low heat for about five minutes.
- Cotinue cooking until all the marshmallows have melted and the marshmallow and butter mixture is smooth.
- Then add three cups of the puffed rice, the chopped oreo cookies, the chocolate chips, and the rest of the marshmallows. Stir for a couple of minutes with a spoon until all the ingredients are combined.
- Lightly grease a square or rectangular non-stick pan, preferably silicone. We use a 25 cm square mold. Pour the mixture on top of the mold. Spread it out with a spatula. Then, add the remaining cup of puffed rice on top, distribute well. Compact the mixture, pressing it down, you can use your hands, or a potato masher.
- Take the mold to the refrigerator for at least an hour. After the mixture has hardened, remove it from the mold, and cut it into regular pieces with a bread knife.
- Note: When the krispie treat mixture is still hot it is sticky, and a bit difficult to handle. One trick I usually use when making krispies treats is to reserve a cup of puffed rice for when I put the mixture in the mold. I sprinkle all the puffed rice on top, and compact the mixture with a kitchen spatula. This helps the mixture not stick from the spatula.

CHRISTMAS RICE KRISPIE TREATS

- Grease a 9x13 baking pan. Set aside.
- Melt the marshmallows and butter in a large saucepan.
- Remove from heat and stir several drops of green food coloring until you achieve the shade of green you'd like. (Keep in mind that the shade will look slightly lighter after adding in the rice krispie cereal).
