SOFT, CHEWY SUGAR COOKIES
I was never a huge sugar cookie fan until I went to a local bakery and bit into one of their frosted sugar cookies. It had a fudgy texture that complimented the harder frosting and sprinkles on top. So good! I've been on a hunt for such a cookie since. I haven't found the frosting yet, but here's a great cookie that delivers on texture and taste!

Steps:
- Cream shortening, butter, sugar; add eggs, lemon, vanilla and sour cream.
- Mix till creamy; add sifted dry ingredients: salt, soda, and flour.
- Chill for several hours or overnight. Roll into balls and flatten with bottom of sugar coated glass.
- Bake at 350°F just until the edges start turning color. Time will vary depending on how large and thick you made your cookies. It is important not to overbake if you want the texture to remain chewy and soft.
- Decorate as desired.

- Preheat oven to 375°F.
- In a large mixing bowl, beat together Crisco, sugar, brown sugar, eggs, water, vanilla and butter-flavored extract until well mixed.
- Add the flour, baking soda and salt to the mixing bowl and mix well.
- Cover and refrigerate dough for 30 minutes.
- Roll dough into 1 inch balls; slightly flatten and place on ungreased cookie sheet.
- Place in preheated oven and bake for 8-10 minutes or until light brown.

Steps:
- Stir together flour, baking powder and salt; set aside.
- In a large bowl, cream together butter and sugar until fluffy.
- Beat in eggs one at a time, then beat in vanilla.
- Gradually stir in dry mixture just until blended.
- Roll the dough into walnut-sized balls then roll in colored sugar.
- Refrigerate balls for at least 20 minutes or freeze until ready to bake.
- Place cookies 2" apart on an un-greased cookie sheet and flatten slightly with the palm of your hand.
- Bake in a 350°F oven for 8-10 minutes until lightly browned at the edges.
- Cool on cookie sheet for 5 minutes, then remove to cool on a wire rack.

SOFT SNICKERDOODLE COOKIES
These snickerdoodle cookies are so delicious, and they have the best texture. They are so fast to put together too! I actually got it from an old recipe that my Great Grandma had clipped out of a newspaper. Grandma always knows best!

- Preheat oven to 350°F.
- Mix softened butter, 1 1/2 cups sugar, 1tps of vanilla extract and eggs thoroughly in a large bowl.
- Combine flour, cream of tartar, baking soda and salt in a separate bowl.
- Blend dry ingredients into butter mixture.
- Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
- Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
- Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
- Coat by gently rolling balls of dough in the sugar mixture.
- Place on chilled ungreased cookie sheet, and bake 10 minutes.
- Remove from pan immediately.

Add the sugars and beat on medium-high speed until creamed and well combined, 2 to 3 minutes. Stop, scrape down the sides of the bowl, and add the egg, cream, vanilla, and beat on medium-high speed until light and fluffy, 4 to 5 minutes. Stop, scrape down the sides of the bowl, and add the flours, baking soda, salt, and mix until just combined, about 1 minute. Transfer dough to an airtight container and refrigerate for at least 3 hours, up to 5 days. Notes regarding the flour - solely using all-purpose flour will work, the cookies will not be as chewy or rise as well because bread flour creates chewier results and gives greater rise. Also, I live in a dry climate and only need 1 3/4 cups flour total but if you are in more humidity or your dough is very moist or loose, adding up to 1/4 cup of additional flour, for 2 cups total, is possible. These soft and chewy sugar cookies are a Christmas cookie staple! This no-chill dough sugar cookie recipe is full of simple ingredients and comes together quickly!

- Preheat oven to 350 degrees and line a baking sheet with parchment paper (or coat with baking spray).
- In a large bowl with a standing mixer or hand mixer, cream the butter and sugar together until light and fluffy, about 1 minute.
- Add in the egg, vanilla extract, and almond extract; beat until combined.
- Add in flour, baking soda, baking powder, and salt. Mix until just combined, making sure to scrape down the sides of the bowl every now and again.
- Roll dough into 1" balls, and roll in sugar.
- Place on baking sheet, about 2" apart. Bake for 10-11 minutes, or until cookies have set.
- Allow to cool.
- Enjoy!
- Feel free to frost them or cover them with a glaze, if desired.

- Preheat oven to 375°F.
- In a small bowl, stir together flour, baking soda, and baking powder; set aside.
- In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
