GRILLED GINGER-BEER CHICKEN



Grilled Ginger-Beer Chicken image

6 chicken quarters (4 to 4 1/2 pounds total)
2 tablespoons ground ginger
Kosher salt and freshly ground pepper
6 12 -ounce bottles ginger beer
6 black tea bags
3/4 cup minced onion
1 28 -ounce can diced tomatoes
1/4 cup dijon mustard
3 tablespoons Worcestershire sauce
1/4 cup packed light or dark brown sugar
12 sprigs thyme
1 stick unsalted butter, melted

Steps:

  • Rinse the chicken and pat dry. Toss the ginger with 2 tablespoons salt and 1 teaspoon pepper. Sprinkle half of the mixture on the chicken; reserve the rest. Refrigerate the chicken, uncovered, at least 2 hours.
  • Meanwhile, make the sauce: Pour the ginger beer into a wide skillet; cover and bring to a boil. Uncover and cook over high heat until reduced by half, about 30 minutes. Remove from the heat, add the tea bags and steep 10 minutes; discard the tea bags. Add the onion, tomatoes, mustard, Worcestershire sauce, brown sugar and thyme. Return to high heat and cook, stirring occasionally, until thick, about 50 minutes, using a potato masher to crush the tomatoes during the last 5 minutes. Remove the thyme. Set aside half of the sauce for serving.
  • Bring the chicken to room temperature about 30 minutes before grilling. Preheat a grill to medium with indirect heat: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half of the burners.
  • Brush the chicken with some of the butter and sprinkle with some of the remaining ground ginger mixture. Place skin-side up on the cooler side of the grill; cover and cook until it starts browning, about 18 minutes, basting with more butter and sprinkling with more ground ginger mixture halfway through. Brush the chicken with a thick layer of sauce. Cover and cook until a thermometer inserted into the thickest part registers 160 degrees F, about 20 minutes, basting with more sauce halfway through.
  • Brush the chicken with more butter, then turn skin-side down and place on the hotter side of the grill (over direct heat). Cook, uncovered, until marked, about 2 minutes. Rotate the chicken to make crisscross grill marks and cook 2 more minutes. Transfer to a board and let rest about 10 minutes. Season with salt and serve with the reserved sauce.

1/3 cup Fusia Asian Inspirations Soy Sauce
¼ cup water
2 tablespoons Carlini Toasted Sesame Oil or Olive Oil
2 tablespoons Simply Nature Organic Wildflower Honey
2 tablespoons packed Simply Nature Organic Light Brown Sugar (or sub coconut sugar)
1 small or medium lime, juiced
3 cloves garlic, finely minced
1 tablespoon fresh grated ginger
1 teaspoon Stonemill Crushed Red Pepper Flakes
2 ½ pounds chicken drumsticks, skin removed (or chicken breasts and/or thighs will also work)
To garnish:
Chopped Southern Grove Honey Roasted Peanuts
Diced green onion
Diced cilantro

Steps:

  • Make the chicken marinade. In a large bowl, whisk together soy sauce, water, oil, honey, brown sugar, lime juice, garlic, ginger and red pepper flakes. Reserve 1/2 cup of marinade and place in a small bowl in the fridge. You'll use this for glazing the chicken on the grill later.
  • Marinate the chicken: Pat the drumsticks dry, remove the skin, season them with a pinch of salt, and add them to the large bowl or a shallow dish with the Thai chicken marinade. Mix to coat the chicken evenly, then marinate in the refrigerator for a minimum of 1 hour, or up to 24 hours.
  • About a half hour before you're ready to cook the chicken, remove the chicken from the marinade and allow it to come to room temperature. Preheat a grill to 400 degrees F.
  • Grill the chicken: brush the hot grill grate with oil. Place the chicken on the grill and cook for 8 minutes, then flip. Generously brush each drumstick with the reserved marinade a few times, and grill for an additional 8 minutes. Turn the chicken over one last time, brush again with the remaining marinade, and cook for 5 more minutes or until no pink remains in the center of the chicken.
  • To serve: Place the chicken on a platter or large plate, then garnish with honey roasted peanuts, diced green onion and cilantro. Serves 4, 2 drumsticks each.

4 cloves of garlic, minced
1 inch nub of fresh ginger, peeled and minced
1/4 cup soy sauce or coconut aminos
1/4 cup lime juice
1/4 cup avocado oil or olive oil
1 tbsp fish sauce

Steps:

  • At least 1 hour prior to cooking combine minced garlic and ginger, lime juice, coconut aminos or soy sauce, avocado oil, and fish sauce in a large mixing bowl and whisk thoroughly. Add chicken breasts to the bowl and toss until they are evenly coated in the marinade. Cover the bowl and place in the fridge for at least 1 hour to marinate.
  • Clean your grill and preheat to high heat. Once the grill is hot, place marinated chicken on grill grates diagonally. Close the grille and cook for 3 minutes
  • Flip the chicken to the other side maintaining the same diagonal on the grill. Close the grill and cook for 3 minutes.
  • Flip the chicken and rotate 45 degrees - this will ensure the chicken cooks evenly and you get those X grill marks. Close the grill and cook for 3 minutes. Open the grill and flip again without rotating, close and cook for final 3 minutes - in total your chicken should cook for 12 minutes.
  • Use an instant read thermometer to check the internal temperature of the chicken. When it shows 165F the chicken is cooked through. Enjoy immediately or store in an air tight container for up to 4 days

6 tablespoons vegetable oil, plus more for the grill
1/2 teaspoon five-spice powder

1 1/2 pounds skinless, boneless chicken thighs (4 to 6 pieces)
8 ounces thin Chinese stir-fry noodles or ramen noodles
2 carrots, thinly sliced on the diagonal (about 1 cup)
4 ounces snow peas, halved
2 bunches scallions, roughly chopped
1 2-inch piece fresh ginger, roughly chopped
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar

Steps:

  • Preheat a grill to medium high. Combine 2 tablespoons oyster sauce, 1 tablespoon vegetable oil, the five-spice powder, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken and toss to coat.
  • Oil the grill grates. Grill the chicken until lightly charred and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and let rest.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the noodles and cook as the label directs, adding the carrots and snow peas during the last minute of cooking. Drain the noodles and vegetables and transfer to a large bowl. Wipe out the saucepan and reserve. Snip the noodles into shorter pieces with kitchen shears.
  • Finely chop the scallions and ginger in a food processor. Heat the remaining 5 tablespoons vegetable oil in the reserved saucepan over medium-high heat. Add the scallion-ginger mixture and cook, stirring, until softened, about 2 minutes. Remove from the heat and stir in the soy sauce and vinegar. Add to the noodle mixture, season with salt and pepper and toss. Divide among plates; drizzle with the remaining 3 tablespoons oyster sauce.
  • Slice the chicken and serve over the noodles.

2 cups soy sauce
1/2 cup extra-virgin olive oil
1/4 cup dark sesame oil
1 lime, juiced
4 inches fresh ginger, chopped
2 garlic cloves, chopped
1/2 cup chopped fresh cilantro leaves
4 boneless, skinless chicken breasts, pounded thin

Steps:

  • Combine the 1 cup soy sauce, 1/4 cup olive oil, 2 tablespoons sesame oil, half of the lime juice, ginger, and garlic, and 1/4 cup cilantro in the bottom of each of 2 large freezer bags. Put 2 chicken breasts in each bag and get them coated with the marinade. Then set the bags on a work surface, force the air out and seal them. Allow chicken to marinade for 1 hour. You can also freeze the chicken right in the marinade at this point. To do so fold each bag over the chicken 3 times, tape them well, and date them. Put it in the freezer for up to 2 months.
  • Place a large grill pan on 2 burners over medium-high heat, or preheat an outdoor gas or charcoal grill. Fold a few paper towels into a thick square. Blot some oil on the paper towels and then carefully and quickly wipe the ridges of the gill pan or the hot grates of the grill to make a non-stick surface.
  • Remove the chicken breasts from the marinade and season with salt and pepper. Lay the chicken on the hot grill and cook 3 to 5 minutes on each side until charred and firm. Serve with the sesame noodles and cucumber pickles.

3 tablespoons lime juice, fresh
2 teaspoons lime zest, finely grated
2 tablespoons gingerroot, finely minced

1 teaspoon crushed red pepper flakes
1/4 cup cilantro, chopped and divided

Steps:

  • In small glass bowl, combine soy sauce, lime juice, lime zest, ginger, garlic, honey, oil, crushed peppers and 2 tablespoons of cilantro. Remove and reserve 2 tablespoons marinade to use for basting when cooking chicken.
  • Place chicken in plastic zipper bag and add marinade.
  • Squeeze the air from the bag and close it. Place bag of chicken in the refrigerator to marinate for 2-4 hours.

1 fresh bay leaf, torn
6 cloves
8 black peppercorns
3 cardamom pods, seeds of
2 -3 lemons, juice of
2 teaspoons chili powder

5 teaspoons gingerroot, finely chopped
1 garlic clove, finely chopped

Steps:

  • Using a coffee grinder or pestle and mortar, grind together the cinnamon, bay leaf, cloves, peppercorns and cardamom. Mix with the lemon juice, chili powder and cumin seeds.
  • Slash the chicken breasts with a sharp knife. Smear them with the spice mixture, rubbing it well into the slashes. Sprinkle with salt and leave to stand for 1 hour.

  • Combine peach preserves, vinegar, horseradish, ginger, salt, and pepper in microwave-safe bowl. Microwave on high until preserves are melted, stirring once halfway through the cooking time, 30 to 60 seconds. Remove and cool to room temperature.

2-3 lb chicken breasts, boneless and skinless
1 bottle teriyaki sauce, divided
1 Tbsp freshly grated ginger
1 Tbsp toasted sesame seeds
1 Tbsp canola oil
salt/pepper, to taste
1 c fresh pineapples (you can also use canned)

Steps:

  • 1. Pierce the chicken breast.
  • 2. Marinate at least 30 mins with half of the teriyaki sauce as well as grated ginger, salt, and pepper.
  • 3. Add in the canola oil.
  • 4. Grill chicken about 5 mins each side (depending on the thickness... the thinner, the better). Also grill the pineapples.
  • 5. Place the chicken in an oven dish.
  • 6. Pour the other half of the teriyaki sauce over the chicken.
  • 7. Top with sesame seeds and grilled pineapples. Keep warm in oven until ready to serve. Serve over white rice. Delicious!
