1 cup liquid egg substitute
4 eggs
1/4 cup nonfat milk
2 tablespoons chopped scallions
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped parsley
1/2 teaspoon ground black pepper
sea salt
1/2 lb asparagus, trimmed and cut into 1-inch pieces
1/4 cup water
4 tablespoons crumbed reduced-fat goat cheese
chives, for garnish

Steps:

  • In medium bow, whisk together the eggs and milk. Stir in scallions, thyme, parsley, pepper and salt.
  • Place asparagus and water in large microwaveable bowl. Cover with vented plastic wrap and microwave on high power for 4 minutes, or until crisp-tender. Stop and stire after 2 minutes. Drain, pat dry, and add to egg mixture.
  • Heat medium nonstick skillet coated wtih cooking spray over medium heat. Pour one-quarter of egg mixture into skillet, allowing it to cover the bottom of the pan. Cook for 2-3 minutes, or until bottom just begins to set. Sprinkle with 1 tsp of cheese. Add one-quarter of asparagus pieces. Cook for 5 minutes, or until eggs are almost set.
  • Using a large spatula, fold the omelet in half. Cook for 3 minutes or until omelet is golden and cheese is melted. Turn onto a plate and keep warm.
  • Coat skillet with cooking spray and repeat process with remaining ingredients to make 3 more omelets. Garnish with chives.

2 eggs
2 tablespoons nonfat milk
3 slices thin-sliced smoked lunch meat ham, chopped
1 teaspoon green onion, thinly sliced
1 dash black pepper
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Beat eggs and milk in small bowl with fork until blended. Add ham, onion, and pepper; mix well.
  • Spray an 8-in. nonstick skillet with cooking spray.
  • Pour egg mixture into skillet; cover. Cook on medium heat 6 minutes or until egg mixture is set but top is still moist.
  • Sprinkle cheese evenly onto half of omelet. Using spatula, fold egg mixture over filling; cover.
  • Remove from heat; let stand 1 minute.
  • Cut in half to serve.

Asparagus is one of my favorite vegetables any way you prepare it but wrapped in prosciutto, drizzled with olive oil and baked with cheese - oh my! This dish makes a beautiful presentation!

1 lb fresh asparagus spear, tough ends trimmed off
2 slices prosciutto, cut in 1-inch wide strips
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped roasted red peppers
1/4 cup crumbled goat cheese or 1/4 cup feta cheese

Steps:

  • Preheat oven to 450°F.
  • Line a 15-inch X 10-inch baking pan with foil.
  • Wrap asparagus spears in bundles of 3 or 4 spears with strips of prosciutto around the middle.
  • Place bundles in a single layer on baking pan tucking under ends of prosciutto.
  • Drizzle with olive oil; sprinkle with salt and pepper; top with roasted red peppers.
  • Bake for 8-10 minutes or until asparagus is crisp tender.
  • Sprinkle with cheese and continue baking for 5 minutes or until cheese is soft.

1/2 lb asparagus, trimmed
kosher salt
3 ounces fresh goat cheese, crumbled (about 1/3 cup)
2 teaspoons rinsed dried and finely chopped fresh tarragon or 2 teaspoons dill
fresh ground black pepper
1 tablespoon unsalted butter or 1 tablespoon vegetable oil
5 large eggs, separated
2 tablespoons flour

Steps:

  • Preheat oven to 375 degrees.
  • Blanch asparagus in skillet filled with boiling salted water for about 2 minutes or until crisp-tender. Drain, pat dry, and cut crosswise into 1/4-inch pieces.
  • Transfer to bowl and toss with goat cheese, tarragon, and salt and pepper to taste.
  • Melt butter in 10-inch nonstick skillet with heatproof handle; tilt pan to coat bottom with butter, then remove from heat.
  • Whisk egg yolks with the flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper until mixture is fluffy, about 3 minutes.
  • Beat egg whites with electric mixer until they hold soft peaks; fold into yolk mixture gently but thoroughly, and pour egg mixture into skillet, spreading it evenly.
  • Bake omelet in center of oven for 10 minutes, or until it is puffed and almost cooked through.
  • Spoon asparagus and cheese filling down the center, and with a spatula fold omelet in half to enclose filling.
  • Bake omelet in center of oven 2 minutes more, or until cheese is melted and omelet is cooked through.

3 stalks fresh asparagus
1/4 cup white mushroom, sliced
1/4 cup lowfat mozzarella cheese, shredded

Steps:

  • Boil 1" of water in large skillet. Add asparagus and cook, uncovered, just until tender-crisp.
  • Meanwhile, in a bowl, whisk together eggs, and water until completely blended.
  • Coat a 10" nonstick skillet with cooking spray. Heat the skillet over med-high feat until just hot enough to sizzle when a drop of water is added. Pour in the egg mixture. It should set immediately.
  • With an inverted pancake turner (I assume that means spatula), lift the edges as the mixture begins to set to allow uncooked portion to flow underneath.
  • When the top is set, fill one half of the omelet with asparagus, mushrooms and cheese.
  • With the pancake turner, fold the omelet in half over the filling.
  • Slide onto a serving plate, serve immediately.,.
