EASY CARAMEL ROLLS



Easy Caramel Rolls image

Serve your family warm and nutty caramel rolls baked using corn syrup and cinnamon rolls with cream cheese frosting.

1 cup packed brown sugar
1/2 cup butter or margarine
1/4 cup corn syrup
3 tablespoons whipping cream
3/4 cup pecan halves, if desired
1 bag (36.5 oz) frozen cinnamon rolls with cream cheese frosting (12 rolls)

Steps:

  • In 1-quart saucepan, heat brown sugar and butter to boiling, stirring constantly. Remove from heat. Stir in corn syrup and whipping cream. Heat to boiling. Remove from heat; cool 5 minutes.
  • Spray bottom and sides of 13x9-inch pan with cooking spray. Pour caramel mixture evenly over bottom of pan. Sprinkle with pecans.
  • Place frozen rolls in 4 rows by 3 rows evenly on caramel-pecan mixture. Cover with plastic wrap generously sprayed with cooking spray. (Save frosting packet for another use.)
  • Refrigerate rolls 5 hours or overnight to let dough rise.
  • About 2 3/4 hours before serving rolls, remove rolls from refrigerator and place pan on cooling rack. Let rolls continue to rise at room temperature about 2 hours or until almost double in size (actual rising time depends on temperature of kitchen).
  • Heat oven to 375°F. Carefully remove plastic wrap from rolls. Cover pan with foil. Bake 20 minutes; remove foil. Bake 15 to 20 minutes longer or until rolls are deep golden brown. Immediately place heatproof serving plate or tray upside down on pan; carefully turn plate and pan over. Leave pan over rolls 1 minute; remove pan. Serve warm.

Here is a recipe that I remember the most about my mom's baking. She has it committed to memory. I am glad I did get it out of her. It is a very easy recipe to make. I hope your family gets as much enjoyment out of it as mine does.

2 cups warm water (not hot)
2 (1/4 ounce) packages yeast (2 T bulk)
1/2 cup sugar
2 teaspoons salt
4 tablespoons butter (let sit out until soft)
1 egg
6 1/2 cups flour
cinnamon-sugar mixture
1 1/2 cups brown sugar
3/4 cup butter
3 tablespoons water

Steps:

  • Mix water and yeast and wait 5 minutes.
  • Stir in sugar, salt and 2 cups of flour.
  • Add egg and butter and mix.
  • Stir in rest of flour by hand, if dough is still sticky add just enough to make it not sticky anymore.
  • Let raise until dough is double in size.
  • Sprinkle flour on surface and roll dough out until is approx 18 X 12 inches.
  • Spread a very thin layer of soft butter on dough and sprinkle cinnamon/sugar mixture on it.
  • Roll dough from the long side, it should look like a log.
  • Cut into 1 inch pieces.
  • Should be 18 pieces.
  • Place brown sugar and butter into microwave dish and heat until butter is just melted; stir well.
  • Stir in 3 T water.
  • Divide mixture into 3 pans (8-inch cake pans).
  • Place 6 pieces in each pan.
  • Let raise for about 45 minutes.
  • Bake for 20 minutes in a 325°F oven.
  • When you take out of oven, turn each pan of rolls over on a plate, otherwise you will have a hard time getting them out when they cool.
  • If you can, let them cool slightly and enjoy them when they are still warm.

FILLING:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, oil, egg, baking powder, salt and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 12-in. x 10-in. rectangle. Spread each with 2 tablespoons butter. , Combine the sugar and cinnamon; sprinkle over butter to within 1/2 in. of edges. I have made these for years, and everyone loves them. Made them everyday for a small motel we owned, people used to call and ask if I still made those fantastic rolls. This takes time, but it's a easy recipe. Enjoy! Bake at 375 degrees.

6-7 c flour
1/2 c sugar
2 tsp salt
2 pkg active dry yeast
1 c water
1 c milk
1/2 c butter
1 large egg
CARAMEL NUT STICKY BUNS MIXTURE (PUT IN BOTTOM OF PAN)
1/2 c brown sugar, firmly packed
1/2 c butter, softened
2 Tbsp light corn syrup
1/2 c chopped nuts ( i use pecans)
CINNAMON ROLLS GLAZE
3/4 c powdered sugar
1 Tbsp butter, softened
1/4 tsp vanilla
1-2 Tbsp milk
AFTER DOUGH IS ROLLED OUT SPRINKLE WITH
1/4 c butter, softened
1/2 c brown sugar, firmly packed
2 tsp cinnamon

Steps:

  • 1. I use my kitchen aid mixer to mix. In large bowl, combine 2 cups flour, sugar, salt and yeast; mix well. In small saucepan, heat water, milk and butter until very warm (120-130 degrees). (I use a candy therometer) Add warm liquid and egg to flour mixture. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, stir in an additonal 3 cups flour until dough pulls cleanly away from bowl.
  • 2. On floured surface, knead in 1 to 2 cups flour until smooth and elastic, about 8 to 10 minutes. Place dough in greased bowl; cover loosely with platic wrap and cloth towel. Let rise in warm place until light and doubled in size, about 60 minutes.
  • 3. I mix all the flour in my kitchen aid and don't hand knead at all.
  • 4. Punch down dough several times to remove all air bubbles. Divide dough in half. On floured surface roll dough out to 18 X 12 inch rectangle. Spread 1/4 c. butter, sprinkle with 1/2 c. brown sugar, and 2 tsp. cinnamon. Roll up tightly, pressing edges to seal. Cut into 18 slices.
  • 5. Use 1/2 of basic roll recipe. For Cinnamon Rolls, place cut side down in greased 9 x 13 pan. Cover and let rise in warm place til light and doubled in size. Bake 25-35 minutes. Mix cinnamon roll glaze and glaze warm rolls.
  • 6. Use 1/2 of basic roll recipe. For Caramel Rolls, grease 9 x 13 pan. In small bowl, combine brown sugar, butter, and corn syrup. I put this mixture in the microwave for 30 seconds, and mix. Pour into pan, and sprinkle with nuts. Place rolls cut side down. Cover and let rise in warm place til light and doubled in size. Bake 25-35 minutes. Cool 1 minute; invert onto cookie sheet or wire rack, be careful, caramel is hot.
  • 7. I make these ahead, once rolled out, I put in pans, I cover with aluminum foil and freeze. Take out in plenty of time to raise and bake, usually over night.

These caramel cinnamon rolls are ah-mazing!! They're made using my favorite homemade cinnamon roll recipe and have a delicious caramel sauce for cinnamon rolls.

2 cups Water (luke warm)
1/4 cup Sugar
2 tablespoons Active Dry Yeast
1/4 cup Butter (melted)
2 large Eggs
1 tablespoon Salt
5.5-6 cups All-Purpose Flour
1/2 cup Butter (melted, or very soft)
1 cup Dark Brown sugar
2 tablespoons Ground Cinnamon
1/4 cup Butter
1 cup Dark Brown Sugar
1/2 cup Karo Syrup
1/2 15-oz can Sweetened Condensed Milk

Steps:

  • In the bowl of a stand mixer, add the warm water, sugar and yeast and stir well. Let the mixture sit for 5-10 minutes until it gets bubbly and activates the yeast.
  • Add the melted butter, eggs, salt, and 2 cups of flour, then mix on low using the bread hook for 2 minutes, or until everything is well-mixed.
  • Add an additional 3.5 cups of flour, then stir on low to combine. You may need to add up to 1/2 a cup more (you will know you've added enough flour when the dough pulls away from the sides of the mixing bowl). Once all of the flour has been added, continue to knead on low for 3 minutes more.
  • Turn off the mixer and cover the bowl with a kitchen towel. Let the dough rest in a warm place for about 30 minutes, or until doubled in size.
  • Once the dough has double, turn it out onto a floured surface and form it into a small rectangle with your hands. Then, using a rolling pin, gently roll the dough into an approximately 24" x 12" rectangle (should be about 1/2" thick).
  • Using an offset spatula, or knife, carefully spread the 1/2 cup of soft or melted butter evenly onto the rolled dough. Sprinkle the cinnamon and brown sugar evenly over the top, then pat down gently.
  • Starting at either 24" side, roll the dough up evenly making sure to get a nice tight tube, then cut into 12 evenly sized slices using a very sharp knife (they should be about 2" each). We recommend using a ruler and pre-marking before you actually make any cuts.
  • Lay the slices in a greased 9 x 13" baking pan, cover loosely with a kitchen towel, and let the cinnamon rolls rise for another 30 minutes or until double and touching in the pan.
  • While your dough is rising, preheat the oven to 350 degrees. Once risen, bake in a preheated oven for 18-22 minutes, or until the bottom and the top are golden brown.
  • Remove from the oven and pour the warm caramel sauce over the tops while they are still warm. Let them cool for about 5 minutes, then serve warm. Enjoy!

Number Of Ingredients 17

320ml milk (any milk will work), plus an extra splash
50g cold butter, cut into cubes
500g strong white bread flour, plus extra for dusting
7g sachet fast-action dried yeast
2 tbsp light brown soft sugar
vegetable oil, for proving
3 medium eating apples, peeled, cored and cut into 1cm cubes
knob of butter
2 tbsp light brown soft sugar
100g butter, softened
100g light brown soft sugar
2 tsp vanilla extract
1 tbsp cinnamon
150g soft cheese
150g icing sugar
large pinch of cinnamon
3 tbsp canned caramel

Steps:

  • Prepare the dough for the buns the day before you want to bake them, if you have time - this will develop a better flavour. Warm the milk in a pan until steaming but not boiling. Add the butter and swirl the pan for 1-2 mins until the butter has melted and the milk cooled slightly. It should be just warm.
  • Put the flour in a large bowl, or the bowl of a stand mixer. Add the yeast and sugar to one side of the bowl, then ½ tsp salt to the other. Whisk together, then pour in the warm buttery milk. Mix until the ingredients form a soft dough (it should be a little sticky), then tip onto a lightly floured work surface and knead by hand for 8-10 mins, or keep the stand mixer going for 5 mins or so. The dough will feel stretchy and soft when it's ready - you should be able to pull it apart without it breaking straightaway (this means the gluten has been developed). Lightly oil a bowl, add the dough and cover. Leave to rise at room temperature for a few hours, or until the dough has doubled in size. Or, chill overnight.
  • To make the apple filling, cook the apples, butter, sugar and 1 tbsp water in a pan for 5-10 mins until soft and sticky. Add a splash more water if the pan looks dry or the sugar starts to burn. Leave to cool.
  • If the dough has been chilled, take it out of the fridge 30 mins before shaping. For the cinnamon butter, mix the butter, sugar, vanilla and cinnamon together with a pinch of salt. Tip the dough onto a lightly floured surface, shape into a rough rectangle, then roll out until it's about 50 x 40cm. Spread the cinnamon butter over the dough and all the way out to the edges. Spoon over the apple filling.
  • Working from one of the longer sides, roll the dough up as tightly as you can into a sausage shape. Cut into 12 equal pieces. To easily do this, first cut the dough in half crosswise, then cut each half into three pieces, then halve each piece. Line a large round baking dish or cake tin (about 33cm) with baking parchment. Arrange the buns, cut-side up, in the dish or tin. Make sure the tails of the buns (where the dough opens) are tucked in towards the middle of the tin, so they don't unfurl when baked. Leave some space around each bun, as they will expand as they prove. Cover loosely and leave to rise for 30 mins-2 hrs (depending on how hot your kitchen is) until the buns are puffed up and touching at the sides. Heat the oven to 200C/180C fan/gas 6.
  • Bake for 35-40 mins until golden. Check the buns after 25 mins - if they still look a little doughy at the centre but the edges are burning, cover with foil and continue baking. Leave to cool in the tin while you make the icing.
  • Mix the soft cheese, icing sugar and cinnamon together. Spread over the buns while still slightly warm, so the icing drips into the swirls of the buns a little without melting completely. Loosen the caramel with a drop of milk, if needed, then drizzle over the icing. Leave to set for 30 mins before serving.

1/2 cup packed brown sugar
6 Tbsp. butter, softened
20 KRAFT Caramels
1/2 cup chopped pecans, toasted

Steps:

  • Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. Roll out bread dough on lightly floured surface into 16x8-inch rectangle.
  • Mix 2 Tbsp. half-and-half, and 1 Tbsp. each coffee and cinnamon in medium bowl until blended. Add sugar and butter; mix well. Spread onto dough.
  • Roll up, starting at one long side. Pinch seams together to secure. Cut crosswise into 16 slices; place, cut sides up, in prepared pan. Cover.
  • Refrigerate 8 hours.
  • Remove rolls from refrigerator; let stand at room temperature 45 min. to 1 hour or until doubled in size.
  • Heat oven to 350°F. Bake rolls, uncovered, 20 to 25 min. or until golden brown. Cool 10 min.
  • Meanwhile, microwave caramels with remaining half-and-half, coffee and cinnamon in microwaveable bowl on HIGH 2 to 3 min. or until caramels are completely melted and sauce is well blended, stirring after each minute.
  • Remove rolls from pan to wire rack. Place wire rack on baking sheet. Drizzle caramel sauce over rolls; sprinkle with nuts. Serve warm.

  • Mix 2/3 cup butter, brown sugar, and corn syrup together in a bowl. Spread caramel mixture into the bottom of a 9x13-inch baking pan.

2/3 to 1 cup pecan halves

Steps:

  • In a mixing bowl, dissolve yeast with the warm water. Stir in 1/4 cup sugar, salt, 2 tablespoons margarine, egg, and 2 cups flour. Beat until smooth. With spoon or hand, work in enough remaining flour until the dough is easy to handle (if it becomes too sticky, dampen your hands with cold water). Place in a greased bowl. Cover tightly and refrigerate overnight (or, up to 4 to 5 days).
  • Combine melted margarine, brown sugar, corn syrup and pecan halves. Pour into greased oblong 9 by 13-inch pan. Combine 1/2 cup sugar, and fresh ground cinnamon (sifted to take out the chunks). 1 cup warm milk
1 tablespoon instant dry yeast
2 tablespoons white granulated sugar
1 teaspoon salt
3 tablespoons salted butter (softened)
1 large egg
3 cups all-purpose flour
1/2 cup salted butter (softened)
1/2 cup brown sugar
1-2 tablespoons ground cinnamon*
2 medium Granny Smith apples (cored and finely chopped)
1/2 cup caramel sauce
1/2 cup caramel sauce
1/4 cup chopped pecans (optional)

Steps:

  • In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. Add in flour. Using a dough hook, turn the mixer on to a low speed.
  • Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be soft and tacky, but not stick to your hands. Add more or less flour until the dough reaches the desired consistency.
  • Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour.
  • Lightly grease a baking sheet. Punch down the dough and roll into a 12-inch by 18-inch rectangle.
  • Spread 1/2 cup softened butter onto the dough in an even layer, leaving 1/4 inch around the edges. In a small bowl, combine the brown sugar and cinnamon. Sprinkle on top of the butter. Sprinkle finely chopped apple on top of the sugar mixture in an even layer. Finally, drizzle 1/2 cup caramel sauce on top.
  • Roll up tightly lengthwise so you have one long roll. Use plain dental floss or a sharp knife to cut the dough into 12 one-inch slices.
  • Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes.
  • Preheat oven to 350 degrees. Bake the rolls for about 18-22 minutes, until just kissed with brown on top and apples are soft.
  • Drizzle remaining 1/2 cup caramel sauce on top of the rolls while still warm. Sprinkle with chopped nuts (optional). Serve immediately or cool and store. Stays good for 3 to 5 days.

1 stick butter
1/2 cup sugar
1/2 cup brown sugar
1 cup frozen vanilla ice cream
1/2 to a full 12-count Bag Frozen Rhodes Cinnamon Rolls
** Save the icing in the fridge overnight

Steps:

  • Combine butter and vanilla ice cream in a saucepan and melt stirring constantly.
  • Add sugars and heat to boiling, over medium high heat stirring constantly with a whisk.
  • Bring to a rolling boil while whisking the entire time for two or three minutes.
  • Remove saucepan from burner and let sit for 15 minutes or so to cool down.
  • Once cooled put this mixture in to the refrigerator for an hour or so to thicken up.
  • Spray glass baking dish with nonstick spray and arrange the frozen cinnamon rolls evenly in the dish. If you are using all 12 cinnamon rolls you might want to do six rolls per 9x13" dish.
  • Pour cold caramel mixture over the rolls and set in the oven overnight (while the oven is off)
  • Store the packet of icing that comes with the rolls in the fridge overnight. You'll use that on top of the rolls once they're cooked in the morning.
  • In the morning do not take the rolls out of the oven.
  • They will remain in the oven while preheating.
  • Bake for 20-30 minutes at 350 degrees (Total - this amount of time includes the preheatinuntil browned on top.
  • Pour the icing mixture over the cinnamon rolls and enjoy!

  • Heat milk in a small saucepan over medium heat until it begins to bubble, about 5 minutes. Sir in salt, shortening, and 1/2 cup sugar. Let cool until lukewarm, at least 10 minutes.

1 1/2 tablespoons active dry yeast
1/4 cup vegetable shortening
1 cup granulated sugar
1 1/2 teaspoons salt
2 large eggs
7 cups all-purpose flour,

Vegetable oil, for brushing
2/3 cup packed light brown sugar
1/2 cup light corn syrup
1 stick unsalted butter
1 cup heavy cream
1 1/2 cups packed dark brown sugar
1 stick unsalted butter, melted
2 teaspoons ground cinnamon

Steps:

  • Warm the milk in a small saucepan until steaming. Dissolve the yeast in 1/2 cup warm water. Combine the milk, shortening, granulated sugar, salt and eggs in a large bowl with a wooden spoon. Add the yeast mixture and mix until combined. Stir in the flour to form a soft dough. Transfer to a lightly floured surface and knead until smooth and elastic, 6 to 8 minutes.
