RED POTATO SALAD
Small red potatoes are perfect for this comforting, make-ahead red potato salad. They're easy to cook and add a vibrant color to the classic summer side dish.

Steps:
- Place the potatoes in a large pot and cover with water. Season with salt. Bring the water to a boil over high heat, then reduce to a simmer over medium heat. Cook until the potatoes are fork tender, about 20 minutes. Drain the potatoes, then let cool slightly and cut in half or quarters (depending on the size of the potatoes). Let cool completely, about 1 hour.
- Meanwhile, in a large bowl, whisk to combine the mayonnaise, sour cream, vinegar, mustard, salt, and pepper.
- Add the celery, dill, and cooled potatoes to the bowl with the dressing. Stir gently to combine. Top with crispy bacon right before serving.
CREAMY POTATO SALAD
Steps:
- Boil, peel and cube 1 pound potatoes. Toss with 1 tablespoon cider vinegar and 1/2 teaspoon salt. Mix 1/4 cup each mayonnaise and sour cream and 2 tablespoons each horseradish and chopped chives. Toss with the potatoes, 1 chopped celery stalk, and salt and pepper.
BAKED SOUR CREAM -N- CHIVE RED POTATOES
This is baked in the oven and is great with any meat main course or on its own. You can increase or decrease serving amounts.

- -Preheat oven to 350°F.
- -Wash and dry red potatoes.
- -Cut half or quarters.
- -Treat a 2-qt casserole dish with nonstick cooking spray.

- -Distribute sour cream over vegetables.
- -Sprinkle with chives and salt-n-pepper to taste.
- -Cover with foil or lid and bake for 45-50 minutes.

SOUR CREAM AND CHIVE POTATO SALAD (WITH DILL!)
Potato salad is versatile. You can play around with the ingredients, so don't let anything stop you. This is a Party Size recipe, but can be easily halved. I prefer peeled potatoes, but if you prefer unpeeled red potatoes, that's perfectly ok and it sure makes a prettier potato salad!

- Peel and cut potatoes, cut into one-inch pieces and boil for 10-12 minutes. Strain the potatoes in a colander and run cold water over the potatoes to stop the cooking. If you omit this step you will end up with mashed potatoes.
- Combine sour cream, mayo, and mustard in a medium size bowl.
- Combine the potatoes and all remaining ingredients in a large bowl, and empty the sour cream mixture into the large bowl and mix well.
- Cover and refrigerate overnight, if possible.

- Place the potatoes in a pot and boil over medium high heat for 15 minutes or until tender.
- Drain the water off the potatoes and place them in a large salad bowl.
- You will then want to take a potato masher and mash until smooth.
- Ad the rest of the ingredients and mix until well blended and smooth.

- Place the potatoes in a pot with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and transfer to a large bowl to cool.
- In a medium bowl, mix the sour cream, mayonnaise, mustard, vinegar, eggs, pickle, celery, green onions, and hot sauce. Season with dill, garlic powder, onion salt, salt, and pepper. Pour over the potatoes, and gently toss to coat. Chill at least 3 hours in the refrigerator before serving.

- BOIL: Add the potatoes in a large pot with cold water (covering the potatoes by at least 2 inches.) Add a generous sprinkle of salt and allow the potatoes to come to a boil over high heat. When boiling, reduce heat and allow them to simmer until very tender when tested with a sharp knife; roughly 18-24 minutes. When in doubt, let them boil longer as they will firm up a bit once dressed and refrigerated! Drain the potatoes and allow them to cool to room temperature.
- DRESSING: In a small bowl, whisk together the ingredients for the dressing until smooth. Taste and adjust with additional seasonings as desired.
- TOSS: In a large bowl, combine the cooled potatoes, finely minced celery, onions, chopped chives, and parsley. Add the dressing and stir to combine. Taste and adjust with additional salt or ranch seasoning as needed. Allow the potato salad to cool in the refrigerator for at least 1 hour and up to 6 hours in advance.

- Cook bacon according to package directions. Once completely cooked & cooled, coarsely chop into small chunks.
- In a small mixing bowl, stir together sour cream, mayo, cheese, coarsely chopped bacon, chives, and ranch seasoning powder {start with 1/4 cup & add more if you desire a stronger ranch taste, we use 1/2 cup, sounds like a lot but once it is all together it is perfect}. Set aside.
