Baked Ziti with Spinach image

Baked ziti is a favorite comfort dish in my home! Adding spinach is a quick and easy way to get more leafy greens into your family's diet without complaints.

12 oz uncooked ziti (wheat or gluten-free)
28 oz crushed tomatoes (I recommend: Tuttorosso)
1 tsp olive oil
3 cloves garlic (minced)
10 oz package frozen spinach (thawed)
1 tsp oregano
2 tbsp chopped fresh basil
kosher salt and fresh pepper to taste
8 oz fat-free ricotta
1/4 cup grated Parmesan cheese
2 cups shredded part skim mozzarella ((8 oz total) (I recommend: Polly-O))
olive oil cooking spray

Steps:

  • Preheat oven to 375°F. Spray a 9x13-inch baking pan with oil spray.
  • In a large pot of salted water, cook pasta according to instructions until al dente (I like to under-cook it 3 or 4 minutes as it will cook more in the oven). Drain and return to pot.
  • Meanwhile, in a medium saucepan, add olive oil and sauté garlic. Add chopped spinach, salt, pepper and crushed tomatoes. Season with basil, oregano, salt and pepper and cook 5 minutes.
  • Add sauce to the pasta and combine. Add half of the mozzarella, Parmesan cheese and ricotta. Mix well then transfer to the baking pan.
  • Pour the pasta mixture into the prepared pan and spread evenly. Top with the remaining mozzarella and cover with foil.
  • Bake for 30 minutes, or until mozzarella is melted and the edges are lightly browned. Let it cool 5 minutes before serving.

2 tsp. olive oil
4 cloves garlic (finely chopped)
1 (10-oz.) bag raw spinach
1½ cups whole peeled tomatoes (like San Marzano or Cento) (crushed or pureed in blender or food processor. )
¼ cup finely chopped basil leaves
½ tsp. sea salt (or Himalayan salt)
¼ tsp. ground black pepper
1 dash crushed red pepper flakes ((optional))
¾ cup part-skim Mozzarella cheese (divided use)
¼ cup grated Parmesan cheese
1½ cups part-skim ricotta cheese
Nonstick cooking spray

Steps:

  • Cook pasta according to package directions; drain. Set aside.
  • Preheat oven to 375º F.
  • Heat oil in large nonstick skillet over medium-high heat.
  • Add garlic; cook, stirring frequently, for 1 minute.
  • Add spinach, tomatoes, and basil. Season with salt and pepper; cook, stirring frequently, for 4 to 5 minutes.
  • Combine spinach mixture, pasta, red pepper flakes (if desired), ½ cup mozzarella cheese, Parmesan cheese, and ricotta cheese in a large bowl; mix well.
  • Place in a 2½ to 3-quart casserole that is lightly coated with spray. Bake, covered with aluminum foil, for 35 minutes. Remove foil.
  • Top evenly with remaining ¼ cup mozzarella cheese. Bake an additional 10 to 15 minutes, or until cheese is bubbly.

Traditional baked ziti is gussied up with cremini mushrooms, baby spinach and lots of basil and parsley.

Kosher salt and freshly ground black pepper
4 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand
One 15-ounce can whole plum tomatoes, crushed by hand
4 large sprigs fresh basil plus 1 cup chopped fresh basil
1 cup chopped fresh flat-leaf parsley
1 pound cremini mushrooms, sliced
6 cups baby spinach
1 pound dried ziti
3 cups shredded mozzarella
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil sprigs and stir in the chopped basil and parsley. Season with salt and pepper.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms and 1/4 teaspoon salt and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Add the spinach and cook, stirring, until just wilted. Transfer to a large bowl.
  • Cook the ziti in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the tomato sauce, half of both the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

This recipe lasts my family of four for at least three meals when served with a dinner salad and crusty Italian bread. It is wonderful Italian comfort food.

1 (16 ounce) package ziti pasta
1 pound lean ground beef
1 medium onion, chopped
4 cloves garlic, minced, divided
2 (26 ounce) jars spaghetti sauce
1 tablespoon olive oil
12 ounces baby spinach
1 (16 ounce) container ricotta cheese
¼ cup shredded Parmesan cheese
salt to taste
6 ounces provolone cheese, sliced
1 (8 ounce) package shredded mozzarella cheese
2 tablespoons shredded Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • Meanwhile, heat a large skillet over medium heat. Cook and stir ground beef, onion, and 1/2 of the garlic in the hot skillet until beef is until browned and onion is wilted, 5 to 7 minutes. Add spaghetti sauce and simmer for 15 minutes.
  • While the meat sauce is simmering, heat oil in a skillet over medium heat. Add remaining garlic and cook until fragrant, about 1 minute. Add spinach and cook, tossing occasionally, until wilted, about 2 minutes. Remove from the heat.
  • Mix ricotta cheese, 1/4 cup Parmesan cheese, and wilted spinach in a bowl. Season with salt.
  • Place 1/2 of the ziti in the bottom of a 9x13-inch baking dish and layer with 1/2 of the meat sauce. Spread provolone cheese on top to form a flat surface. Spread spinach mixture over top, then cover with remaining ziti and meat sauce. Top with 2 tablespoons Parmesan and sprinkle mozzarella over top.
  • Bake in the preheated oven for 30 minutes. Remove from the oven and let firm up for at least 10 minutes before serving.

2 (10 ounce) packages frozen chopped spinach
3 eggs, beaten
15 ounces ricotta cheese
1/4 teaspoon pepper
2/3 cup grated parmesan cheese
16 ounces ziti pasta, pasta-cooked
27 1/2 ounces pasta sauce
2 teaspoons oregano
12 ounces shredded mozzarella cheese

Steps:

  • Cook spinach as package directs, drain, cool and squeeze out well.
  • Add eggs, ricotta cheese, parm. cheese, and pepper. Mix well and set aside.
  • Combine cooked ziti with sauce and oregano. Place 1/2 ziti miture in lightly greased 13X9 baking dish, layered with cheese and spinach mixture. Add remaining ziti.
  • Cover with tin foil and bake at 375 degrees for 25 minute or until bubbly.

4 cups baby spinach
24 ounces marinara sauce
15 ounces ricotta cheese
2 cups shredded mozzarella cheese (divided)
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Italian seasoning

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a stock pot, bring salted water to a boil and add ziti. Cook to al dente according to package directions. Drain well.
  • In a large bowl (or the stock pot used to prepare your pasta), add cooked ziti, spinach, and marinara sauce. Toss to coat and set aside.
  • In a separate bowl, add ricotta cheese, parmesan cheese, salt, pepper, Italian seasoning, and half of your mozzarella cheese. Stir to combine.
  • In a 9x13 baking dish, add half of your ziti mixture and spread into an even layer. Next, add all of your ricotta mixture and spread into an even layer. Top with remaining ziti mixture. Sprinkle top of casserole evenly with reserved mozzarella cheese.
  • Bake, uncovered, for 30 minutes, or until cheese is melted across the top and casserole is bubbling around the edges.

1 cup chopped onion
1 cup chopped yellow bell pepper

10 ounces Italian-style diced tomatoes
4 cups Baby Spinach
1 1/4 cups cheddar cheese or 1 1/4 cups vegan cheddar cheese, divided

Steps:

  • Note: Tomato should contain basil, garlic, and oregano. Look for the canned version.
  • Preheat oven to 375°.
  • Cook pasta according to package directions but OMIT salt and fat. Drain well.
  • Heat the oil in a large heavy pan over medium high heat. Add onion and pepper then sauté 5 minutes. Add garlic to pan then sauté 2 minutes or until onion is tender.
  • Stir in tomatoes and bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally.
  • Add spinach to pan then cook, stirring frequently, for 30 seconds or until it wilts. Remove from heat.

1 (14.5 ounce) can Italian-style stewed tomatoes
⅛ teaspoon crushed red pepper flakes
4 ounces fresh spinach, washed and chopped
2 ounces cream cheese

Steps:

  • Bring a large pot filled with salted water to a boil. Add ziti and cook until tender but still firm, about 12 minutes.
  • Meanwhile, in a medium sized non-reactive pan, combine tomatoes and hot pepper flakes. Warm over medium-low heat, breaking up tomatoes if necessary.

8 cups ready-to-use spinach leaves (about 2/3 of 10-ounce package)
6 ounces mozzarella cheese, cubed
1 cup grated Parmesan cheese (about 3 ounces)

Steps:

  • Heat heavy large saucepan over medium-high heat. Add sausage, onion and garlic and sauté until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes.
