1 cup brown sugar
¾ cup oats
½ cup melted butter
1 teaspoon ground cinnamon
4 cups diced rhubarb
1 cup white sugar
1 cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
  • Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
  • Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

1 1/4 cups granulated sugar
1 1/2 teaspoons grated orange zest

1/2 cup freshly squeezed orange juice
1 cup all-purpose flour
1/2 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup quick-cooking (not instant) oatmeal, such as McCann's
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit.   • Preheat oven to 400 degrees. Set rack in the center of the oven. Prepare the topping by placing all of the topping ingredients into a food processor. Pulse or mix until the mixture is crumbled to the size of small peas; do not over process. Set aside. Pour the rhubarb directly into a large, shallow baking dish and sprinkle with 1/2 cup plus 2 tablespoons sugar and 3 tablespoons of flour to coat evenly. Spread crisp topping over entire surface. It goes great with vanilla ice cream and one can also alter the recipe to make a mango raspberry crisp which is just as delightful! This recipe highlights one of spring's finest flavors: rhubarb. It is often paired with berries, but here, rhubarb shines on its own, with tart, puckery flavor and gorgeous color. Browned butter and almonds add toasty, nutty notes to the topping, making this an almost-effortless, high-impact dessert. You may notice that 2 tablespoons of the butter aren't browned; they are added to the hot browned butter to cool it down a bit so that you can use it immediately. 1 cup all-purpose flour
3/4 cup rolled oats
2 cups packed brown sugar, divided
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup butter, melted
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla extract
4 cups sliced fresh or frozen rhubarb

Steps:

  • In a bowl, combine flour, oats, 1 cup brown sugar, salt, cinnamon and butter. Pat about half of mixture onto the bottom of a greased 9-in. square baking pan. In a saucepan, combine cornstarch and remaining brown sugar; stir in water. Cook and stir until mixture comes to a boil and is thickened and clear. Remove from the heat; stir in vanilla. Add rhubarb and toss until coated. Spoon over crust; sprinkle with reserved flour mixture. Bake at 350° for 50 minutes or until bubbly.

1 (14 ounce) package double-crust pie pastry, thawed
4 cups sliced fresh strawberries
3 cups chopped fresh rhubarb
⅔ cup white sugar
3 tablespoons all-purpose flour
Crust:
2 cups all-purpose flour
2 cups packed brown sugar
2 cups rolled oats
1 stick unsalted butter, cubed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Cut each pie crust into a square and piece together to cover the bottom of the prepared baking dish.
  • Bake in the preheated oven for 12 minutes. Remove from the oven; leave oven on.
  • Mix strawberries, rhubarb, sugar, and flour for filling together in a large bowl; pour into the crust.
  • Combine flour, brown sugar, and oats for topping in another bowl. Add butter and cut in with a pastry blender until crumbly. Sprinkle over the filling.
  • Return to the oven and bake until crisp and lightly browned, 40 to 45 minutes.

3 cups rhubarb, cut in 1 inch pieces
1 cup sugar
1 1/2 tablespoons flour

Steps:

  • Mix the 4 first ingredients. Put 3/4 of the mixture in the bottom of a deep medium dish. Cover with the rhubarb.
  • Mix sugar and flour and sprinkle on the rhubarb. Spread the remaining (1/4) of the first mixture on top of the rhubarb.
  • Cook in oven at 350 F for 45 minutes.
