Healthy Bran Muffin Recipe with Kellogg's All-Bran image

Make this healthy bran muffin recipe with Kellogg's All-Bran cereal. These easy bran muffins make a great choice for breakfast or for a snack!

2 cups Kellogg's all-bran cereal
1 1/4 cup skim milk
1/3 cup brown sugar
2 egg whites
1 teaspoon vanilla
1/2 cup applesauce ((no sugar added))
1 cup Flour
2 teaspoons baking soda
1 teaspoon Cinnamon
1/2 teaspoon salt
1/2 cup craisins or raisins
1/4 cup sliced almonds

Steps:

  • Preheat oven to 375 degrees F.
  • Combine all bran cereal and milk. Let sit for 5 minutes.
  • Add brown sugar, egg whites, vanilla and applesauce. Stir all wet ingredients well.
  • In a separate bowl, combine dry ingredients. (Flour, baking soda, cinnamon, salt.) Mix wet ingredients and dry ingredients together.
  • Add raisins and almonds.
  • Scoop batter into prepared muffin tin.
  • Bake for 12 - 15 minutes. Muffins are done when a knife or toothpick inserted in the center comes out clean. Do not overbake!

These are no ordinary bran muffins. These are sweetened with bananas and applesauce, plus they're made with whole wheat flour, making them the healthiest banana bran muffins. They're high in fiber, low in sugar and make the perfect snack when served with nut butter, butter or jam!

2 large overripe bananas, (mashed (about 1 cup))
1/2 cup applesauce, (unsweetened)
2 large eggs
1/4 cup avocado oil ((or other neutral tasting oil))
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup wheat bran
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F. Lightly grease the bottom of a muffin pan or use muffin liners.
  • Mix all the wet ingredients in a medium mixing bowl.
  • Stir all the dry ingredients together in a different bowl, then stir in the wet ingredients until combined. Avoid overmixing.
  • Transfer to the prepared muffin pan, making 12 muffins. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  • Let them cool a few minutes before removing from the pan.

2 cups bran flakes ((for gluten free option, see note above))
3/4 cup milk of choice
1/2 cup yogurt, applesauce, pumpkin, or mashed banana
2 tbsp oil or additional milk of choice
2 tbsp molasses ((or sub pure maple syrup, honey, or agave))
optional 1 tbsp ground flax, for added nutrition
1 1/4 cup spelt, white, or oat flour
1/2 cup sugar ((see note above for sugar free))
1 tbsp baking powder
1/4 tsp salt
optional 1/2 cup raisins

Steps:

  • In a large bowl, soak bran flakes in the milk for half an hour. Then preheat the oven to 400 F. Whisk all remaining ingredients into the bowl to form a batter. Portion into lined muffin tins, and bake on the center rack for 20 minutes. The muffins taste even better the next day, and liners peel off easily after a day as well. View Nutrition Facts

  • Stir together dry ingredients (except cereal), set aside.
  • In large mixing bowl, combine cereal with milk.
  • Let stand 5 minutes until cereal softens.
  • Add egg whites and mashed banana, mix well.
  • Add flour mixture, stirring only til moistened.
  • Spoon into 12 muffin cups sprayed with Pam.
  • Bake at 400 F for about 20 minutes or until golden brown.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

1 1/4 cups white whole wheat flour
1/4 cup oat bran
2 cups all-bran cereal
1 1/4 cups low-fat milk
5 ounces baby banana puree (baby food)
2 egg whites
1 tablespoon stevia powder
1 tablespoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 400* F. Prepare muffin tins with cooking spray or liners.
  • In a small bowl, mix together flour, oat bran, Stevia, baking powder, and salt.
  • In a large bowl, combine cereal and milk. Let stand for 5 minutes, until cereal softens a bit.
  • Add egg whites and banana puree and mix well.
  • Slowly stir flour mixture into the cereal mixture. Mix only until just combined.
  • Portion batter evenly into muffin tins. Bake 15-20 minutes, until toothpick comes out clean!
