FRIED CHICKEN WINGS, CHINESE TAKEOUT-STYLE
Chinese take-out fried chicken wings are the same as regular old fried chicken, right? Wrong. This fried chicken wings recipe is a special family recipe.

- Combine chicken wings, black pepper, white pepper, garlic powder, salt, sugar, soy sauce, Shaoxing wine, sesame oil and egg in a large mixing bowl. Mix everything until the wings are well-coated. Next, add the cornstarch and all purpose flour and mix again until the wings are coated.
- Let the wings marinate for 2 hours at room temperature or in the refrigerator overnight for best results. (If you refrigerate the wings, be sure to let them come to room temperature again before cooking).
- After marinating, if it looks like there is liquid in the bowl, be sure to mix them thoroughly again. The wings should be well coated with a thin batter-like coating. If it still looks too watery, add a bit more cornstarch and flour.
- Fill a medium pot about 2/3 of the way up with oil, and heat it to 325 degrees F.
- Fry the wings in small batches for 5 minutes and remove to a sheet pan lined with paper towels. After all of the wings are fried, return them in batches to the oil and fry again for 3 minutes.
- Drain on paper towels or a cooling rack, and serve with hot sauce!

CRISPY BAKED BUFFALO WINGS RECIPE

- Preheat the oven to 450 degrees F. Set a baking rack on a large rimmed baking sheet. Spray the rack with nonstick cooking spray.
- Use paper towels to thoroughly squeeze and dry every single wing. The drier the wings are, the crispier they will get.
- In a large bowl, mix the baking powder, garlic powder, salt, and pepper. Add the wings to the bowl and toss to coat. Lay the wings on the baking rack, making sure they do not touch.
- Bake for 30 minutes. Then use tongs to flip the wings. Bake another 15-20 until very brown and crispy.
- Meanwhile, set a small saucepot over medium heat. Add the cayenne pepper sauce, butter, and honey. Once the butter has fully melted, whisk into a smooth sauce, then turn off the heat.
- Once the chicken wings come out of the oven, move them to a large bowl and pour the hot wing sauce over the top. Toss to coat. Serve warm!

- Wash the chicken thoroughly. Next, sprinkle the salt and black pepper onto the wings, and use your hand to make sure the chicken is well coated with the seasonings.
- In a medium sized bowl add the flour, garlic powder, white pepper, and onion powder, Mix the ingredients until they are well combined, then coat the chicken with the flour mixture.
- Heat the vegetable oil to about 360 F, then fry the chicken until it turned golden brown, and is completely done.
- Once the chicken is done, place it on a paper towel lined plate.
- Place the margarine or butter into a medium sauce pan, and turn the heat up to medium-high. Now pour in the hot sauce, and stir the two ingredients. Let the sauce cook for about 2-3 minutes.
- Place the chicken into a large bowl, then pour the wing sauce all over the chicken. Make sure the chicken is well coated, then remove the chicken from the bowl.

- Rinse the wings in cold water, then lightly salt and pepper them. Let stand about 10 to 15 minutes. Place wings in a large bowl and pour the milk over them, then place in refrigerator for about one hour, turning three to four times.
- For the Stir Fry Sauce: Place the ginger and garlic into a blender with just enough water to liquefy the mix. Pour into a small mixing bowl and add all other sauce ingredient & mix well. Finely chop the green/spring onion and set aside.
- Chicken Wings: Discard the milk and let wing section drain until just damp. Heat oil in a large cooking pot. (350ºF or use the bread test) Roll wings in starch and deep fry until golden brown then drain.
- Transfer the chicken to a large stir fry pan or wok over medium to medium high heat, add the sauce, and stir fry until all liquid is gone.

- In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

- Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
- Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
- Taste test with corn chip for salt and lime. Adjust if necessary.
- Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

- 1. In a zip lock bag(gallon size) combine paprika,cayenne,salt and flour then add wings and shake well to coat evenly. Refrigerate for about one to one and a half hours.
- 2. Heat oil to 375(enough to cover wings). Add wings and cook for 10-15 minutes until thoroughly cooked and are browning nicely. While the wings are cooking combine the butter,hot sauce,pepper and garlic powder(or salt) and heat in a sauce pan while stirring until butter is melted and it is mixed well. I have used a pyrex measuring cup in the microwave to do this step just as successfully.
- 3. Place cooked wings in large bowl and pour the sauce over them and toss well to coat. Place on a serving dish and enjoy with some blue cheese dressing(or ranch) and celery sticks.
- 4. **If you want to make them healthier you can cook them in the oven on a non stick pan ...just spray the pan and the wings with PAM first and cook at 375 for about 50 minutes and they come out just as good...AND if you want them even healthier just use the prepared hot wing sauce with the butter flavor in it.**

- In a small saucepan, heat the sauce over medium heat until hot. Whisk in the butter, a little at a time. Continue whisking until the mixture is emulsified. Whisk in salt to taste, then reduce the heat to low to keep the sauce warm.
- Sprinkle salt and pepper all over the chicken and let stand for 5 minutes to release the moisture on the skin. Sprinkle the cornstarch all over the chicken and toss until evenly coated.
- Fill a large skillet with oil to a depth of 1/2 inch. Heat over high heat until hot and shimmering. (When the oil is ready, a cube of bread dropped into it will turn golden in 15 seconds.)
- Reduce the heat to medium and add the drumettes first, then the wings in a single layer. Cook, turning the chicken with tongs, for 4 minutes. Raise the heat to high. Cook, turning occasionally, until the chicken is golden brown outside and no longer pink inside, about 4 minutes longer.
- Transfer the chicken to a large bowl and add the hot sauce and jalapeño. Toss until evenly coated. Serve immediately.

- For the sauce; in a small saucepan combine the butter, hot sauce, black pepper, salt and 1/2 teaspoon garlic powder; bring to a simmer over medium-low heat.
