1/2 of a medium pineapple, peeled, cored and cut into bite-sized chunks
1 medium mango, peeled, pitted and cut into bite-szed chunks
1 medium papaya, peeled, pitted and cut into bite-sized chunks
1 medium red grapefruit, peeled, sectioned
1/2 cup dried cranberries
1/4 cup KRAFT Light Mayo
1/4 cup light sour cream
2 Tbsp. sugar
1 Tbsp. orange juice

Steps:

  • Combine fruit in large bowl.
  • Mix remaining ingredients until well blended. Add to fruit mixture; toss to coat. Cover.
  • Refrigerate several hours or until chilled.

½ a pineapple
1 ripe mango
1 papaya
2 kiwi fruit
½ a lime
½ a bunch of fresh mint, (15g)
2 tablespoons golden caster sugar
200 g yoghurt

Steps:

  • Trim the outside skin off the pineapple and cut out the hard core that runs down its centre. Lay it on a chopping board and cut it into chunks with a sharp knife. Place in a bowl.
  • Cut the flesh of the mango off the stone and scoop out the flesh from the skin with a spoon. Place into the bowl with the pineapple. Cut the papaya in half and scoop out the black seeds inside. Scoop the fruit out of the skin in the same way as with the mango. Place into the bowl.
  • Top and tail the kiwi fruit, then, sitting it on one of its flat ends, trim the furry skin off with a sharp knife. Slice the kiwi and place into the bowl. Squeeze the lime juice over your fruit.
  • Take four plates and divide the fruit between them. Pick the mint leaves and pound most of them with the sugar in a pestle and mortar or a flavour shaker. Spoon a little yoghurt over the top of each plate and sprinkle over the mint sugar and the rest of the mint leaves and serve.

One 3-inch piece fresh ginger, peeled and chopped
Zest of 1 lime
1 pint strawberries, hulled and halved or quartered
2 kiwi, peeled, sliced and quartered
1 mango, cut into chunks
1 orange, segmented
1 small pineapple, cut into chunks
1 papaya, cut into chunks

Steps:

  • Combine the sugar, 1/4 cup water, ginger and lime zest in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove it from the heat and refrigerate until cold.
  • Strain the mixtures into a large bowl and toss in the strawberries, kiwis, mango, oranges, pineapple and papaya to coat. Cover and refrigerate again until cold, at least 1 hour.
  • Serve in small bowls and garnish with the chopped mint.

JICAMA AND TROPICAL FRUIT SALAD

2 oranges
2 mangoes, peeled and diced
1 pineapple, peeled and diced
1 small jicama, peeled and diced
1/4 cup lime juice
1 tablespoon sugar
2 tablespoons chopped fresh cilantro
1 cup fresh grated coconut or dried, unsweetened shredded coconut

Steps:

  • Slice ends off oranges and stand upright. Cut away the skin and membrane, exposing fruit. Cut between the membranes to remove the sections and place in a large bowl. Remove and discard any seeds. Add mangoes, pineapple, jicama, lime juice, sugar, cilantro and coconut to bowl and stir to combine.
  • To serve salad, place lettuce leaves on individual chilled plates or a serving platter, and spoon fruit on top.

Steps:

  • If using canned fruits: drain and save the liquid. Peel and remove seeds from the fresh fruit as necessary, cut fruit into bite-sized pieces.
  • Combine all fruit in a glass bowl. Add the lemon juice, some of the liquid from the canned fruits or honey/sugar. Stir gently. There should only be enough liquid to coat the fruit; it does not have to be covered in liquid.
  • Cover the fruit salad and allow it to stand at room temperature for a half hour before serving. The fruit salad may be refrigerated after it has stood up to an hour. It should be eaten the same day it is made.
  • Garnish with freshly grated coconut or chopped roasted peanuts right before serving.
  • NOTE: Eastern Africa's Saladi Ya Matunda is made without the lemon juice, coconut or peanuts; it substitutes sugar/honey for the liquid from the canned fruits.

1 medium ripe papaya, peeled,seeded,and cut into large chunks (about 2 pounds)
1 medium ripe mango, pitted,peeled,and cut into large chunks
