These Red Wine Mushrooms make for a simple delicious side dish featuring cremini mushrooms tossed in butter, red wine and garlic. Perfect side dish to a juicy steak.

8 ounce cremini mushrooms
2 cloves garlic (minced)
1 tablespoon olive oil
1 tablespoon butter (unsalted)
1/4 cup red wine
salt and pepper to taste
parsley for garnish

Steps:

  • In a medium size skillet heat the olive oil together with the butter until the butter melts. Add garlic and cook for a minute until garlic is starting to get golden. Add red wine and bring to a simmer.
  • Throw in the mushrooms and toss so that each mushroom is fully coated in the wine sauce. Season with salt and pepper. Cook until mushrooms are golden, turn mushrooms and cook on the other side until golden.
  • Garnish with parsley and serve.

Excellent served as a side dish with steak, roast beef or even chicken. The lemon gives the mushrooms a nice tangy flavour which mixes well with the flavour of the red wine.

1 lb mushroom, sliced
2 tablespoons butter
1/4 cup red wine
salt and pepper
2 tablespoons fresh parsley, chopped
2 tablespoons lemon juice

Steps:

  • Melt butter in large frying pan.
  • Add sliced mushrooms and sauté over high heat until they squeak and sizzle and are nicely browned.
  • Add salt, pepper and red wine.
  • Simmer for 5 minutes.
  • Add lemon juice and parsley.
  • Toss well.

This is so quick and easy and a fantastic way to use up any (unusual in my house!) left over wine. Delish on toast or as a side dish - feel free to use white wine instead or sherry.

1 lb small mushroom
2 tablespoons olive oil
1 teaspoon butter
1 teaspoon garlic granules or 1 fresh garlic clove, minced
4 tablespoons red wine

Steps:

  • allow butter to melt into the olive oil in a frying pan.
  • meanwhile slice the mushrooms to whatever thickness is your preference.
  • add mushrooms to pan and toss well in the oil and butter mix.
  • add garlic and season with salt and pepper.
  • add wine and stir well, allow to cook for 4-5 mins until mushrooms have taken up all the wine and are glazed with the oil and butter mix.
  • (also nice if you add a few halved cherry tomatoes with the garlic).

Roast Chicken and Mushrooms With Red Wine Sauce image

2 skin-on, bone-in chicken breasts (12 to 14 ounces each)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1 pound oyster and/or maitake mushrooms, trimmed and torn into pieces
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/2 cup low-sodium chicken broth
1 cup dry red wine
1/2 teaspoon sugar

Steps:

  • Preheat the oven to 375 degrees F. Season the chicken with 1/2 teaspoon salt, and pepper to taste. Heat a medium skillet over medium-high heat; add 1/2 tablespoon vegetable oil, then add the chicken, skin-side down, and cook until the skin is golden brown, about 6 minutes. Transfer to a rimmed baking sheet, skin-side up; reserve the skillet.
  • Toss the mushrooms with the remaining 1/2 tablespoon vegetable oil and season with salt and pepper; scatter around the chicken on the baking sheet. Bake until the mushrooms are tender and a thermometer inserted into the thickest part of the chicken registers 160 degrees F, about 25 minutes.
  • Meanwhile, melt the butter in the reserved skillet over medium heat. Add the flour and cook, stirring, 1 minute. Add the chicken broth and bring to a simmer, whisking. Add the wine, sugar and 1/4 teaspoon salt and simmer until the sauce is reduced by half, about 10 minutes. Season with salt and pepper.
  • Spoon some of the red wine sauce onto each plate; top with the chicken and mushrooms.

1 tablespoon unsalted butter
Extra-virgin olive oil
2 shallots, minced
2 pounds assorted mushrooms, such as crimini, oyster, shiitake, chanterelle, or white, trimmed and sliced
Leaves from 2 fresh thyme sprigs
Sea salt and freshly ground black pepper
1/2 cup Cabernet Sauvignon
1/4 cup reserved beef broth (drippings from roast) or low-sodium canned broth
1/4 cup heavy cream
1 tablespoon minced fresh chives

Steps:

  • Place a clean skillet over medium heat. Add the butter and a 2-count drizzle of oil. When the butter starts to foam, add the shallots and saute for 2 minutes to soften. Add the mushrooms and thyme; season with salt and pepper. Stir everything together for a few minutes. Add the red wine, stirring to scrape up any stuck bits; then cook and stir to evaporate the alcohol. When the wine is almost all gone, add the reserved beef juices. Let the liquid cook down and then take it off the heat. Stir in the cream and chives, and season with salt and pepper.

2 tablespoons butter
1 tablespoon olive oil
2 garlic cloves, minced
1/4 cup red wine
16 ounces button mushrooms
2 tablespoons fresh squeezed lemon juice
2 tablespoons chopped parsley or 2 tablespoons dried parsley

Steps:

  • Heat butter and olive oil in a skillet over medium heat. Once butter is melted and begins to bubble, add in garlic, stirring frequently, until it turns just golden, about 30 seconds to 1 minute. Stir in red wine and return mixture simmer.
  • Add in mushrooms and toss to coat with sauce. Cover and simmer on medium-low heat for 15 minutes. Remove lid, season with salt and pepper, and continue cooking on medium-low heat for an additional 5-8 minutes, until the mushrooms are cooked through and the bottoms are golden.
  • Drizzle with lemon juice and sprinkle parsley over the top.
