4 whole eggs
1 1/2 cups sugar
1 cup fresh lemon juice
1 cup heavy cream
2 pre-baked piecrusts

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the eggs, sugar, lemon juice and heavy cream together in a bowl. Strain and skim any foam.
  • Pour into prebaked pie shells, and bake for about 15 to 20 minutes, or until the filling just sets, and center jiggles. Cool completely.

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, beat eggs until smooth.
  • Add milk to eggs, then the lemon juice and zest.
  • Mix until all ingredients are incorporated and mixture is smooth.
  • Pour into pie crust.
  • Bake pie for 15 minutes.
  • Cool completely.
  • Best served chilled.

whipped topping (optional)

Steps:

  • Preheat oven to 350°F.
  • Whip egg yolks with hand whisk until creamy.
  • Pour in condensed milk, stirring lightly to blend.
  • Add lemon juice. Mix well.
  • Pour into crust and bake for 8 minutes.
  • Option #1: Double the ingredients to fill crust completely. Allow to cool and top with whipped topping.

1 envelope unflavored gelatin
1/4 cup water
1/2 cup sugar
1/2 teaspoon lemon, rind of, grated
1 dash salt
1/2 teaspoon orange rind, grated
4 egg yolks
4 egg whites
1/2 cup lemon juice
1/3 cup sugar
1/2 cup orange juice
1 9 in.baked pastry shell

Steps:

  • Thoroughly mix gelatin, 1/2 cup sugar, and salt in saucepan.
  • Beat together egg yolks, fruit juices, and water; stir into gelatin mixture.
  • Cook and stir over medium heat just till mixture comes to boiling.
  • Remove from heat; stir in peels.
  • Chill, stirring occasionally, till mixture mounds slightly when dropped from a spoon.
  • Beat egg whites till soft peaks form.
  • Gradually add 1/3 cup sugar, beating to stiff peaks; fold in gelatin mixture.
  • Pile into cooled baked pastry shell.
  • Chill till firm.
  • Trim with whipped cream and thin orange slices cut in fourths.

3 1/2 cups whipped topping (partially thawed)
1 graham cracker pie crust

Steps:

  • Place concentrate in large mixing bowl and beat about 30 seconds.
  • Gradually,spoon in ice cream and blend.
  • Fold in whipped topping, whipping until smooth.
  • Spoon into pie crust.
  • Freeze until firm, at least 4 hours.
  • Store any leftover pie in freezer.
  • I usually add lemon zest on top before serving.

1 1/2 cups graham cracker crumbs (from about 12 graham cracker sheets; about 2 sleeves)
3 tablespoons granulated sugar
4 tablespoons unsalted butter, melted
8 ounces cream cheese, at room temperature
One 14-ounce can sweetened condensed milk
Finely grated zest and juice of 2 lemons
Finely grated zest and juice of 1 lime
Juice of 1 navel orange
Pinch of kosher salt
4 graham cracker sheets, chopped into about 1/4-inch pieces
1/2 cup heavy cream
2 tablespoons confectioners' sugar
1 lime, cut into thinly sliced rounds
1 lemon, cut into thinly sliced rounds

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Stir together the graham cracker crumbs, sugar and melted butter in a medium bowl until combined. Use the bottom of a measuring cup to press the crumbs firmly into the bottom and up the sides of a 9-inch pie plate. Bake until the crumbs have toasted and set, 8 to 10 minutes. Transfer to a wire rack and let cool completely.
  • For the filling and graham cracker layer: Puree the cream cheese and sweetened condensed milk in a food processor until silky and completely smooth, scraping down the sides of the bowl with a rubber spatula as needed. Add the citrus zest, juice and salt, then pulse until combined.
  • Pour half of the filling into the cooled cookie crust, then sprinkle with the chopped graham crackers. Top with the remaining filling, then smooth out the top into an even layer with an offset spatula. Refrigerate until chilled through and set, at least 4 hours but preferably overnight.
  • For the whipped cream topping: Whisk together the heavy cream and confectioners' sugar in a large bowl until stiff peaks form. Transfer to a piping bag fitted with a star tip. Pipe large star-shaped dollops of whipped cream around the edge of the pie, then decorate with lime and lemon rounds-you can cut slits in them first then twist the rounds, if desired. Cut the pie wedges and serve chilled.
