2 large bananas, sliced
2 medium pears, cubed
1/3 cup fresh orange juice
1/3 cup unsweetened pineapple juice
3 cups cubed fresh pineapple
1-1/2 cups sliced fresh strawberries
1 cup seedless red grapes, halved
4 medium kiwifruit, peeled and sliced
2 medium mangos, peeled and cubed
2 star fruit, sliced

Steps:

  • In a large bowl, combine the bananas, pears and juices. Add the pineapple, strawberries, grapes, kiwi and mangos; stir gently to combine. Arrange star fruit over top.

1/4 cup sugar
One 3-inch piece fresh ginger, peeled and chopped
Zest of 1 lime
1 pint strawberries, hulled and halved or quartered
2 kiwi, peeled, sliced and quartered
1 mango, cut into chunks
1 orange, segmented
1 small pineapple, cut into chunks
1 papaya, cut into chunks
Handful fresh mint, chopped

Steps:

  • Combine the sugar, 1/4 cup water, ginger and lime zest in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove it from the heat and refrigerate until cold.
  • Strain the mixtures into a large bowl and toss in the strawberries, kiwis, mango, oranges, pineapple and papaya to coat. Cover and refrigerate again until cold, at least 1 hour.
  • Serve in small bowls and garnish with the chopped mint.

1 strip of lemon zest
1 vanilla bean, split
1/2 cup sugar
6 sprigs mint; plus 3 leaves, cut across into thin strips
2 cups water
1/2 fresh pineapple, peeled, quartered lengthwise, cored and thinly sliced crosswise
1/2 ripe papaya, peeled, seeded and thinly sliced crosswise
1/2 ripe mango, peeled and thinly sliced lengthwise
1 banana, peeled and sliced

Steps:

  • Combine the orange and lemon zest, vanilla bean, sugar, 5 sprigs mint and water in a saucepan. Bring to a boil. Remove from the heat and let stand at least 2 hours. Strain.
  • Stir the fruit into the syrup and refrigerate for 2 hours. Stir in the sliced mint and garnish with a mint sprig.

This syrup works with any combination of fruit; I especially like it with the tropicals. It is a light and refreshing dessert; the use of the vanilla bean makes these fruits seem exotic. Cook time includes chill time. From author and herbalist Susan Belsinger.

1 cup water
1/4 cup sugar
1/2 vanilla bean
fresh mint leaves, 1 handful bruised
3 slices lime zest
1 tablespoon freshly squeezed lime juice
1 firm ripe mangoes or 1 papaya, peeled, seeded, and cut into bite-sized pieces
1 small ripe cantaloupe, seeded, and cut into bite-sized pieces
1 ripe pineapple, peeled, cored, and cut into bite-sized pieces

Steps:

  • Make flavored fruit syrup by combining water, sugar, vanilla, mint and zest in a saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Remove from heat and let cool. When cooled to room temperature, strain syrup and stir in lime juice. At this point syrup can be stored in the refrigerator for up to 5 days.
  • Toss mango or papaya, melon and pineapple in a large bowl. Pour syrup over fruit. Toss mixture well. Cover and chill for at least 1/2 hour before serving.

We love fruit salad and experiment with different fruits often, this is one of our personal favorites. We often find the simplest ingredients make the best dishes. This tasty syrup gives the fruit added flavor and depth. This satisfying treat can be enjoyed anytime.

2 large limes, juiced
1/4 teaspoon grated lime rind (optional)
1/4 cup water
1/4 cup sugar
1 vanilla bean
3 cups strawberries, halved
1 cup blackberry
3 small bananas, sliced
4 mint sprigs
2 tablespoons sugar, coarse sugar & vanilla blend, grinder (garnish)

Steps:

  • In a small pot add the lime juice, grated lime, water and sugar.
  • Bring to a rapid boil for 5 minutes then simmer until the syrup thickens.
  • Next remove the syrup from heat and allow it to cool until needed.
  • Slice the bean lengthwise and remove the seeds, add them to the warm lime syrup.
  • Wash, drain and hull the strawberries, cut in half and place in large bowl.
  • Wash and drain the blackberries and add them to the bowl with the strawberries.
  • Peel and slice the bananas and add them to the bowl with the berries.
  • Gently mix the fruit together, cover and put in the fridge until your syrup is cooled completely.
  • Pour the fruit into serving bowls and top with the lime vanilla syrup.
  • Sprinkle the sugar and vanilla blend mix over the fruit and garnish with mint.

Add the agave syrup, papaya seeds, OSU Apple Cider Vinegar, fresh ginger, lemon juice and 100ml water and bring to a gentle simmer. Cook for about 10 minutes or until the mixture is syrupy and golden. Once cool enough to touch, discard the ginger.
