Originally I made these as muffins in the oven but I found that making them in the rice cooker they are moister and my kitchen doesn't get so hot.

cooking spray
1 cup all-purpose flour
⅓ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups bran flakes, crushed
1 cup skim milk
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground nutmeg
1 ½ teaspoons vanilla extract
1 egg
¼ cup olive oil
½ cup diced apple
½ cup diced banana
⅓ cup raisins

Steps:

  • Spray rice cooker bowl with cooking spray.
  • Mix flour, sugar, baking powder, baking soda, and salt together in a bowl. Combine bran flakes, milk, cinnamon, nutmeg, and vanilla extract together in a separate large bowl; allow bran flakes to slightly absorb the milk, about 5 minutes. Add egg and oil to bran mixture; stir to combine. Stir flour into bran mixture until just combined.
  • Gently fold apple, banana, and raisins into batter. Pour into sprayed rice cooker.
  • Cook in the rice cooker for 3 cycles or until a toothpick inserted in the center of the cake comes out clean, about 30 minutes.

Here's what you need: cream cheese, eggs, pancake mix, heavy cream, egg whites, granulated sugar, butter, powdered sugar

1 cup cream cheese
2 eggs
¾ cup pancake mix
⅔ cup heavy cream
2 egg whites
¼ cup granulated sugar
butter, melted
powdered sugar

Steps:

  • In a medium bowl, combine cream cheese, egg yolk, and pancake mix, whisk using a hand mixer until fully combined.
  • Add heavy cream in two parts, whisking well in between.
  • In a separate bowl, whisk egg whites until firm peaks form, then add granulated sugar in three parts, whisking well in between.
  • Gently fold egg whites into pancake mixture in three parts and stir until fully incorporated.
  • Grease rice cooker bowl with melted butter and add cheese cake mixture. Cook for 70 minutes.
  • Once cooked turn the cake out onto a plate, splinkle with powder suger.
  • Enjoy!

1/2 cup grated cheese
1/4 cup black olives or 1/4 cup green olives
bell peppers or dill pickle (what ever you decide)
1 can tuna or 1 can salmon (anything goes)
1 egg

Steps:

  • Have rice cooked add the ingredients you want mix altogether add s& p put into very small muffin tins, sprayed with Pam.
  • bake 400 for 10-15 minutes the cheese& egg will bond altogether.
  • let cool they are easier to get out this way.
  • Very good in lunches, appitizers I take them to parties.
  • (the rice when all mixed together should be moist but not mucky).
  • most of the time I do not measure just throw everything in I want adding more cheese or maybe an extra egg depending on the quantity of everything I've thrown in.
  • try it, you'll like it.

This is so easy to make and yet delicious. Even tough I do not like rice crispies at all I enjoy these muffins. I was acctually looking for a recipe like this here but could not find it so i posted my recipe here. In Iceland you will hardly find a potluck where these are not one of the treats. But don't be late as they are usually gone soon. Your kids will love these! Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe. Chilling time is not included in preparation time. Note 2#: I am not sure if i would call it "authentic" but it is very popular in Iceland and you will most likely find it at potlucks, birthday parties or other bigger come togethers. ¼ cup sugar
¾ cup milk
2 eggs
2 cups flour
3 ½ tablespoons matcha green tea powder
1 tablespoon baking powder
1.7 oz white chocolate
strawberry
blueberry

Steps:

  • Warm up milk until almost boiling.
  • In a bowl, put in the white chocolate and sugar, then pour over warm milk and mix until chocolate is melted.
  • Add 2 eggs and mix.
  • Add flour, green tea powder, and baking powder into the mixture. Pour into the rice cooker pan and cook for 1 hour.
  • Take the cake out from the pan and let it cool.
  • Glaze with melted white chocolate, then add the strawberries and blueberries.
  • Enjoy!
