EASY SCALLOPED POTATOES WITH HAM AND HAVARTI - REDUCED FAT
Scalloped potatoes made with reduced fat cream of mushroom soup. The havarti cheese helps to create a creamy texture. Can be used as a side dish or one dish meal.

Steps:
- Mix the 98% Fat Free Cream of Mushroom Soup with the milk until well blended.
- Butter the bottom of a 2 qt baking dish.
- Put aside 1/3 of the havarti cheese to place on top of the casserole.
- Place an even layer of potatoes on bottom of buttered baking dish, season with small amount of salt and pepper, layer ham, onions, cheese and the soup/milk mixture. Repeat layers until all ingredients are used. Top with the remaining 1/3 of havarti cheese.
- Cover the casserole and bake at 350 degrees for 60 minutes. Remove cover and bake another 15-30 minutes until potatoes are tender and top of dish is light golden brown.
LIGHTER SCALLOPED POTATOES WITH HAM
Lighter Scalloped Potatoes with Ham is just as decadent as the original butter and cream-laden recipe, but on the lighter side!

Steps:
- Preheat oven to 375 degrees. Melt butter in a large skillet over medium heat. Add in parsley, thyme, salt, pepper and flour, and whisk together. Cook for 2 minutes, whisking occasionally.
- Slowly add milk, whisking constantly, until smooth. Turn heat up to high and bring mixture to a boil, whisking constantly. Turn heat back down to medium and continue whisking for 2 minutes.
- Combine potatoes, ham and onion in a large bowl. Spray a 9x13 pan with non-stick spray and add in half the potato mixture. Top with half the sauce, then repeat the layers. Cover the pan with foil and bake for 65 minutes. Remove the foil and bake for 15-20 more minutes, or until potatoes are tender.
LOW-FAT SCALLOPED POTATOES
Steps:
- Preheat the oven to 350 degrees F. Lightly butter a 3-quart flameproof baking dish. Bring a large pot of salted water to a boil; add the potatoes and cook until just tender, 8 to 10 minutes. Drain the potatoes and return to the pot.
- Meanwhile, melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Gradually whisk in both milks and simmer, whisking constantly, until thickened, about 3 minutes. Remove from the heat and whisk in 1/2 teaspoon pepper, 1 1/2 teaspoons salt and the nutmeg. Pour the sauce over the potatoes and gently toss to coat.
- Transfer the potato mixture to the prepared baking dish and sprinkle with the gruyere. Bake until heated through, about 10 minutes. Switch the oven to the broiler setting and broil the potatoes until browned on top, about 5 minutes. Let rest 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of water to a boil. Add sliced potatoes and cook until almost tender, 5 to 10 minutes. Transfer to a colander and rinse with cold water until cool enough to handle. Drain well.

- In a 2 cup measuring cup mix melted butter& flour.
- Gradually add milk, stirring until smooth.
- Add onion, Salt& Pepper.
- Microwave at medium High (70% power) until smooth and slightly thick (4- 6 min) stirring every 3 minutes or less.
