This recipe for delicious Polish plum nalewka is an aged cordial made with Damson plums known as sliwowka.

3 quarts plums, such as Damson (slightly unripe, washed and pitted)
2 quarts good-quality vodka
3 cinnamon sticks
4 whole cloves
1 cup sugar

Steps:

  • Gather the ingredients.
  • Place plums in a gallon jar. Pour half of the vodka into a large saucepan. Add cinnamon sticks and cloves. Let it warm over very low heat.
  • Dissolve sugar in warm vodka.
  • Remove from heat and cool to room temperature.
  • Pour vodka mixture over pitted plums in a gallon jar. Add remaining vodka. Screw cap on tightly and let sit for three months.
  • If prepared in summer, leave fruit in vodka mixture until just before Christmas Eve for full, fruity flavor. Strain and serve in cordial glasses.
  • Don't throw away the fruit! Use a few pieces of the fruit in your Christmas compote , serve it over ice cream, yogurt, pound cake, or make an open-faced coffee cake using the dough from this Polish sweet roll recipe .

1/2 cup sugar
vodka or whiskey

Steps:

  • Fill 1 quart jar with ripe wild sugar plums, pierce each plum with several holes.
  • Add 1/2 cup sugar per quart.
  • Fil jar with rum, vodka or whiskey. White liquor is best.
  • Store about 30-60 days.
  • Serve after straining.

1 1/2 lbs whole greengage plums or 1 1/2 lbs italian plums, pricked several times with a fork
1/3 cup granulated sugar
1 cinnamon stick
3 cups vodka (or enough to cover)

Steps:

  • Place the plums in a 1 quart glass container, being careful not to crush the fruit.
  • Add the sugar and the cinnamon stick.
  • Fill the container with the vodka.
  • Seal the lid and gently shake the jar, or move it around the counter to distribute the alcohol and sugar evenly.
  • The sugar will continue to dissolve over time.
  • Place the cordial in a cool, dark place for 2 months to allow the liquor to be infused with the flavor.
  • Jump start the process by placing the container on a sunny windowsill for the 1st two weeks.
  • The fluctuating temperatures of the daytime sun and the cool evenings will speed the flavor infusion.

20 italian plums, pricked with a fork
1/2 cup vanilla sugar (Flavored Sugar or Splenda)
1 (2 quart) bottle rum
2 cloves
2 cardamom pods
1 piece orange zest, 1 x 3 inch
1 slice fresh ginger
1 cinnamon stick

Steps:

  • Place all the plums in a 2 quart canning jar follow with rest of ingredients saving rum for last so to use as much as needed.
  • Let sit 2 months till all flavors blend and sugar dissolves.

250g pack butter (this must be very cold)
225g caster sugar
300g ground almond
140g plain flour , plus 25g/1oz
2 eggs
1 tsp cinnamon
1 tsp baking powder
approx 6 plums , stoned and cut into sixths
50g flaked almond

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter and line a 20 x 30cm baking tin with baking paper. Put the butter, sugar and ground almonds into a food processor, then pulse until the mixture resembles very rough breadcrumbs. Spoon out half the mix into a bowl and set aside.
  • Add 140g flour into the mix in the processor and whizz until it just forms a dough. Tip into the tin and press down with the back of a spoon. Bake for 15-20 mins until golden. Leave to cool for 10 mins.
  • To make the filling, put the remaining butter and the sugar and almond mix back into the processor, saving a few tbsp for the topping. Add the eggs, the 25g flour, cinnamon and baking powder and whizz to a soft batter. Spread over the base.
  • Top with the plum pieces and a little extra caster sugar and cinnamon. Bake for 20 mins, then sprinkle with the remaining crumble mix and flaked almonds. Cook for another 20 mins or until golden. Leave to cool in the tin before slicing.

1 cup cold unsweetened apple juice
1 pinch cinnamon
1 pinch nutmeg
1 tea bag (use your favourite variety)

Steps:

  • Pour apple juice into a microwave-safe mug, add spices, and nuke at full power for 1 1/2 minutes or until it is hot, yet drinkable.
  • Remove from the microwave and steep the tea bag for as long as you like; I like a mild tea flavour so I just swish it around for about 15 seconds.
  • Remove tea bag and drink immediately!

Steps:

  • Mix all ingredients thoroughly. A food processor makes this effortless, but I managed with a blender for years, and have even stirred it together by hand when necessary-- although it's not quite as pretty when done that way.
  • To enjoy: stir 2-3 heaping teaspoons into a mug of hot water and adjust to suit your own taste. Ahhh!
  • This mix starts to harden in the jar after six months or so, so drink up! Servings and Yield are approximations only.

2 cinnamon sticks (3 inch)
4 cups water
1/4 cup honey
4 tea bags
4 cups apple juice

Steps:

  • In a large saucepan, combine the cranberries, ginger, cloves, cinnamon and water.
  • Bring to a boil, reduce heat.
  • Simmer 5 minutes or until cranberries pop.
  • Remove from heat and stir in the honey.
  • Add the tea bags and let stand 5 minutes, stirring once.
  • Strain through 2 layers of wet cheesecloth.
  • Return to saucepan and add the apple juice.
  • Reheat and serve hot.

APPLE BRANDY CORDIAL

It's apple time! This is wonderful apple brandy. It's quick and easy. The longer it sits, the better. I just strain it through cheesecloth before serving, if it settles again. I have also used coffee filters for a fine strain, it just takes longer. I have some that is 8 years old and it is a beautiful amber color and very smooth.

6 cups apples, seeded and coarsely chopped
1 1/2 cups sugar
four inch cinnamon stick, broken in half
1/8 teaspoon pure vanilla extract
3 cups 80-proof brandy

Steps:

  • I remove the seeds because I think they make it bitter if left in the apple.
  • I don't use top shelf brandy, I use a less expensive brandy but not the cheapest either, something in between.
  • I use a glass gallon screw-top jar.
  • Combine all ingredients and place cover on tightly-invert jar, I always place it in a large pan, just in case it might leak.
  • (although, this has never happened) Let jar stand 24 hours, turn jar upright and let stand another 24 hours.
  • Repeat process until sugar dissolves.
  • Store in a dark, cool place 4-6 weeks.
  • Strain through cheesecloth into decanter.
  • Note: I always use very dark red sweet apples and I think that it is the dark red skin that gives the brandy a nice color.
