FROZEN CHOCOLATE-PEANUT BUTTER POPS

12 ounces semisweet chocolate, finely chopped
1 1/2 cups heavy cream
1 1/2 teaspoons pure vanilla extract
Pinch of kosher salt
1/4 cup confectioners' sugar
2 tablespoons creamy peanut butter
Cooking spray
2 tablespoons coconut oil or roasted peanut oil
1/4 cup salted roasted peanuts, finely chopped

Steps:

  • Put 4 ounces chocolate in a medium bowl. Bring 1/2 cup heavy cream to a simmer in a small saucepan; pour over the chocolate and let sit 5 minutes. Add the vanilla and salt and whisk until smooth; set aside to cool to room temperature.
  • Combine the remaining 1 cup heavy cream, the confectioners' sugar and peanut butter in a large bowl. Beat with a mixer on medium-high speed until stiff peaks form, 2 to 3 minutes. Fold the peanut butter whipped cream into the cooled chocolate mixture in three batches until just incorporated but still airy. Freeze until the mixture is firm enough to scoop, about 30 minutes.
  • Lightly coat a 1 1/2-inch ice cream scoop or tablespoon with cooking spray. Scoop balls of the frozen mousse onto a parchment-lined baking sheet (about 1 heaping tablespoon per ball). Gently press a lollipop stick halfway into each ball. Freeze until firm, at least 1 hour.
  • Meanwhile, combine the remaining 8 ounces chocolate and the coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate is melted and smooth; set aside to cool.
  • Put the peanuts in a small bowl. Loosen the mousse balls from the baking sheet with a small offset spatula. One at a time, dip the balls into the melted chocolate, letting the excess drip back into the bowl. Return to the baking sheet and sprinkle with the peanuts while the chocolate is still wet. Return to the freezer until ready to serve.

Steps:

  • Mix wafer crumbs, nuts, butter and 1/4 cup peanut butter. Reserve 1/4 cup; press remaining onto bottom of 13x9-inch pan.
  • Beat cream cheese and remaining peanut butter in large bowl with mixer until well blended. Gradually beat in condensed milk. Stir in COOL WHIP; pour over crust.
  • Drizzle with chocolate syrup; swirl gently with knife. Sprinkle with reserved crumb mixture. Freeze 2 hours or until firm. Remove dessert from freezer 15 min. before serving; let stand at room temperature to soften slightly.

My husband and I, while we were still dating, used to meet at our local Red Robin after work for our midweek dates. His favorite drink during the sumemr was the Peanutty Freeze. It's basically just a chocolate and peanut butter milkshake. My husband was really disappointed when Red Robin changed their menu many years ago, eliminating the Peanutty Freeze altogether. My husband has missed this milkshake ever since. So I went on a search for the recipe so he would be able to have his favorite milkshake now and then at home. After much begging, I eventually came upon this recipe for the Red Robin Peanutty Freeze (chocolate peanut butter milkshake).

1/4 cup water
2 tablespoons creamy peanut butter
1 1/4 ounces chocolate supreme premium hot cocoa mix
1 cup vanilla ice cream
1 tablespoon finely chopped peanuts, if desired

Steps:

  • Place water, peanut butter, dry hot cocoa mix, and ice cream in a blender container. Cover; blend until smooth, about 30 seconds.
  • Pour mixture into two tall beverage glasses.

1 cup butter or 1 cup margarine
2 cups peanut butter, creamy
2 1/2 cups graham cracker crumbs
1 3/4 cups powdered sugar
2 cups semi-sweet chocolate chips or 2 cups milk chocolate
1/3 cup milk

Steps:

  • Assembly Directions:.
  • In a large saucepan, melt butter and peanut butter together. Mix well. Remove from heat. Add crumbs and powdered sugar, mixing well. Spread peanut butter mixture in a jelly roll pan (for thinner bars) or 9x13 pan (for thicker bars). Chill. When the peanut butter layer is firm, melt chocolate chips with milk over low heat. Spread over chilled peanut butter mixture. Chill again.
  • Freezing Directions:.
  • Cut into serving size pieces. Wrap individually and freeze in large rigid containers or freezer ziptop bags. Eat straight from the freezer or thaw slightly.
  • Comments:.
  • We have found that we can usually buy the graham cracker crumbs for the same price as the equivalent in graham crackers. Why do the work if you don't have to?

2 cups confectioners' sugar
1 (12 ounce) can evaporated milk
1 cup butter, divided
2/3 cup semi-sweet chocolate chips
1 (14 ounce) package cream-filled chocolate sandwich cookies
1/2 gallon vanilla ice cream, softened
1 cup salted peanuts, chopped

Steps:

  • In a saucepan, combine confectioners' sugar, evaporated milk, 1/2 cup butter and chocolate chips. Bring to a boil, stir constantly.
  • Stir for about 8 min, or until thickened.
  • Refrigerate until cool.
  • Crush cookies in a food processor/blender until finely crushed.
  • Melt remaining butter and stir into crushed cookies. Press into a 9x13 pan and refrigerate until firm.
  • Spread vanilla ice cream over crust, then freeze.
  • Stir peanuts into chocolate mixture, and spread over the ice cream.
  • Cover and freeze 3-4 hours.

1 cup chocolate wafer crumbs
1/4 cup butter, melted
2/3 cup sour cream
3 tablespoons icing sugar
2 tablespoons whipping cream
2/3 cup smooth peanut butter
2 ounces semisweet chocolate, coarsely chopped
1/4 cup whipping cream
1/4 cup peanuts, chopped

Steps:

  • In bowl, stir wafer crumbs with butter until thoroughly moistened; pat onto bottom only of 9-inch pie plate. Freeze for 20 minutes.
  • Filling: In bowl, whisk together sour cream, sugar and whipping cream; whisk in peanut butter until smooth. Spread evenly over crust; freeze for 1 hour.
  • Topping: Meanwhile, in small saucepan, melt chocolate with cream over medium-low heat, stirring until smooth. Let cool for 15 minutes.
