Steps:

  • Preheat the oven to 425 degrees F. Remove the stems from 24 large cremini mushrooms (finely chop the stems for the filling).
  • Wipe the caps clean with a damp paper towel, then toss with 2 tablespoons olive oil and season with salt . Arrange on a baking sheet.
  • Cook 4 ounces sweet Italian sausage (casing removed) in a skillet with olive oil over medium heat, breaking up the meat, until no longer pink, 3 minutes. Add 1/2 finely chopped fennel bulb and the chopped mushroom stems and cook until tender, 3 minutes. Add 2 chopped garlic cloves, season with red pepper flakes and cook 1 minute. Let cool, then mix with 1 cup breadcrumbs, 1/2 cup shredded fontina and 2 tablespoons each grated parmesan, chopped parsley and chopped green olives. Divide among the mushroom caps.
  • Bake until the mushrooms are tender and the filling is golden, 15 to 17 minutes. Let cool 5 minutes, then remove from the baking sheet.

1 pound bulk Italian sausage
24 medium fresh mushrooms
2 packages (3 ounces each) cream cheese, softened
4 tablespoons minced fresh parsley, divided

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Remove and discard mushroom stems. Place caps on a microwave-safe plate. Microwave, uncovered, on high for 2 minutes; drain., In a small bowl, combine the cream cheese, 3 tablespoons parsley and sausage until well blended. Spoon into mushroom caps., Cover and microwave at 70% power for 5-7 minutes or until heated through; drain. Let stand for 5 minutes before serving. Sprinkle with remaining parsley.

4 large Portobello mushrooms, stemmed and cleaned
2 tablespoons fresh lemon juice
I tablespoon Balsamic vinegar
2 large garlic cloves, crushed and minced to a paste
Salt and freshly ground black pepper
1 cup extra-virgin olive oil
1 tablespoon minced fresh herbs, such as thyme leaves, chives. tarragon or basil, or a combination

Steps:

  • Arrange mushrooms in a shallow glass dish. In a bowl whisk together lemon juice, vinegar, garlic and salt and pepper to taste. Add the oil, a little at a time, whisking until combined well. Stir in the herbs. Pour dressing over mushrooms, turning to coat, and marinate for 15 minutes. Heat grill pan until hot. Add mushrooms and grill for 3 minutes on each side, basting with marinade, or until just firm.

6 portobello mushrooms, stemmed (reserve 1 cup minced stems)
3 tablespoons plus 2 teaspoons extra-virgin olive oil, plus more for drizzling
12 ounces hot Italian sausage
12 ounces sweet Italian sausage
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped celery
2 teaspoons minced garlic
1/2 cup plain bread crumbs
1/2 cup freshly grated Parmesan
1/4 cup plus 1 tablespoon minced fresh parsley leaves
2 teaspoons Essence, recipe follows
1 egg, lightly beaten
Balsamic vinegar, for drizzling
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Using your hands, lightly rub each portobello mushroom with 2 teaspoons of olive oil.
  • Cook the sausage in a medium skillet until browned, about 4 minutes. Add the onion, bell pepper, celery, and mushroom stems and cook until softened, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds. Remove from heat.
  • Transfer sausage-vegetable mixture to the bowl of a food processor. Add, 1/4 cup of the bread crumbs, 1/4 cup of Parmesan, 1/4 cup of parsley, the Essence, and the remaining 2 teaspoons of olive oil. Pulse until mixture is finely chopped and comes together slightly, about 30 seconds. Transfer the mixture to a bowl, add the egg, and stir until well combined.
  • Divide the filling among the mushroom caps, about 1/2 cup for each mushroom. Place the filled mushrooms on a baking sheet. Combine remaining 1/4 cup of bread crumbs and 1/4 cup of Parmesan in a small mixing bowl. Divide the bread crumb mixture evenly among the tops of the mushrooms. Bake until golden brown on top and the mushrooms are tender, about 15 to 18 minutes. Remove from oven and let cool slightly. Garnish with remaining tablespoon of parsley, drizzle with olive oil and vinegar and serve warm or at room temperature.

Form Olive Garden. I haven't made these yet, but I think I will try it without the sauce. Update: I made these tonight and was going to make the sauce, but didn't have time. I had to substitue Italian bread crumbs for the croutons and I added chopped mushrooms stems. I also sprinkled with lemon juice after they were cooked and it was wonderful! I also used portobello and regular mushrooms-both were good!

4 large portabella mushrooms, with stems removed
1 lb bulk Italian sausage
1 teaspoon chopped fresh Italian parsley
1 teaspoon chopped fresh basil
1 chopped garlic clove
1 cup garlic-flavored croutons, Ground Fine
1/4 cup milk
1/4 cup parmesan cheese
2 eggs
1 pint heavy cream
2 tablespoons chopped fresh basil
1/4 cup grated parmesan cheese
salt (to taste)
pepper (to taste)

Steps:

  • STUFFING:.
  • Brown the sausage in a nonstick skillet making sure sausage is crumbled into small pieces.
  • Once browned drain fat and transfer to a paper towel to cool.
  • In a medium bowl, beat the eggs with milk and then mix in the parsley, basil, garlic, croutons, and Parmesan cheese.
  • Add the cooled sausage and mix well (mixture should be wet but firm and hold together easily).
  • Top portobella mushrooms with sausage mixture and bake in 350 degree F oven for 15 to 20 minutes.
  • SAUCE:.
  • In sauce pan, heat cream and lightly boil until it is half its original volume being careful not to scorch it.
  • Once it is reduced by half, mix in the Parmsan cheese, basil, salt and pepper.
  • Spoon 2 ounces of sauce over top of each mushroom.
  • Garnish with a sprig of fresh Italian Parsley or Fresh Basil.

1/2 teaspoon salt
1 teaspoon pepper
2 garlic cloves, finely chopped
1 teaspoon onion powder
2 tablespoons extra virgin olive oil
2 tablespoons grated parmesan cheese
2 tablespoons chopped Italian parsley

Steps:

  • In a stainless steel bowl mix together the mushrooms, salt, pepper, garlic, onion powder and olive oil. Cook on the grill (or grill pan) on high heat for about 2-3 minutes per side.
  • Place the grilled mushrooms back in the bowl and mix well, while still hot with the cheese and parsley.

In the fall, check out your local produce markets for fresh mushrooms. Shiitakes are great, and oyster mushrooms work well in the this recipe too! Adapted from The New Basics Cookbook.

1 lb fresh shiitake mushrooms (try a mix!) or 1 lb oyster mushroom, stems removed (try a mix!)
6 tablespoons fresh lemon juice
4 garlic cloves, finely minced
4 tablespoons parsley, coarsely chopped
2 tablespoons olive oil
fresh ground black pepper, to taste

Steps:

  • Preheat the broiler. Clean the mushroom caps with a damp paper towel. Save the stems for stock or to flavor sauces.
  • In a small bowl, combine 4 tablespoons of the lemon juice,the garlic, 3 tablespoons of the parsley, and the oil and pepper. Mix well.
  • Line a 17x11" jelly roll pan with foil. Arrange the mushrooms,top side up, on the foil, and brush generously with the lemon juice mixture.
  • Place the mushrooms 4 inches from the heat and broil until just tender, 5 to 7 minutes.
  • To serve, sprinkle the mushrooms with the remaining 2 tbsp lemon juice, 1 tbsp of parsley, and pepper to taste.
  • Enjoy!

This is loosely adapted from Judith M. Fertig's recipe in Prairie Home Cooking. The original did not have any cheese or herbs. Either sweet or hot sausages will do; I've also made it with bratwurst. This is a very easy dinner, very nice for cold weather.

1 sprig fresh rosemary, chopped
1 sprig fresh thyme, chopped

4 medium potatoes, quartered
1 lb Italian sausage
2 large bell peppers, cut into eighths
2 large yellow onions, cut into eighths
1 lb mushroom
4 ounces mozzarella cheese, shredded (optional)

Steps:

  • Preheat oven to 400°F.
  • Combine herbs, olive oil, salt,pepper and potatoes and toss to mix.
  • Place sausages and potatoes in large baking or roasting pan.
  • Roast at 400° for 30 minutes, or until just beginning to brown, turning several times.
  • Add a little more oil if the potatoes appear to be drying out.
  • Add remaining vegetables and roast 45 minutes more, turning occasionally, until potatoes are brown on the outside and tender on the inside.
  • Sprinkle with mozzarella and return to oven just until cheese is melted.

4 links spicy Italian sausage (or mild)
1 lb. whole white mushrooms. medium size (1-2 inches diameter)
2/3 cup Italian bread crumbs
1/4 tsp. crushed red pepper (if using mild sausage)
1/2 tsp. dried oregano
1/2 tsp. salt
1/3 cup shredded Fontina or mozzarella cheese

Steps:

  • 1. Remove the casing from the sausages. Break them into a skillet over medium heat. Cook. breaking the sausage into small pieces with a kitchen fork. until they begin to brown. 2. Add the crushed red pepper. oregano. and salt. Add 1/2 cup of water. turn the sausage and continue to break up the pieces until all the pink is gone. Add more water if necessary to keep the pan from drying out. 3. Add the bread crumbs and mix in well. Again. add a little more water to keep the mixture from being very dry. (It should not be very wet. either.) Remove from the heat. 4. While the sausage is cooking. remove the stems from the mushrooms. Slice off a sliver the size of a penny from the top of the mushroom cap to make a flat area. 5. While the sausage mixture is still warm. use a teaspoon to stuff the bottom of each mushroom. Pile as much stuffing on as will stay in place. with some perhaps crumbling off. Place the mushrooms stuffing side up on a baking pan. Top with a generous pinch (again. as much as you can get to stay put) on top of the stuffing. 6. Broil until the cheese melts and begins to brown. Remove and serve very hot. Makes about 24 stuffed mushrooms.
